Au Cheval is freaking incredible. The burgers are great but it's the fries with the cheese sauce and egg along with that bone marrow appetizer that really steal the show.

I'm from the south suburbs of Chicago, and grew up on the crispy-edge beauty that is the Schoop's hamburger. I could never figure out why these weren't more popular (but now, fast forward 3 decades, and . . .).
As a kid, these burgers paired perfectly with a regional soda called Green River which , for the uninitiated, is like drinking a glass of lime Jell-O, but even sweeter (I think some Schoop's locations even make Green River shakes).
Green Rivers! You can still get them in bottles at specialty candy stores as well as the infamous Jungle Jim’s international market on the north side of Cincinnati.
Yes! Green River is sold at most markets in Chicago around St Patrick's Day. There's a pizza joint around 95th and Cicero that had that stuff on tap! We'd always hit that place up after being at the bar across the street from there. $3 for a huge slice of mostly dough pizza and a small cup for infinite Green River. Good times.

The best cheeseburger I ever had in Chicago was back in the 80s when a partner and I visited for the day. Just before leaving town, we rolled up on a food truck run by Latinas.
He had a pork chop sandwich, I had the burger...best burger I'd had in a long time.

As a Chicago native I'm ecstatic about the 3 places you visited. The Region is out of this world and The Loyalist is certainly better than Au Cheval. Fatsos....that place is amazing, and even more so after you've been drinking. Great episode my dudes.

I grew up in Merrillville, IN and Schoop's was always my favorite. Fantastic burgers and TONS of fries. Anybody else remember Miner-Dunn? Also good.

John Medved Nice! Grew up in Lynwood/Lansing. Shout out to Merrillville and Southlake Mall, that was our favorite as long as you didn't mind the RT.30 traffic lol . I'm pretty sure there's still a Miner-Dunn in Highland off Rt.41.

Northwest Indiana definitely birthed this style of burger. They need to do a show on burger spots from "da region" as us native to NW Indiana call it and go to Schoops, Miner-Dunn and Blue Top Drive and another show on other places like Lincolns, Miller Pizza and a few other places.

This was my favorite episode of the Burger Show I've seen yet, but like it or not deep dish pizza is in Chicago's DNA and should DEFINITELY be on the radar of tourists. Lou Malnati's is just ridiculously good.
As a native Chicagoan for over 30 years we really only eat deep dish whenever tourists are in town or for special occasions. Tavern Style is what we eat 99% of the time.

The burger show really needs to hit Town Topic in KCMO. They've been making smashbugers since 1937, and their 20th & Broadway spot is open 24/7. It's a tiny little spot, no tables, just the counter and bar stools. super classic KC diner food.

Being an Illinois native, when "smash burgers" became a hot item, I was like "oh, so it's just a burger." For once in my life, I pitied people who didn't grow up here.
Grew up in the 80's and 90's so I had the 85 bears winning superbowl XX as Jordan was mending his bum foot. Then high school with the first 3 peat. Food was always awesome. People have always been great. City of broad shoulders. Miss my city!

Curve Ball: Connecticut, the birthplace of burgers. Louis Lunch in New Haven for the OG, Ted's in Meriden for the steamed burger, Shady Glen in Manchester for the fried cheese.
Chicagoan here who goes to school in CT . I just had Louis Lunch and honestly it feels kinda boring. I respect the tradition and history, but the cheese wasn't too flavorful and the white bread brings the burger down in size and heft. Been meaning to try Ted's and Shady Glen tho

St Louis born and raised, took MANY a weekend trip to Chi-town to watch the Sox. The food there is truly like nowhere else. Chilli dogs, pizza, burgers....when I moved to the east coast, I was FLOORED that nobody knew what a smash burger was. All they had were these greasy lumps of hydrated meat sponges. Blech.
