    Welcome back buddy!! Nice big kitchen. :) The tater tots come out perfect and duck fat does make a big difference! A stronger starch? hmmm🤔 arrowroot or tapioca 😉

      Thanks so much buddy! The kitchen was half the reason I bought the house I did. Perfect for videos!! Arrowroot and tapioca are d crispy for sure, but they are right under potato in the starch hierarchy. The most crispy starts with the word "sweet" thanks for being here my friend!!!

    My Friend, I totally understand frying in cast iron as I've done it for years but have you tried using a wok for frying? It uses far less oil and considering the price of rendered Duck Fat it might be a better cooking option here. Anyway just my opinion, the Tots look great, thanks for posting your techniques.

      Yes, I actually use a wok mainly for frying on a regular basis. I think my episode that’s around the time I put this video out, crispy chicken wings, I used the wok for that. Thanks for your suggestion and for watching!
