For today's challenge, three burger experts are going to teach you three different ways to make a smashburger. Burger Scholar George Motz will be giving a history lesson on the original smashburger. Kenji López-Alt will bridge the crispiness of a smashburger with the juiciness of a thick patty in his burger science experiment. Get ready for your ultimate smashburger master class.

I could listen to George Motz talk about burger history all day. I've never known of anyone so obsessed with one food and its history like he is, and the passion is contagious.
Absolutely!
And once again, Kenji is playing at a whole different level from others. Made his own beef flavored "american" cheese. Truly one of the masters.
Right, so he boiled 5 pounds of beef bones in order do make a fuckin burger or six?

George's passion and knowledge makes him so fun to watch. Get this man a tv series
He has an older series called Burger Land
'Burger Scholar Sessons" Look it up
he had one, no one watched it cuz it was on tv so they cancelled it. he has a show on this channel that a TON of people watch

He also have a show called "burger scholar sessions" in first we feast
Can we earn MBAs at the end of it (Masters of Burger Arts)?
He also directed a documentary in 2004 called Hamburger America

I remember when I was younger my mom would make burgers like this because we were too poor to buy the ready to make and patty shapers. So we got beef in bulk and she made it homemade like this. Love my mom
You know, its funny how you said you were too poor for ready made patties. I grew up with the sense that ready made was more expensive because people couldn’t make authentic beef patties. That they had to pay more to miss out on the real good shit, home made beef patties.
My childhood was the same.
I got homemade burgers on white bread while normal kids got McDonald's. I thought I was missing out, but now I know I was lucky.
Kenji’s burger should be called ”Through Thick and Thin”.
Genius!
@@willzavala9890 thanks!
This is actually good man

Alvin: "Alright, so here's why this modern burger is a good burger"

Old burger, flat burger, and burger burger.
Why do I only watch these when I’m starving 😭
Same. I was supposed to go to bed, but the second I started watching this...well, let's say I added another excess of 500 calories to my day
No they just make you hungry, even if you’re eating while watching
Because you'd like to be a glutton for burgers, but in the end we're all just gluttons for punishment.
I watch these after I've eaten and then am starving again. A miracle I've lost weight during Covid
I just ate dinner an hour or two ago and watching this episode made me hungry AF
This needs to be a Netflix series. The historian, the expert, and the scientist.
Kenji's burger idea is brilliant, especially the "beef cheese." Call this burger the "Best of Both Worlds Burger."
His is the worst of the 3, misses the point of smash burgers
Best of Both Burglds
Video feels like it's missing a closing segment where the 3 discuss their burgers with each other.
Yeah I was expecting them to discuss that at the end as well. It would've been interesting to hear their opinions on each other's burgers
Sad burger noises
They can't taste each other's burgers, I think these people understand that just watching a video means shit when critiquing food
thank you. needs closing commentary for sure, and each one making/tasting the other two burgers would also be great
@@GothicKin they can still talk about the process, theory, etc.
The joy on Kenji’s face when he realizes it’s better than he thought it would be.
Yeah, but he compensates for crappy pans with extra work.
@@madthumbs1564 you don't think he knows what he's doing?
@bobby hill Damn bro what’d he do to you lmao. Mans just cooking a burger chill out
Kenji is pretentious to you? What do you think about Ramsey then?
That’s a true artist of food right there. Literally trying a new experiment on the show.
“Beef cheese”
Never have I heard something so orgasmic
Cheese is made of beef, if you think about it.
NO Cheese is made of cow !!!! 😂

I heard that and instantly came 👀🔥
Kenji is just straight up flexing. I would call it the Laurel & Hardy burger.
That's the best name I've seen so far. Kudos
Yup best name
nice
Best one for sure. WELL DONE.
Kenji is literally the Einstein of food. I’ve never seen a man so fascinated by it or with as much knowledge about it
Lookup Harold McGee, he is the Einstein of food - Kenji is more the Bill Nye and very good at explaining it to a wide audience.
I second harold mcgee, he might be the single greatest resource for crazily detailed food knowledge in human history, without exaggeration.
I'd put Heston Blumenthal as the max planck of the culinary world , up there with ferran

Kenji, yours can be named “The Best of Both Worlds”.
That's a great name!
The Hannah Montana if you will
I like it, and it can be called just "both worlds" for short.
Came here to say exactly that
I would name it The Double Trouble!
George: I love the origin story
Alvin: I love to keep it simple
Kenji: I have no idea what this is going to taste like lol
i love Kenji! he is the reason i started working in a restaurant as a part time job at the age of 44. The man is so inspiring!
I love how they all fullfill their roles
George makes a historicaly accurate Burger
Alvin invents a new burger based on food Trends and viral recipes
And Kenji shows us HOW to make a smashed burger and the science behind it - This is awesome
Ohhh.........
ruclips.net/video/FSSFgWlDbJU/видео.html
leave it to motz to be a goofball, alvin to get crazy and kenji to educate me.... all three personalities in one burger episode. loved it.
I’m a Professional Grill Cook and I’ve cooked over a half million burgers to order. I always watch these. There is always something more to learn
George: "Alright, here's a historical burger!"
Alvin: "Alright, here's a different format for the smash burger!"
Kenji: "Alright, here's a mix between regular burger and smash burger, and let me just deconstruct american cheese and create beef cheese while we're at it no big deal"
My man made Demi glacé cheese and barely even mentioned it.
Y'know, Kenji's pretty sensible when it comes to food, I wasn't expecting him to compete with Alvin or George's burger fetish, but then the words "beef cheese" came out of his mouth.
I think beef cheese is possibly one of the best things i have ever heard
Nah Kenji is the guy that asks why something is so good, find the answer, and find a way to maximize its potential.
In his book he actually said that he loves burgers, that explains it pretty much lol
He may be a champion of home cooking on his youtube channel but his time at Serious Eats and his Food Lab book goes so in depth that most youtube personalities pretty much cooks his recipes for a living and brands their face on the video. TBF, many of them do give him credit.
@@sonofjenova7 He reminds me a lot of Heston Blumenthal, a multi Michelin Star chef from the U.K. who took 2 seasons worth of recipes to their Origins, and then to the stratosphere by maximizing the scientific method to enhance or concentrate flavor...
Always nice to see 3 legends do their own takes on a classic
Kenji to me you knocked that burger out the park. Perfect cook brother. I made my first smash burger off of yours years ago with my in and out twist. It was a great hit with all the family. Thank you brother. Your a great cook and an inspirational cook. Love what you give back to us. Peace out brother.
One is using a historical approach, one is using his experience and passion, and the last is using a scientific approach. I love all of them!
Each of them represents 3 different approaches to cooking burgers
George is all about going back to its roots
Alvin is about modernism and trying new things
Kenji is about taking a scientific approach to maximize results.
Q: What do you call a gangsta snowman?
A: Froze-T
Oh I'm so happy to see Kenji López-Alt! I read his articles! He's the BESTEST! Ok, George is the bestest too, so humble, so humorous, loving the story and we all know he loves the taste... but leaves it to his friends to make magnificent burgers. He just... makes the first. And teaches us a wonderful lesson of humility.
You guys are good.
George’s section is so well done. Young could tell how much effort they put into his part.
I love how they are being so modest about why the Smashburger is popular again Knowing damn well it is because of them
Literally! Every time they mentioned it being “so popular these days” I was wringing my hands like it’s straight up BECAUSE of you guys 😂
Lol George is always burning his mouth
I love how nerdy and unpretentious Kenji is. Brilliant guy!
So we have a food historian, a professional chef, and a food scientist. Love it!
Kenji needs his own show on this channel!!! I enjoy his narrative and style.
Good news, Kenji already has his own youtube channel. It's pretty good! ruclips.net/channel/UCqqJQ_cXSat0KIAVfIfKkVA
Narrative and style are good; information not so.
Kenji is a cooking god.
Definitely the burger that id wanna try first
He's very smart in some ways, but a total idiot in others. There are much better channels to watch.
I love Alvin, George, and all the other guests and I know smashburger is literally in the title is this episode, but I was excited to see Kenji include a thicker patty in his sandwich since I feel like this show is really smashburger heavy.
I love Kenjis approach to his burger. The juiciness from the thicker patty mixed with the smashed patty is such a good idea.
