- These Chimichangas are sure to please, children love them and it's an easy recipe to prepare. You can fill them with your favorite filling and they freeze beautifully too...they will definitely get you off of the regular meal routine... make it chicken, make it eggs, make it vegetarian, chimichangas are always a win win!

INGREDIENTS
1 & 1/2 lbs. beef bistec (cut into small cubes)
1/2 small onion (diced)
2 Roma tomatoes (diced)
1/2 green bell pepper (diced small)
1 jalapeño (diced small)
Oaxaca cheese (grated as needed)
2 large garlic cloves (minced)
3/4 tsp dried cumin
zest and juice of 1 lime
pepper (to your liking)
salt (to your liking)
2 C. beef broth
1 & 1/2 Tbsp flour
cilantro (small bunch)
crema (for garnish)
sour cream (for garnish)
Avocado (for garnish)

How many of you newbie subscribers like me feel like you could watch Rachel all day and feel like you’ve known her for a long long time?? I am 73 & grew up on Mexican food. But Chimis are a newer form, our Hispanic cook always laughed about them but I have had a few at restaurants. I liked the fact that you served them with some of the meat.

Oh Dear Lord, i am so hungry right now i could eat tons of this delicious chrispy chimichangas with the baked beans and the spicy potatoes, and some guac and ranch dressing, i don't even want to mention empanadas filled with cheese and taquitos right by the side.

Made these tonight, with you on my iPad on the counter beside me, talking me through every step…. and they turned out 100% DELICIOUS! Thanks for the great recipe and the helpful tips… mine stayed together beautifully with the help of the flour/water paste, and they stayed crisp and delicious because they were cooled on the rack. I gasped whenever you turned the tortillas with the spatula. I remember growing up my grandma told me never to trust a woman's cooking if she can't turn tortillas with her fingers. She's gonna kill you. Haha! Silly grandma.
