    As a cheap student, who happens to eat latkes very often I got a few tips for ya!
    1. After grating your potatoes squize the liquid over some sort of bowl. Let the liquid sit for a minute or two, and potato starch schould collect at the bottom. Dump the potato juice out, and use potato starch for latkes base - helps to hold them together ;)
    2. Use all purpose flower instead of panko. It works better for me.
    3. You don't have to pre-shape your Latkes. Just drop them carefully into the pan with a spoon, and then smooth your potato blob a bit with the back of a spoon. It's faster this way, and if your latkes break you just end up with two smaller pieces.
    4. And for all of my cheap friends out there - you can substitute apple sauce with sugar. Tastes also great!

    Being Polish my mom makes them with goulash in between two like a hamburger, then adding her own flavor she makes a sour cream sauce with grated garlic, lemon and top it with some Parmesan cheese.

      As a German it was fun to see you use "Geschmack" (as its originally written in German). Always fun to see how (i assume you're from the USA) the German Jews also managed to make German Words (since Yiddish is basically a German Dialect and every Southern German like myself understands spoken Yiddish perfectly) popular among both Jews and Non-Jews.
      Just recently i found out about "schlepp" and "Dreck" being used by American Jews and everytime i use the Internet i find out more and more German Words that apparently are common among American Jews with German Ancestry

      This is pretty much exactly the recipe I use. It's super basic, always turns out great and the exact quantities don't need to be super precise. (but I like mine with apple sauce and sour cream or tzatziki...)

    In Korea, we have a traditional pancake similar to the kimchi variations called jeon (전) which is savoury. There are many and other kinds using tofu, mushroom, seafood and kimchi especially made for autumn festival occasions! But the potato version made us very similar to our as gamja jeon (감자전).
    I would love it if Joshua could explore Korean culinary foods more often!

      This is strange to me, I use to live in a small coal town in PA Where everybody had polish ancestry. Potato pancakes were like mashed potatoes fried. But potato latkes were the typical grated potato , onion and egg but my mom added grated apple and apple sauce and it was always savory with a hint of sweet. Man I’m drooling

    My family alternates grating the onion and potato for more even distribution and we also soak our potatoes over night, strain out the starch and use it within the latka mix

    When I make latkes, I don't shape them - I drop a large spoonful into the oil then press down with a spatula. It gives the latkes these super crispy loose bits, and it's such a great little extra bit on an already delicious food.

    In Germany we call those Kartoffelpuffer and traditionally eat them with Apple Compote (or sour cream mixed with some herbs if u feel fancy). One of my favourite dishes! Greetings from Germany!

      @@Aninaya Depends on the region. Basic rösti are just grated potato patties fried on a pan (basically hash browns), but certain variants can contain egg and onion, and might be fried in oil and/or fat, just like latkes.

    In Luxembourg they're one of our national dishes and we call them Gromperekichelcher. Traditionally we use flour instead of Panko and we add parsley and onions. And we always serve them with Mustard or Apple compote (no as smooth as Apple sauce)!

    In Poland we don't grate potatoes, instead we use that weird side of the grater that turns stuff into paste(?). Tho it takes more time to make, it allows to make them thinner and crispier.

      I do it both ways, sometimes even combining grated potatoes with "potato paste" (in ratio about 3:1), and i think that this is the best way. But every family have here their own recipes for "placki".
      There is a lot of various recipes and various ways people eats them. even in the same region. I love them just with sugar and sour cream, and I know a lot of people that find sweet variant sacreligous :D

      @@jimpiunti We don't. We just add flour to make it thicker like a very thick pancake batter. Because of it we pour it on the pan, instead of making patties.
      But that also shows differences between recipes, because for this whole time i thought that in Poland we only did it from a paste. Everyday you learn something new.

    The kimchi one would work really well with a sweet potato latke too, I’ve tried a similar recipe and it was so god damn good. I even topped it with your Korean fried chicken sauce.

    Growing up, Latkes were the best around the holidays! Reminds me of when I was in charge of Peeling & Hand Grating all the potatoes & onions for my parents and 7 siblings. Finger Cuts were a given, mom used to say it builds character. Ended up going to culinary school, LOL.

      Wasn't particularly not kosher. Those exact recipes could be made in a strictly kosher kitchen with no substitutions.

    The greatest use of a Latke I've found is the base of an eggs Benedict (instead of the muffin). Top it proudly with some salty ham and that poached egg with the hollandaise sauce both of which ooze their way into the latke's nooks and crannies when you cut into it with a knife. Delicious!

    These are similar to the polish potato pancakes, placki ziemniaczane! what i do to make them crispy is when grating potatoes i use two different sizes, let the water and starch strain out of the potatoes over another bowl for around 20 mins, use the starch from there and fry over low heat. takes about 10 mins to fry but it’s so much crispier then.
    I add like a kilo of potatoes, 1 large onion and a couple of cloves of garlic, strain it, add the starch back in, add 2 tbs of flour, 4 eggs, salt and pepper. fry on low heat until crispy. onion and garlic are grated on the smaller hole size, while potato is grated alternatively - half on the larger size, other half on the smaller.
    remember- potatoes like salt they taste better

    My mom used a different smaller size grate for her potatoes and onions. She would also separate the eggs and use the yolks and crumbs as binder, then whip the egg whites then fold them in.

      You’re right, season 2 broke the world, season 3 was just plain bland and broke the Avatar, and season 4 was so bad they had to resort to giant robots. But those are the better seasons for sure.
