Ingredients: - 160g cream cheese - 20g unsalted butter - 50ml non-sugar milk - 40g baking flour (or 30g all-purpose flour & 10g cornstarch) - 4x eggs - 1/4 tsp lemon juice - 80g sugar - water - apricot jam (or honey) Materials: - 2x large mixing bowls - 1x pot (size not mentioned but I would recommend relatively small) & 1x stove - 1x hand whisk - 1x hand sieve - 2x bowls/plates (to store eggs) - 1x electric whisk - 1x spatula - 1x oven Recipe: 1. Leave cream cheese at room temperature & then mash until smooth (make sure you let it cool off before mashing - otherwise it will be chunky). 2. Add unsalted butter to the cream cheese (don't mix yet). 3. Boil water in a pot & place the mashed cream cheese on top of the boiling water. 4. Whisk until the butter is melted & the cream cheese is warm. 5. Whisk in non-sugar milk until all mixed & warm, then take out of pot. 6. Sift in baking flour (or all-purpose & cornstarch) & whisk together well. 7. Separate the whites & yolks for the eggs. 8. Whisk the yolks into the cream cheese mixture (step 6). 9. Beat the egg whites and lemon juice (it droops a little when picked up). In three parts, add the sugar and keep beating (every 15s) until soft peaks form. 10. Add in 1/3 of the egg whites (in two parts) to the cream cheese mixture (step 8) (make sure the mixture is a little bit warm) - then whisk it in in one direction only. 11. Pour the cream cheese mixture into the bowl with the rest of the egg whites. Use the "fold technique" to make sure all the liquids are combined. 12. Stir gently until everything is combined (the final mixture should be pretty liquid). 13. Place parchment paper in a cake pan, then pour in the cake mixture. Hold a spatula's narrow end in between to get rid of bubbles. 14. Place the cake pan in a mold, then fill in 1/3 to 1/4 with hot water. 15. Preheat oven for 15min at 170/180 degrees Celsius. 16. Bake cake at 160 degrees celsius for 20min. 17. Open oven to allow cake to cool for 5 - 10s. then bake at 110 degrees celsius for 60min. 18. Gently tap around the mold for the cake to fall out. Everyone loved it, though we all agreed that it didn't much taste like cream cheese, but still, we gushed over the light, spongy texture and ate it with some strawberries and raspberries. This is definitely going in our cookbook!

I baked this today. I was thinking about it for a week now coz I cant seem to find a helpful comment from someone who has successfully baked this recipe but I gave it a try anyway. It turned out really well. I used a 6inch cake pan for this which is perfect. You should use aluminum cake tin. Dont use the black non stick ones coz the cake needs to be able to stick to the side to rise well. Also, I waited for the cake to rise well enough before I lowered the temperature. I know the recipe says bake at 160 for 20mins but I waited for it to rise and change a bit of color before lowering down the temperature. In my case it took about 30 mins. Another tip, dont let the browning on top scare you. Don't remove the cake prematurely or you will get too moist cake. Lastly, let the cake cool down completely at room temperature without the water bath before removing it from the mould or you will have a hard time handling it. It's normal for cakes to shrink a bit when cooling down. For the taste, The cake tastes really well. I followed the recipe and only changed the 1/4 tsp lemon juice to 1/4 tsp cream of tartar instead. The cake tastes reeeallly good especially the top brown part. Another thing I changed is that I dusted it with confectioner's sugar on top instead of honey. Tastes sooo good. Thank you so much!
@@hazeldejesus1566 depends on the height of the pan. I would probably double the recipe if it the pan is bigger. Wouldnt recommend it if the pan is not tall enough to create that jiggly sponge cake.
@@carmenisverycute how did it go? Its ok if it splits. The heat might be too much or you put it on a high level of the oven. Dust it with confectioners sugar and it should cover the split :)

Just tried baking this. The only issue was that the cake’s surface cracked. I am not a sweet tooth person, hence I reduced the sugar to 60g and it tasted so good to me. AND IT WAS SO SO SO FLUFFY ❤ Thanks for the recipe!

The cheesecake was first baked at 160 degrees C but didn’t turn golden on top after baked another 60 minutes. So I baked again at 180 degrees C for another 10 minutes and 5 minutes. Then the cake came out golden on top. On the whole, the soufflé cheesecake is really yummy and jiggly. Your video shows oven was at 180 degrees when you opened the oven after 20 minutes. But your instructions was typed as 160 degrees. Was this an error? Anyway, thank you for this great recipe.. 😊

Came here to say this recipe is perfect! It tastes just right, with the right amount of sweetness. You'll need to adjust baking time and temperature depending on your oven though. Mine is conventional gas oven and I needed to turn temperature up to 200°C to get a brown top, and baked it longer for the center to cook. I also used an 8inch pan and had to multiply the ingredients by 1.5. Expect a fluffy, cloudlike texture and eggy and buttery taste when eating it freshly-cooked, and when it cools down the cream cheese dominates the taste and texture becomes more dense and fluffiness goes away (but still airy).
@@rainyv8530 if you want to have the fluffy texture like in the video, then yes you have to eat it the same day you make it. The texture will change after one day, it will already flatten and the taste may change too

Came here to say this recipe is perfect! It tastes just right, with the right amount of sweetness.
You'll need to adjust baking time and temperature depending on your oven though. Mine is conventional gas oven and I needed to turn temperature up to 200°C to get a brown top, and baked it longer for the center to cook. I also used an 8inch pan and had to multiply the ingredients by 1.5. Expect a fluffy, cloudlike texture and eggy and buttery taste when eating it freshly-cooked, and when it cools down the cream cheese dominates the taste and texture becomes more dense and fluffiness goes away (but still airy).

@@rainyv8530 if you want to have the fluffy texture like in the video, then yes you have to eat it the same day you make it. The texture will change after one day, it will already flatten and the taste may change too
