- If you want to understand the soul of L.A.’s burger culture, you have to head to the Apple Pan. The 70-year-old West Side burger counter embodies the burger in its purest form-served at a counter and wrapped in paper by life-long staffers. Few people can talk about what makes this place special more than burger scholar George Motz. In today’s episode, Alvin and the roving Burger Lord are going to dig into why the Apple Pan deserves to be called one of the best burgers in America.

I wonder if the two guys that have been there 42 years still play pranks on the new guy who has only been there for 25 years.
Jimby hahahahha the “rookie”
The Apple Pan is right near my house so we eat there all the time. I talk to the guys who work there and I can confirm, they DO still treat the guys who have only been there for 15-25 years like rookies.

Something that isn't mentioned is that they've likely kept so much of their staff there for decades by paying them well and treating them right. Being a good employer is so essential to running a good restaurant, never forget that your employees are as important as your customers.
100%
It's all about the secrets and methods. as an owner you don't want to spread them around by letting one of your staff goes to work somewhere else, because the staff knows how the food is made and the secrets to why it is very good and successful. While in big chains like McDonald's they keep the methods and secrets from the staff so they become dispensable. That is actually one of the major issues with capitalism and big corporations and why it is a good thing to encourage small businesses to thrive amongst the capitalistic corporate takeover.
thats correct and it directly relates to why it tastes the same every time (sure ingredients matter alot) but you need the mechanic to use the tools

I'm loving all of the genuine concern for Alvin's health. He is a nice, passionate guy who is getting so much support from the community. I hope he reads through these comments and appreciates the sentiment. We care about your wellbeing! Mad love!
Seven Everywhere it’s not support, it’s just fat-phobia disguised as “concern.” There are thin people everywhere who eat just like him and smoke and do drugs and have generally terrible health but are thin because of genetics and no one says this crap to them-because it has nothing to do with healthy behaviors. The truth is that no one knows what Alvin’s blood pressure is, or if he a diabetic or his cholesterol or anything about him. Skinny people have heart disease as often as fat people with a genetic pre-disposition for it. If there was a thin dude sitting there doing this, no one would say this stuff. Let’s not kid ourselves. No one is concerned for anyone’s health.
@@ramseyfitzsimmons4854 Just to be clear - there may well be fat-phobia or people judging him as a person based on his weight, that's not ok, by all means. But the idea that obesity does not affect incidence of heart disease is simply not true. It's also not true that genetics alone define weight loss or gain. Diet matters - you'll note people in the same families can have very different body-shapes based on dietary habits and behaviours.
More importantly - I'd be interested to see a study showing that "skinny people have heart disease as often as fat people with a genetic pre-disposition" meanwhile, the rest of medical science would like to point out that taking reasonably good care of your body (which does not mean being too thin, going on crazy diets etc. either) will give you a longer, healthier life. Adults are adults, they can make their own choices, and I enjoy Alvin for his showmanship, I do hope he's happy, and I hope he gets to live a long and disease-free life.
Collated info:
www.niddk.nih.gov/health-information/weight-management/health-risks-overweight
In this study, Data from Behavioral Risk Factor Surveillance System were obtained and analyzed for obesity rates, percent of myocardial infarction, stroke, and HBP from 2005-2009. Results of this study showed a low association between obesity and myocardial infarction rates (R2=0.067); a moderate association with stroke rates (R2=0.462); and a strong association with HBP rates (R2=0.811).:
www.ncbi.nlm.nih.gov/pmc/articles/PMC3250069/
In this study, obesity was associated with shorter longevity and significantly increased risk of cardiovascular morbidity and mortality compared with normal BMI. Despite similar longevity compared with normal BMI, overweight was associated with significantly increased risk of developing CVD at an earlier age, resulting in a greater proportion of life lived with CVD morbidity.
www.ncbi.nlm.nih.gov/pubmed/29490333
This last one is interesting because it shows that overweight people with access to proper healthcare tend to live about as long on average as someone with a normal BMI - but have more cardiovascular disease, so quality of life is likely decreased.
@@PhilipLautinJackson Great comment.
Philip Lautin Jackson I won’t waste my time with a long comment back, but your research is severely outdated and fat phobic and funded by the diet industry, which has been profiting off of this type of thinking via diet pills, diet programs, workout programs, and surgeries for years and you need to read research that has been conducted in the last 2-3 years, not studies from 10 years ago. You know very well correlation does not equal causation. Many factors determine the likelihood for obesity, including genetics, socioeconomic status, etc. Just because a person is fat, it does not necessarily mean that they are more likely to have health problems than a thin person next to them, and if you think that, you are indeed fat phobic yourself. I’m not saying this particular man in this video has health problems or not but that’s between him and his doctor-and it’s not for these random people on the internet to guess at or comment on because of his size any more than it’s appropriate to comment on private things for thin people. It’s almost as if him being fat makes people think they have a right, and they do not.

adults can remember as far back as 3 years old. he said 'as long as i can remember', meaning that even subtracting 3 years worth of burgers that he may OR may not remember, he's still eaten at least 10400 burgers
At $7.10 a burger, this dude has most likely spent a minimum of $38,072.00 on burgers. $76,055.20 if he eats two a week. Of course you have to adjust for inflation and all that but still, dude deserves a burger named after him.
