I love how Kent NEVER compromises on flavor to save a few calories or reduce fat, yet he’s clearly the picture of physical fitness! This looks amazing.
I used to work on a ranch in south-west Texas when I was young and there was this old Mexican lady who did all the cooking. Her chili, which I had her teach me is very similar. Of course you don’t let it simmer for quite as long to keep the meat a bit more intact. It has the same ingredients but in addition there’s some dark chocolate and chicken broth and also the meat includes oxtail, which give amazing flavor. And if these tacos taste anywhere near as good I’m going to have to try making them!
Thank you for all the honor you give our Mexican food!!! I live in Texas, and texmex food just does not do us justice. Keeping the food authentic was awesome on your part! Thank you. It was a pleasure to watch your show for the first time. Also thank you for caring about your neighbors, and not letting the recording of your show take precedence over the safety of others. A BIG THANK YOU FOR NOT USING CHEDDAR CHEESE😂😂😂 And thank you again for thanking our military! My brother is a Marine.
those are probably the two most cowboy cultures I think it fits great because of the the vaqueros, gauchos (AR), huasos (CL), and vaqueiros (BR) you could honestly do cowboy cooking dishes from all over the western hemisphere from chile to alaska

Absolutely love making Birria tacos. If you make the broth thinner, you can skim the grease off the top when done and use that to fry the tortilla. Makes them nice and crispy. They are better with the charred bits and crispy beef and crispy cheese around the edges!
Yes. Everything you said plus what BL said. Lots of ways to make birria but I prefer it with the thinner broth. As this was more of a stew that ended up looking a bit more like BBQ. Also having the thinner broth on the side to then dunk your taco in is delicious.
I'm an American, but if I ever move to a different country, I would move to Texas. I spent 4 days in Huston, and the food was amazing! you guys mater cooking meats! The girls at the Colorado were very friendly too!
An American Cowboy making Mexican Tacos, beautiful ... We need more people with your kind of heart. Looks yummy, I like mine with cilantro, onion, and the green sauce..... wash it down with a cold pop. Great videos sir.
I see I am not the only Mexican American who has complimented you... Your process is spot on... Reminds me of preparing meat for tamales or red chili with my mother growing up. Your proportions look great. Overall I have always really enjoyed your videos. Please continue your good work!
I just found out how to make birria about 6 months ago and I make it once a month now. I have, somewhat, perfected my recipe. SO what I would add to yours is this: after your done cooking the batch, skim the red fat off the top of the consume and use that to coat the shells. It gets very crispy and doesn’t tend to burn like the pepper chunks do (even though I personally like the char) second you can give those peppers a toast or roast before adding them to water for a little deeper flavor and maybe add one dried chipotle in there for smoky flavor. LASTLY add some diced onions, lime, and cilantro with that meat and cheese before making the actual quesobirria taco for some added flavor and a little crunch to them. I love the videos and love your relationship with your dogs!
Sir Cowboy Kent, I love your podcast. Cooking out in the country style with good old cast iron pans, reminds me of my mama’s cooking… taste was so gooood. Just unbelievable awesome, thank you Sir Cowboy Kent, love it love it love it😘…GOD BLESS YOU🙏😇💖

Interesting with the beef short ribs. Traditionally, birria is made with goat but many make it with beef because beef is more readily available. When my mom is making beef birria, she uses diezmillo (chuck) and chamorro (upper shank). I'm going to have to get my mom's exact recipe and decipher it to save it for future generations. When I ask her "How much salt?" and she cups her hand and says "This much." doesn't work when everyone has different sized hands.
I just came across your videos for the first time this evening. And I am SO glad that I did. Your respect for the culture(s) of the food you are preparing is outstanding. Your passion for food is so genuine, it really is a breath of fresh air!! If you have not tried it yet, you should look into making some traditional Puerto Rican dishes. It would be awesome to see a cowboy's take on some big hits like Mofongo or Alcapurrias. Before moving to the States when I was 4 years old, my aunt had a little snack stand at the end of the street. Everyone on the block would come down on Fridays after work to buy some Alcapurrias. It was always such a great time, and it truly brought the community together. Though us as viewers can't be there to try the food with you, I think your channel does an exceptional job of creating a sense of community. I look forward to more videos, Uncle Cowboy. Cheers!

I didn't think birria tacos were so accessible at home! Woohoo! Can't wait to try them! And the best bit is that where I live there is a local family company that does dried chiles etc so I know I can get good chiles.
I really, really love birria & I’m going to whip up a batch of those yummy “red tacos” next week just like Kent did with one change. I’ll strain the sauce to get the pieces of chillies because they don’t mix well with people who deal with indigestion.
As a white guy lol no one ever needed to tell me Mexican food is good, it makes my taste buds go nuts literally with the savory blends of spices, I mean a simple carne asada with rice, beans and corn tortillas with salsa verde with a couple of roasted peppers and I’m in heaven

As a mexican it's a honor to see the way you cook a traditional dish. God bless you!! Saludos, amigo.
Not sure birria tacos are a traditional dish, birria sopa most likely and it’s Normally goat not beef.
@@cloudatlasminer478 Point being is that the traditional platillos are inspiring & no doubt delish for many. That style of Tacos apparently ARE made in different parts of Mexico. For Mr. Kent, it is Birria. For me it's Chile Colorado or even Barbacoa. It's all good, just the same. Buen Provecho. Peace be with us all 🙏. "Isa"
As a mexican, it's honestly awesome to see you show respect and prepare that dish the way you did. It's the first time I watch a video from you, and now you have a new sub. Thank you!
Same here. Man is amazing
Yup same here also!
😁😁😁love the dancing. My family is from Jalisco Mexico and I'm proud you are sharing one of our ancestor's receipts. I also appreciate your shout-out to all veterans since one of our sons is a Marine veteran.
Birria is so good! I enjoyed them when growing up in Mexico. I’m so glad you’ve done them justice (as always)! What I’d do for a taste of your cooking 🤩. God bless.
Thanks so much and God bless you
Thank you for sharing your recipe and love of Mexican cuisine. My grandmother was from Jalisco. Birria is popular meal for big parties such as quinceañeras and weddings. I’m making your recipe soon. Greetings from Austin TX 😀
Im not a Mexican but I love the food. It's a big part of living in Texas and I can't imagine how bleak life would be without the food i love.
As always the Cowboy proves he knows his stuff.
Mexican or tex-mex because those are very different.
this man is such an honest cook. love how he grew the right way, no BS, just gave it his best. keep on cookin Kent!!!
I grew up eating Birria in AZ (right near the Mexican border) and I'd like to thank you for sharing your Authentic Birria Tacos recipe!
You are so welcome!

I love how Kent NEVER compromises on flavor to save a few calories or reduce fat, yet he’s clearly the picture of physical fitness! This looks amazing.

Falling off the taco truck and waking up in heaven. Pure gold.
What a guy. We need more Kent Rollins in this world. Cheers from England 🇬🇧👍🏻
You need more tacos in England too, it’s food for the soul!
I'm partial to bubble and squeak and some good old bangers and mash with a side of mushy peas. dee-lish
England has some of the best Indian food though!
My dad makes the best ones! He made them this weekend as a treat for helping clean up flood damage.
A BIG THANK YOU FOR NOT USING CHEDDAR CHEESE😂😂😂
And thank you again for thanking our military! My brother is a Marine.
We thank you so much for taking time to watch and be sure and tell your brother thanks for his service from us
Who the hell uses cheddar cheese? Absolute abomination there's so many better cheeses out there
I grew up in New Mexico we made the best Mexican food...
Kent is an honorary Mexican love how he’s so embracing of both American and Mexican culture
those are probably the two most cowboy cultures
I think it fits great
because of the the vaqueros, gauchos (AR), huasos (CL), and vaqueiros (BR)
you could honestly do cowboy cooking dishes from all over the western hemisphere
from chile to alaska
Most (if not all) of Southern Culture comes from España. American culture is Spanish and French.
This is why Yankees are so close minded
As a Mexican/American thank you for sharing our culture and traditions. You are full of humor and energy love it. God bless you and your family ❤
As a man who owns a sailboat I agree. This guy is awesome. Love Birria Tacos!

My respect to you taking a break when you heard about the wind picking up. Respecting your surroundings is so important and it makes me happy to see people do exactly that.
Greetings from germany!
Absolutely love making Birria tacos. If you make the broth thinner, you can skim the grease off the top when done and use that to fry the tortilla. Makes them nice and crispy. They are better with the charred bits and crispy beef and crispy cheese around the edges!
😂yep! I'm hungry too.
You beat me to it
Ooo what a good idea
I was expecting him to put the water he cooked the chilis in with the meat!

I see I am not the only Mexican American who has complimented you... Your process is spot on... Reminds me of preparing meat for tamales or red chili with my mother growing up. Your proportions look great. Overall I have always really enjoyed your videos. Please continue your good work!
Wow!!!!! When he dipped the tortilla on the red sauce and fried it, my mouth watered so much. Looks like heaven.
They are so good
After watching this today, I ordered at our favorite Mexican restaurant tonight. I could not believe how good they are!

Looks great! Adding lime and cilantro takes the taco flavor to another level.
Me encanta el cilantro

Looks GREAT!! I like how you scrape the sauce from the blender lid, and add water to get the remaining contents out of the blender!! I have always done that too. It's a BIG pet peeve of mine when I see cooks/chefs on so many channels that waste ingredients or leave excess ingredients in the bowls! It only takes a second to grab a spatula!
You KNOW it's good when there's no dancing until AFTER the Taco is eaten 😂👍

Cheers!
