How to Cook a Perfect Patty Melt with George Motz | Burger Scholar Sessions
HTML-код
- Опубликовано: 14 май 2024
- Burger Scholar George Motz teaches you how to cook his favorite patty melt! Motz says this is the burger he dreams about all the time, and you'll quickly learn why it's so unique. Borrowing a method from Wisconsin burger shacks, Motz poaches the hamburger patty in beef stock and slides it in between a grilled cheese. This is truly regional hamburger nirvana.

My name is David, and I love watching hamburgers being made.

I came to First We Feast for Hot Ones, but I stayed for George Motz.
He really is the best. And what I love about him is he probably didn't shoot for this. He was already an historian, who happened to hook up with the perfect company, at the perfect time, and we all benefit!
Same
For real I want to buy his books soon
Why not both?
I will never get tired of the fact Motz is so excited to eat burgers that he’s willing to cauterize his mouth every episode
We have to wait a week for his mouth to heal between episodes.
I am beginning to think he is Wolverine with his healing factor only in his mouth though.
@@heronlim8462 or just the actual wolverine, but centuries later when he found inner peace and decided that burgers were what he was most interested in

Also George: *surprised how hot a burger is when it’s fresh off the griddle*
Love this guy
unfortunately, his dedication does not extend to hamburger safety
Every. Single. Time. It's amazing XD I don't know how he hasn't developed more heat resistance at this point
Understandable when you want a burger you eat it

@COVID-19 Wow, a sentient virus. You suck. For both, being a virus and for bringing up chicken in a burger video.
Mainly for plugging chicken though.
I like how this implies that there is a deity of burgers.
George: "Oh shit, it's hot!" Two minutes later: "Oh shit, it's hot!" Two minutes later: "Damn that's hot! Didn't mean to do that!"
🤣
It's almost like watching myself cook!
I mean, that's just a testament to how good it is.
Same thing every episode!
I used to work as a short order cook on a National Guard base, and we did a lot of burgers. Right before we opened every day, we would sear off 6 or 8 patties, and toss them in a third pan that stayed on the flat top, full of beef broth and Worcestershire sauce. When it came time to serve, we would scoop one out, put it on the grill long enough to dry the outside, and onto the bun, then sear off another one to replace it. They just sat in that hot broth and finished cooking. I kinda want one now, they were actually really good.
Soinds like a perfect addition to his method. Some zing?
@Christopher Arteaga aside from a sprinkle of salt and pepper when the patties went out, the broth and worcestershire was it. Everything was premade, keep costs down kind of stuff. Premade patties, boxed broth, etc. We did a ton of them, though.
In the 80s I used to go to air shows on the US air bases in England. It was great - you'd arrive at about 9am and soon after you'd get a can of Budweiser from an iced dustbin and a burger. This sounds like the way they did them - they were definitely wet. This is good intel, I might make one!
@@timyoung6535 RAF Lakenheath per chance? I was one of the F-111 drivers at all those airshows. Hope you enjoyed it, we sure did!

I don't think I could ever get enough of George Motz. What a Legend.

So glad George has become a regular on this channel.
I have rewatched all of George's content and will continue to do so. He is so maniacal over burgers and sandwiches and educational at that. Love everything about him
Watching Burger Scholar Sessions while eating burgers approaches a kind of definition of true happiness.
I can't thank you enough for these videos, Mr. Motz, please never stop.
Heaven is literally Motz eating a burger on the beach
I'm so happy he got his own show. From the first time we were ever introduced to him I was 100% sure he was perfect for the spotlight, always gives so much energy and excitement, can tell he truly loves burgers.
George needs his own channel cant get enough of the legend
Gordon Ramsey: "You don't fucking boil a burger!"
George Motz: "Hold my broth.."
I'll take Motz over Ramsey any day.
I frickin love george energy
Been loving this series since it debuted. George is the kind of guy I’d love to sit down and have a beer with and see where the conversation goes. I also never thought it’d happen but Joe Rouer’s was referenced! I grew up less than 20 minutes away in Green Bay. It’s hard to beat a Joe burger.
i love watching george make burgers, the happiness he gets from making them is soooo refreshing
keep em coming. never end this show. the world needs more motz!
George Mortz is the cool uncle. This seems like something I can make.
George Motz, a national treasure, just like the burgers he protects
Patty melts are my FAVORITE burgers. Thank you George for making them!

Love how there's such a story behind both him and the burger! Plan making this on my own too.

I'm just sayin here: George has done peanut butter burgers (not even peanut sauce lol), pimento-cheese burgers, hot dog burgers, and even burgers that take over an hour to cook; somehow all of them have seemed worth it.
It's simply impossible that George would be unable to make a shrimp burgerlook appealing in the video. I don't even know why it hasn't happened yet. I want one already.
This series is quickly becoming one of my favorites on youtube!
Love the Patty Melt! I remember being a kid at the Woolworth Lunch counter with a Patty Melt in hand! Little bite of heaven! Thank you George!
Ok I will definitely give this a try!!!
Love this guy. I hope this show lasts forever and ever and ever and ever. Or bring back his tv show. Can we have both? C'mon, it's 2020 where anything can happen.
OMG....George, My kids and I love to watch. Just saw this hours ago, made at home....hands down, the best patty melt I have ever had. And that was with a frozen patty.....can't wait to actually form one and do this! TOPS!!

Such a culinary delight. I’ve loved a patty melt since having a 50’s diner in my neighborhood in college 20 years ago. I’m gonna have to try this at home now.
Just made this, absolutely freaking fantastic. Thank you for you're work George.
Last time I was this early they were still only using onions to flavor hamburgers
"If my legacy is the fried onion burger..." I think he's selling those sideburns short.

Motz, you’re awesome. I just enjoy the simple enthusiasm he has for burgers.
This man’s love for burgers is so pure.
I don't understand how he manages to burn his mouth literally every episode 😂
Motz has no chill
I think it's because of the heat from the cooked food. :P
The man likes his burger hot off the grill.

Damn that is one beautiful burger right there man
Hey George, big time fan. I grew up going to Snow's BBQ in Lexington, TX. Not only did I try this burger with my family, it was a huge success. Thank you for your wisdom, and much respect from the great state of Texas, Heeya!

I love George. He just makes me want to go cook a burger. But I've got to go to the store 1st to get all of the stuff to make it with. Ugh!!
Thanks George you rock my man.
Everyone who’s poor has made a Chester burger lol
Buns were a treat for special occasions in our house growing up.
Burger? Back in my day, we split hot dogs down the middle and fried them to fit on sliced bread with some mustard. Uphill both ways, baked potato, raining.
How is this a poor mans burger? You can make a simple cheeseburger on a real bun and it would cost less lol
@@LimpyLegolas what kind of bread are you buying LOL. There's no way two slices costs more than a hamburger bun, unless you're comparing something like Dave's killer bread to the most basicest (I know this isn't a word, laugh a little) of basic buns you can find, with the regulation-accepted amount of sawdust in it and no less.
Anyway the point is, if you don't have buns sitting around already it's obviously more expensive to buy a package of them than it is to just grab a couple slices of the bread that you already bought. Everyone's got some bread sitting around, not everyone has buns sitting around.
Larry Bird's Trash Talk my dad use to fry German weiners and put them on bread with mustard. Guess that’s a universal poor mans delicacy.

I love George's excitement for comfort food. Dude is giddy as hell for a patty melt. I know that feeling man.
Me, from NE Wisconsin:
George: I call it the 'Chester Rouer".
Me: Wait. It can't be.
Narrator: It was.
[It's definitely pronounced more like "roar" locally, though.]
I'm headed to Door County on Friday. May need to swing by and try one.

I've been in Wisconsin for a few years, is Joe Rouer's in Door County worth the trip?
@@stevekjr9563 In my honest opinion, no. Unless you're truly down to check it out for nostalgia/burger nerd purposes, it's kinda mediocre as burgers go.
Door County absolutely is, and if you're near Joe Rouer's it's something to check off the list, but I wouldn't make a special trip. Kroll's in Green Bay should probably be the NE Wisconsin burger mecca.
Yum! Why do these always have to come out right before lunch?!
Was watching these videos this weekend and got in the mood for local burger action so I called in a carryout order to Solly's here in Milwaukee--sat down at the counter to wait and noticed on the edge of the counter in front of my seat was a plaque with George's name on it! Also stopped at Wedl's in Jefferson, Wisconsin several times this summer based on his videos--one of the best dudes on RUclips!
Its all about that crunch for me!! Thanks George for this video!! Now I'm going to make that for dinner..

suggestions:
1. make longer episodes - 10-15 mins
2. interview / chat with people about their experiences with those burgers
3. dive deeper into the origins of those burgers - what inspired those creators
4. try making your own spin on those existing burgers - something that could improve them
5. more of George's road trips!
6. discover burgers across the globe, most of them are not called 'burgers' but they have different local names
guys give them more suggestions so they could turn this into a whole series!
While these are good suggestions and I agree with them, this will take a lot of time and money akin to an actual television program which, FWF may be able to do but they definitely wont come out every 2 weeks, more like 2 months
I feel like the show used to be somewhat similar to this
Honda Civic Yeah, The Burger Show basically did something like this (with Motz too), but with covid you cant travel as much so Motz is just doing that kind of infotainment at home. Also, if youre looking for that kind of content Motz did a small tv series similar to what you described
@@MrP1nk92 To add to what you said, the show Motz did on Travel Channel was Burgerland.

Just gave this a try. Wow. Savory and melty and delicious. I've seen patty melts at various restaurants but never gave them the time of day.

It’s all about the Patty Melt. The secret is in the Monterrey Jack cheese with glazed onions and finely chopped jalapeños. Add Bacon and you’ll be in heaven.
No one can convince me that George doesn't get high af before doing this show
I would definitely guess he likes the herb.. don’t we all.
I literally cannot stop watching this legend
I kinda envy that in a way, getting to grow up near the beach like that. I grew up in the South, smaller size town with nothing special going on. Always an indoor person so this kind of stuff never interested me much. Growing up and getting to travel like I have, living up in the mountains for a change and just gaining a real appreciation for nature, just getting to see the beautiful ocean and the like. That's the stuff to live for. So much amazing stuff out there just waiting to be seen.
Side note: That patty melt looked absolutely incredible. Loving these videos!
Hes like an american James may who cooks burgers and has adhd
You know he's excited and loves the burger when he can't stop burning himself in order to make and eat it sooner...
My favorite show of the week. I wish we could get a few episodes about the basics. For example an episode surrounding the history of hamburger buns and their different variations with regards to what works better with what kind of Hamburger - white squishy vs. sesame seed vs. kaiser roll etc. Toasted, not toasted. A Deep dive!
I wish the world was full of more people like George Motz
Partying, more like getting stoned and getting the creative munchies.
Does anyone know where his hometown is? He never says.
His hometown is America.
I was curious too. Turns out he lives in Brooklyn.
