- Chocolate Souffle Cheesecake
· Ingredients:
90g egg white
45g egg yolk
90g cream cheese
60g milk
60g chocolate
10g cake flour
8g cocoa powder
50g sugar
· Mold size:Φ12cm
· Baking:
155℃/311°F 70min (water bath baking)
· How to make:
1. First separate the egg white and egg yolk, freeze the egg white for about ten minutes.
2. Heat the cream cheese over hot water, add the milk and stir until there are no particles.
3. Melt the chocolate, pour into the cream cheese batter and mix well, add the egg yolks.
4. Add cocoa powder and low gluten flour through a sieve, mix well and set aside.
5. Beat the egg whites, add the sugar in batches, add the whipped egg whites to the chocolate cheese batter and mix well with a spatula.
6. Line the mold with greaseproof paper, pour the batter into the mold, use a live bottom mold need to be wrapped in tin foil, water bath baking.
