  • Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how to make the best birria and consomé, also how I make easy and delicious quesabirria tacos!!! Keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, this is the way I was taught.     Ingredients: about 10 - 12 servings, more if you make tacos 😊
    5 lbs chuck pot roast
    2 white onions
    4 roma tomatoes
    1 bunch cilantro
    12 New Mexico chile pods
    10 guajillo chile pods
    2 Pasilla chile pods
    5 chile de árbol
    6 bay leaves
    17 garlic cloves
    5 whole cloves
    Ginger
    Cinnamon stick
    2 tsp sesame seeds
    1/2 tsp whole black pepper (peppercorn)
    2 tsp oregano
    2 tsp whole cumin
    2 tsp thyme
    1/4 cup white vinegar
    Salt
    Tortillas
    Cheese
    1 serving of love 💕

      Claudia Regalado I was the same way when I replaced my ninja blender with a vitamix. I couldn’t believe the difference with my salsas & smoothies. Btw can’t wait to try this recipe. ✌🏼🤍

    Thank you. I've never had birria and I made it for my husband 3 months ago.I followed your recipe exactly and he looved it. He said it reminded him of Mexico. He just passed away, and I was just looking at the video I recorded of him enjoying his tacos de birria. I wish I could cook this for him again ❤ sometimes the small things mean the most, and those are the ones you remember the most. Thank you for one of the many memories I get to remember my love by 🤍

    I'm a 55 yr old white guy and I love to cook. My son and I discovered Quesa Birria a few months ago. I had to find a recipe to make it at home. Your recipe is so good my son won't eat it from anywhere else but home now. Thank you for the fantastic recipe and I will be trying several of your others.

    Claudia I’ve watched this an embarrassing amount of times lol, but I finally felt confident to do it, and it tastes so good. You’re right it’s fast, I did my meat in my pressure cooker so that was only 35 minutes for that which made it extremely fast, thank you for this recipe 🥰

      @@reynagonzalez6189not at all. Depends how many chile de árbol you put in it. But with the amount she out it’s not spicy at all. Just gives it good flavor.

    My mom is Asian but my dad is from Mexico. I didn’t grow up on my Mexican side so I barely know Spanish and how to cook anything Mexican besides arroz and frijoles 😂 thanks for teaching me more recipes girl! I want my kids to know both sides of their ethnicities!

      Omg! My Dad is Filipino & my Mom is Mexican so I'm mexipino but we were raised pretty much Mexican that even my Dad speaks Spanish fluently but his Tagalog is elementary status. My Mom learned some few Filipino dishes so we get the best of both worlds

    I just want to say THANK YOU from the bottom of my heart for making these videos❤️ I was never taught to cook and a lot of it was because I really didn’t want to learn, now that I’m a wife and mom I’m embarrassed that I’m not a pro , but I have made a lot of the dishes you’ve posted and my husband loves them ! I was hesitant on trying to make birria just because I wasn’t sure I would get the texture of the meat correctly or the sauce but I gave in and made it for the first time today following your every step and I’m pretty sure I got it perfect !     Just tried it last night and it was delish. I recommend adding some of the broth to the oil , dip the tortilla in that and then put it to fry. Otherwise I found the tortilla would break too much. Now I’m on a mission to try more of your yummy recipes.

      I microwave my tortillas first for a few seconds (till warm) then fry.

      Look for traditional tortillas that have only four ingredients corn lime salt and shortening. these tortillas don't fall apart.

    This is the BEST BIRRIA RECIPE EVER!! The only change I made was not strain the consome too much and it was a HUGE hit with our Friendsgiving. My friends are always asking me to make this now because they can’t find anyone who makes it this bomb! Thank you so much!! 🙏🏽♥️

    This took me sooooo much longer than I expected. I’m a only a couple weeks into learning how to good something other than eggs. It took me 7 hours total (wild, I know) but the tacos were sooo good! My gf is a big fan too. They’re as good as the truck we like in Down Town Los Angeles. Im pretty proud of myself. Thank you!

    I was born and raised in Southern California, lived there for 63 years---a heavily Hispanic area where we had wonderful food everywhere--but somehow I missed the Birria!!! I just learned about Birria sauce and Tacos just last year 2023 in the Ozarks of all places, lol. I've been wanting to learn to make it! Glad I found your channel! This DOES look really easy to make!

    I like how you measure with your fingers. A Japanese friend of mine taught me how to measure water when cooking rice. Pour just enough water to measure up from the rice one inch. To measure this, use the 1st knuckle on index finger. After gently shaking rice in pot (on flat surface) to level it, pour water about one inch above rice. Placing index finger atop the rice and water level is touching 1st knuckle from the tip. Bring to boil, cover pot, twist the lid (to create a tight seal), reduce heat to simmer or low for 15-18 mins. You got perfect white, Mexican, or Cuban rice. For Japanese rice use Rose rice, it's delicious!

    I commented 4 months ago about how delicious this recipe turned out for me and my family. There is only one issue that I found the following day, which was the change in color as it was a beautiful bright red the first day, then brown the second day...didn't look as appealing, but it was still hella delicious.
    One suggested change from mi genti is to use California chile pods instead of the New Mexico chile pods, which I will be doing today.
    Still the best birria I've ever had.

      Omg makes me so happy to know you enjoyed it as for the color, remove the fat(top layer) before warming up again, use that to make the tacos, but after warming it up it should be. The same, tbh i love birria more the next day 😅 as for the chiles, im a big fan of New Mexico just because they are a bit spicier ☺️

      @@b.freeman2118 just cooking the meat was almost 4 hours. Its a long process but well worth it. I saved the sauce and made enchiladas with it and the meat also.

    I have made this tacos like 5 times and every time I have made them my family has loved them…they always ask me how I know how to do it and I tell them that it’s thanks to her… I love how she explains everything and how she actually tell you the ingredients as well as how much…even though some times I haven’t add everything and I had to make a few changes they are still good 👍🏼 I have made a few other foods that she has on her channel and all of them have come out so good…I love her channel because so far I have learn how to do different meals ♥️

    Hi Claudia-I made this last night for my fiancé, BIL and SIL and it was great.
    I used beef shank, ox tail bones, cumin seeds instead of whole cumin, apple cider vinegar (didn’t have white vinegar). It was wonderful and will absolutely make it again. It was so easy, just needs time 😇

    Made this tonight and it was AMAZING!!! We couldn't find the "new mexico" chili pods so we used dried anchos instead and added 2 dried chipotle pods too. Thank you for sharing this recipe.

    I really appreciate that you present, detail, and give simple hands on instructions on what you are making. I just do not have time for a long video with all the silliness that so many channels use to present their recipes. Thanks again, keep up the good work and presentation. I also like the fact that you do not mask the chili taste with lots of cummin, cloves, brown sugar all that extra, just a rich minimalist chili taste like in the Southwest.

    Made this once and my gf loved it, I enjoy cooking and she enjoys cleaning so it works out lol recently we went to a 15 and the birria was so disappointing to where she told me the birria I made was way better keep in mind it was my 1st time making it and she's Portugese/Mexican but no Espanol, compared to a catering business this recipe winning. I'm making more today to forget what that tasted like needles to say my gf happy lol Thanks for the recipe .

      Cameilla I have Spanish French Indian and Black in me. but I do know how to cook pretty good. When you live by ur self. You have to cook for urself. I make great tacos 🌮 Spanish rice and homemade salsa which is really good

    You are officially my favorite person to watch. The laughing in the middle when you messed up but left it and redid it in the video, the hands in the frying pan, just goin with the mess all over your hands and face as you eat it. Love it!     Tip I learned from a cooking show: if you love cilantro use the whole cilantro stalks & leaves (los palitos del cilantro). The stalks of the cilantro is where the flavor is concentrated!😊

    I made this today to serve up tonight, and it is very good. I can do better with my time management because this felt time consuming, and my pots and blender and ingredients scattered all over. That's my fault though! Very delicious , thank you. I did not change anything, followed exactly how you have it, same peppers and all. It was worth the effort.

    Moved from a Viet neighborhood to a Mexican neighborhood in Dallas, so my grocery stores are now very different. Claudia has been really helpful for cooking ideas. That said, Mexican ingredients for Viet recipes turn out very good.

    My friend who is mexican and I went to a man's house on the weekends that cooked what I believe is this as a soup. He made it with beef and lamb. He also added green beans and chick peas to it. I am going to try this. I haven't eaten that soup in a very long time, it was so delicious! I would eat 2 bowls. He also had a lady making homemade tortillas and omg, they were so delicious too. I have tried to make those, but they were always too thick. Lol. Thank you for sharing your recipe.
