    When I first started making Keto ice creams, I would pour the mixture in ice trays, freeze them, and then I would take the cubes and put them in my food processor, and processed until it reached a smooth consistency. If you can't get a Ninja, you could try that method.

    I know it's been a while on this one but in case someone sees this comment...Cold blunts the perception of flavors. So when she said it was not very sweet as a liquid, I knew where it was headed. You need to think it's too sweet or too 'whatever', as a liquid. That way, after it's made into ice cream, you get the actual flavor you are looking for.

    I'm with you, Anita. I don't like very sweet either. I rarely use more than a quarter of the sweetener given in recipes. Plenty sweet enough for me.

      @@janicecarey3592 apparently mostly liquid eggs in cartons are pasteurized.
      So according to sugargeekshow these are ways & times; which I am super excited to know as I am not comfortable eating raw these days.
      "The pasteurized eggs will still have the consistency of raw eggs and can be stored in the refrigerator after pasteurization. They can be used just like any egg so if you need just the whites, you can separate the egg yolks from the whites and have pasteurized egg whites.
      STEP 1 - Place the eggs you want to pasteurize into a medium-sized saucepan in an even layer. Cover with water so that there is 1″ of water above the eggs. Then remove your eggs. You don’t want them in there until your water is at the right temp.
      STEP 2 - Heat the water to 140ºF using a thermometer to monitor the temperature. Any warmer than 142ºF and you’re going to cook your eggs.
      Pro-tip - If you have a Sous Vide, this process is incredibly easy because the sous vide will keep the water at the exact temperature you need. To pasteurize eggs using a Sous Vide, set the temperature to 135ºF and allow them to pasteurize for 75 minutes. This lower temperature keeps the protein of the egg white more intact and the longer pasteurization time further reduces the risk of pathogens.
      STEP 3 - Place your (room temperature) eggs in the water. Heat the eggs for 3 1/2 minutes. Make sure the temperature of the water never goes above 142ºF or you will cook your eggs.
      NOTE: These times and temperatures are based on the recommendations of International Egg Pasteurization Manual. "

    Welcome back! I will be glad to see Teddy again and I am sure that he will be glad to be home with you.
    This is the first demo of the Ninja Creami I have seen that actually makes me want to make ice cream. I was wondering if the glycine was making the difference in the texture. Anyway, it looked really creamy and tasty. I have some glycine on hand, so I think I will make ice cream with my vitamix and see how it turns out. Hope that you are getting unpacked and settling in well.

    On the glycine, Bulk Supplements brand glycine was used and it has 1000mg per 1/3 tsp -- recipe called for 2 tsp of Bulk Supplement brand glycine which is 6000mg or 6g. This 6gm is not a weight so don't get confused, it is how much medicinally there is in 2tsp of that particular brand. There are different strengths available, so 2tsp may not be universal, it would be 6gm per the label. You can even buy capsules of 1000mg, 2000mg and simply open them into your recipe.

      Whenever I refreeze leftover ice cream, I just do a respin and it's fine! The ice creams with a lot of fat like this respond really well to refreezing, sometimes they don't even need another spin, sometimes it's just a matter of letting them sit on the counter for 10 minutes to get softer.

  • @jb6712
    @jb6712 Год назад

    I"ve used cream cheese in my keto ice cream, and it's quite good! I do have to stop using any sweeteners, unfortunately, because I just recently came to realize that it triggers insulin spikes that are so bad, it's as if I have a raging hunger, and it happens within ten minutes of eating any kind of sweetened food. Processed sugars are absolutely out, me being a T2D, but I can learn to live without sugars and sweeteners.
    I've never heard of, nor thought about, using butter in my ice cream, but that would be fabulous to make Butter Pecan, which is my favorite.
    "Creamy, thick, and rich" will be very satisfying, I'm sure, and I can't wait to make this during normal daytime hours (it's currently just after 1 a.m. here, and I don't to wake up my neighbors by running my stick blender (no ice cream maker)).

    I just (1st Aug 2024) bought the Nija Creami at th start of transitioning from Keto to Carnivore. I tried your recipie and it hasn't gone well 😅 The first issue is that the mound that forms as the mixture freezes is huge - had to shave it down with a knife until it was roughly level with the rest of the mixture. After I spun the mixture (I used Gelato setting) it came out powdery, so I used the re-spin function (no added liquid). It didn't appear much different and when I scooped it it tried to stay together but then crumbled in the bowl. There was a very slight eggy taste, it didn't look anything like yours. Please bear in mind I'm no cook, but I should be able to follow your simple recipie. Any constructiove suggestions or ideas welcome. My wife has offered to try to make it from this video, I'll be able to watch her and learn from her if it turns out like yours. Thanks for all these great videos.

    • @KetogenicWoman
      @KetogenicWoman  15 дней назад +1

      Hmm I hope it's gone better now? Why the Gelato setting? I have never used that. When I follow recipe for the very first time I follow it exactly, both the steps as well as the ingredients and then maybe the second time I make it I play around with using different things. Hopefully by now you have tried again! Please use the Lite Ice cream setting as I did. That is most likely the biggest issue.

      Well I have owned 3 other ice cream makers over the years and they all made ice cream that I would rate 5 or 6 out of 10. The Ninja is definitely a 10, so not sure what tips I can offer to make ice cream without a maker at all! I've tried blender ice cream l, just use your blender, the mixture and some ice cubes. It needs to be a powerful blender. Then there is the mason jar method, where you will it with cream, flavoring and allulose and shake it until it thickens and then freezes. Again sort of works but nothing like the Ninja. Start a savings jar and I also think the price will drop within the next couple years, every time I see a sale on it it seems to be a lower price!

I have added inulin to reduce the glycine amount and taste and although it does somewhat work, I still don't like it. I read that inositol could also be used.
