Souffle Cheesecake Recipe
· Ingredients：
cream cheese 90g
milk 50g
unsalted butter 15g
egg yolk 40g
cake flour 10g
corn starch 8g
egg white 85g
sugar 40g
· Mold size：Φ12cm
· Baking(water bath )：
150°C/302°F 70min + 180°C/356°F 5min
· How to make：
1. First separate the egg white and egg yolk, freeze the egg white for about ten minutes.
2. Mix the cream cheese softened at room temperature, then heat and boil the milk and butter, pour into the cream cheese and mix well.
3. Sieve and add the cake flour and corn starch, mix well, then add the egg yolks and stir well.
4. Whip the egg whites, add the sugar in batches, add the whipped egg whites to the cheese batter and mix well.
5. Mould lined with greaseproof paper, pour the batter, using a live-bottom mold need to be wrapped in tin foil, placed in a mold with warm water, water bath baking.
6. Temperature first 150℃/302°F, about 70 minutes, then 180°C/356°F, about 5 minutes to make the top color.
7. Remove from the oven, cool and refrigerate overnight to eat.
