      If you put you whole frozen berries in your processor first and chop with out the cottage cheese until they are broken up, then add the cheese you won’t have big berries to deal with.

    I just read in the July 3rd issue of First for women magazine that erythritol is linked to higher risk of strokes and heart attacks but allulose actually boosts weight loss, is not absorbed by the body and sheds significant fat especially around the midsection. (Pg.36 with reference to 3 different doctors 😊

    Ok, I had ricotta and it has 2 grams of carbs per serving. It was so thick and creamy. Likely less tangy than cottage cheese. Thanks for the idea!

      That's an old low carb dessert recipe -it's amazing mixed or blended with lemon zest! -ooh I'mma try that again with a little no sugar hazelnut syrup -a modified Italiano treat!

    I used to professionally bake. I will share a secret with you on how to maximize berry flavor without having to reduce it for hours on the stove or without using fake extracts:
    Get some freeze dried berries and pulverize them into powder in the blender. Just make sure the blender is super dry and clean. It’ll punch up the berry flavor like you wouldn’t believe, for less volume and no added moisture ☝️😬

    I've been making a smoothie with cottage cheese for about 10 years. 1 banana, 1/2 cup cottage cheese and 5 or 6 strawberries(can add vanilla)...makes a great summertime breakfast or throw in the freezer...Yummy! No sugar needed.

      ​@labab1048 I'm guessing it's because you're stressing about the sugar in the banana.
      To the best of my understanding, when the sugar appears naturally in a whole fruit, it's counter-acted (or something) by the fiber.
      Maybe if you're diabetic the sugar would matter but I'm not (just like most people) so IDC. I found it funny that you care.

    Irish coffee cottage cheese ice-cream... Freeze-dry coffee granules, whisky, a touch of vanilla and sweetener. Amazing!

    Use a cup cake baking tray - line it with Paper cup cakes, or use reusable cupcakes moulds usually silicone based, they make great portion sizes. It will freeze quicker and in turn defrost much quicker as well.

    Pro tip!
    Only use salted cottage cheese for flavors like cheesecake and pb flavors, otherwise I think you’ll find your ice cream too salty. I only use salted cottage cheese for those flavors. Otherwise, I buy salt free or no added salt. So the end product really taste more like ice cream. Regardless of what flavor you choose it is gonna have a cheesy flavor.
    Freeze cottage cheese in small scoops on a tray for an hour so they’re about the size of an ice cube, that way you can take a handful throw it in your blender with and a little liquid, i usually you’d heavy cream but I’ve used water too , add sweeteners and stir ins and change the flavor to your liking every day!
    There was a lot of trial and error with these recipes and I found these tips really helped.

    i kept buying the cottage cheese and eating it before i could make it into icream lol. So the ice cream is amazing and you can put a small spoonful of the cottage cheese on parchment paper or silicone on a cookie sheet and bake in the oven or microwave, can sprinke with seasonings, it makes really good chips, u can also do them in a frying pan as well ❤

      Ive done chips with shredded cheese and/or shredded parmesan, but I didn't think cottage cheese would work. do you have to blend it first? When my mom had cancer, we put her on the Budwig protocol and I would blend organic cottage cheese with cold pressed flax seed oil and add seasoning to make a veggie dip or hollandaise sauce. I wish I'd known about this ice dream (or the Keto diet back then in '06)

    Everyday in my hubbies lunch I mix half a cup of cottage cheese with half a cup of yogurt. Stir it well, then I add a cup of frozen blueberries. It freezes immediately as you are stirring it. I store it in the freezer until I am ready to pack his lunch. You can also eat it right away. He loves it and says it is soooo refreshing.

      Lol me too, never heard of it. I went to a girls lake house trip in early June and my sister had brought some for a treat. It was raspberry, looked delicious but I didn't care for it. It tasted too much like cottage cheese with a slight cottage cheese feel to it. Maybe it was the recipe she tried, it was her first time making it. I will just stick to Haagen Dazs or Blue Bell 🤣 since I don't follow Keto. If cottage chz ice cream tasted good and it being low cal, then I'd try others but I don't want to waste ingredients.

    Wes, I don’t know if you will see this, since I am so far behind the times, and maybe someone has already discovered and reported this, but, I made the chocolate version and put it in a popsicle mold. What resulted was the closest thing to a commercial fudgsicle that I have found. Usually when you freeze keto ice cream or juice it freezes rock hard, and you never get that texture that you get when you bite into a fudgesicle or a popsicle, for that matter-that icy, grainy, texture, whatever it is, that is so magical. This does that. A dream come true. LOL

    My mom took a how to get the most out of your food processor class in the 80s. She learned how to make ice cream with frozen fruit and heavy cream with the sweetener of choice. It’s so delicious, and my diabetic grandfather loved it. The heavy cream whipped in the food processor and made the mixture fluffy and more like ice cream. A mix of cottage cheese and heavy cream might be really good.

    Also works with ricotta cheese. Home made ricotta is especially thick and creamy. And Good Good brand low carb jams are a good replacement for fruit, and already sweetened. For strawberry add about 1 tsp of fresh lemon juice.

    Salted Caramel Latte - added 2 tsp. Powdered espresso, 1/3 cup brown allulose/monk fruit sweetener, 1 T. Vodka, 3/4 t. vanilla, 1/2 t caramel extract. Salt provided by the cheese. Holy cow! Made it tonight and it is delicious!

    I tried this when the keto twins made it. I make an individual serving with:
    1/2 c. cottage cheese
    1/2 c. Frozen berries
    1tsp sweetener of choice
    Splash of cream or half and half. Tastes like cheesecake ice cream!! Yummy " Frosty" consistency!😊😊😊💖💖💖 I see a coffee flavor in my future!!

      I make a version of this but with a chunk of cream cheese (haven't found any cottage cheese without a bunch of crap ingredients). I just eat it as soon as I'm done mixing it, no need to freeze. Quite yummy.
      Also adding a scoop of vanilla protein powder is tasty and a good way to get some extra protein

      @@nanchesca3950 Most brands of cream cheese that I've checked have gums/thickeners etc. added, so if you're avoiding unwanted additives make sure to check the ingredients on those too. That said, do you use just cream cheese or do you combine that with the cottage cheese?

    Just a sweetener hint. I make keto ice cream regularly, and I have found that allulose helps the ice cream to not freeze as hard. I normally use half erythritol and half allulose mostly to save cost ;)

    One tip to get rid of the savory flavor (at least when you go for something fruity), add a splash of OJ or a squeeze of lemon juice. Sourness neutralizes salt

    Gotta love that rogue strawberry of yours, Wes. He wasn't going down without a fight! 🍓
    Here's tip:
    I often forgo Vanilla Extract whenever I make anything that has Blueberries because I find that Lemon Extract really compliments that particular berry more-so. Try it!
    I also find that Blueberries, Strawberries, Cherries and Peaches are an excellent match if they're paired with Almond Extract.

    When I use cottage cheese for desserts, I use the chunky sort, and I discart the brine, as that's where most of the salt and some of the tartness is. How, you may ask; I pour the cheese into a sieve and let tapwater run through, turn the cheese a couple of times, carefully, of course. I just flip it, or use a rubber spatula.     I sweeten my keto ice cream with allulose powder sweetener but at the end before putting it in the freezer just add two tablespoons of liquid allulose and it will keep your ice cream creamy for days. I love your humor! Every video feels like someone that I would be friends with ❤

      thanks for mentioning liquid allulose. I bought some to make mason jar ice cream but didnt like the finished product. The powdered is SO expensive at $ 12.00 for 16 oz.

      Another way to keep it from freezing hard is to wrap the cottage cheese in cheesecloth and squeeze the liquid out of it before mixing in the other ingredients. It makes it creamier too.

    You can also cook cottage cheese in a sauce pan until it melts to a sauce. Add cheddar cheese powder (not the chemical stuff). Ladle over broccoli or use in a keto casserole base.

    Fun fact: Allulose will keep any keto ice cream from freezing into concrete. So will BochaSweet, but you should only use half the amount necessary, and use a different sweetener for the other half because it may not freeze enough, either. For example, recipe calls for 1 cup sugar, use 1/2 cup allulose, 1/2 cup erythritol.

      That's good to know! Thank you. I only use bocha sweet but I usually temper an egg yolk it seems to help keep my ice cream firm and creamy and if I don't use eggs I'll add agar agar because I can't tolerate most of the other sugars. But your explanation explains why I was having difficulties with my keto ice cream before adding in the egg yolk /agar agar. Thank you again.

      Interesting! Splenda makes a blend of stevia, allulose, and erythritol called Magic Baker. It tastes just like sugar to me, and it doesn't have anything else added to it.

      Photons, I JUST ordered a pack of the Splenda Magic Baking to test out. I was impressed with the ingredients, and honestly assumed from the brand name that it contained sucralose artificial sweetener, but it doesn’t! :-) Thanks for sharing that with us, too.

    Just a tip. I've heard a lot of people say it wasn't sweet enough or tasted salty or it tasted fine when they mixed it up, but they didn't like it when it was frozen. This probably means you need to add more sweetener. Because of the way our tastebuds work, things that are frozen taste less sweet. If you've ever had a spoonful of melted commercially prepared ice cream, you might have noticed that it tastes almost loathsomely sweet. That's because they sweeten it knowing that once the product is frozen, people will be able to taste less of the sugar. So when you mix it up you should add enough sweetener that the mixture tastes slightly too sweet. When it's frozen it'll be perfect.

    Just made 2 tubs in less than 30 mins, using stevia powder, one with cocoa powder, the other with pistachio and vanilla. The vanilla extract with 40% alcohol will help lower the freezing temp. Thanks very much!

    I’ve finally been enjoying ice cream. I prefer a blend of Cottage cheese, almond coconut milk, protein powder, vanilla, allulose, Tara gum and sometimes cocoa powder then freeze and next day in my Ninja Creami! Even my husband has given up Blue Bell ice cream for this delicious and healthy summer treat. I’m going to have to try berries! Thank you Wes!

    I make it all the time. LOVE IT! Especially when I changed to Good Culture. I found that the easiest way to freeze and eat is to make popsicles. That way you don't have to churn, or thaw before eating. I have these plastic molds, and I run it under hot water for a little bit to release it from the mold. Epic!!!

    I have tried using vodka when I used to make regular ice cream - it didn't do anything to keep it from freezing rock hard. I've heard that allulose keeps it softer, but with this recipe, I just freeze it in individual portions so I can just take one out about 15 minutes ahead, and it's ready.

      Use vegetable glycerine to keep it scoopable. 1t per pint. For the poster above, xanthan gum is a stabilizer but will not keep ice cream scoopable.

    I have been making this in different flavors for a while now. My freezer is full so I just leave it in the refrigerator and eat it like a mousse. First-lemon flavored with True Lemon and lemon extract. Made an edible cookie dough from a recipe by Keto Twins. I used 2 cups of the cottage cheese and 1 cup Fage yogurt (I use that for my gut) , 1/2 cup Allulose, 1 cup of lupine flour. and one scoop of vanilla whey protein powder. (I used Keto Chow) Then mixed Lily's choc chips in it.

    Thank you for stating how big your carton of cottage cheese is. I have seen a couple recipes for cottage cheese ice cream, but they just say "use a carton of cottage cheese". The difficulty is that my store sells cartons of cottage cheese in 4oz, 8oz, 16oz, and 32 oz sizes. Update: I got a 16oz pkg of cottage cheese; blended it with the cocoa powder, monk fruit, and vanilla similar to what quantities you used. I then blended in a heaping tablespoon of ChocZero Raspberry jam. I divided the mixture into four smaller containers and stirred them after 1 hour. The jam seems to keep the "ice cream" from turning into an icy brick and I love the taste of chocolate and raspberry. I think next time I'll try some keto orange marmalade. Thanks for the video.

    Something I have done with cottage cheese- is purée and season and use to replace mayo in some recipes or as a sandwich spread. I tried this after making a baked chicken recipe with avocado mayo and ended up with a greasy mess. The cottage cheese “mayo” was fantastic the second time around.

      excellent idea. I mix mayo with 1 Tbs. shredded parmesan, onion powder to taste and diced green onions and spread it on fish after it has cooked through. after spreading the mix on the fish place back in oven for just a few minutes to get the topping golden. I will try the cottage cheese mayo soon and maybe even as a topping on cooked chicken.

    Try stirring in a half-teaspoon per pint of vegetable glycerin to keep the ice cream soft. It works much better than vodka. Just don't use too much or it has a strange texture. Also, vegetable glycerin is a carb, but a half teaspoon isn't going to hurt anything.

    When I have made cottage cheese, chocolate mousse, I find the creamiest texture comes from the food processor like you used. The stick blender didn’t create that nice smooth texture for me. Thank you for the new recipe, I’m definitely going to try this.

    I thought a little salt taste won't bother me...well it did big time. I also hated the zanthum i added for consistency. SO I melted some added an egg, coconut oil, baking powder, lupini flour, swerve, coconut flour, put in a tarte pan and it makes the most delicious strawberry and blueberry cake ever! Absolutely love it.

    Thank you! When I made the chocolate version I also used Allulose but needed to add a bit more sweetness so I did use a touch of the Torani sugar free syrup. It’s was excellent! Mine had some tang to it. Some say it taste like cheesecake but mine tastes like frozen yogurt. Which is just fine by me. All good! 😊

    I did chocolate and added some espresso powder and used monk fruit. I swirled in some organic peanut butter. I don’t follow a keto diet but was looking for a healthier “ice cream”. It tasted good after I mixed it in the bleeder so can’t wait to have some after dinner tonight. Thanks!😊

    We tried this, made two flavors, a cinnamon and strawberry... I think once I'm done with BBBE and I get a Creami, I'll play around with this and incorporate KetoChow... I know there is something amazing waiting to be discovered!

      Oh, man! I LOVE cinnamon ice cream! Thing is, I have a Cuisinart ice cream maker with the built in compressor, so I would rather make real ice cream, but I could probably blend the cottage cheese stuff in the blender, then mix it in the ice cream maker to start freezing it.

      Me too! I have not used my Ninja Creami since last year. I also add 1/2 tsp (or three grams) of Tara Gum to my recipes to stop ice from forming and to make it extra cream. You could also use guar or xantham gum if preferred.

    Back in the 70s my mom would make Cheesecake with Cottage Cheese. It was the go to diet option back then as well. I didn't taste too bad either. I'm gonna try this ice cream lol

    I made cherry ice
    Dessert. The brand was too salty. I used 12oz. Frozen cherries and1/3 c. Splenda and vanilla. Sorry Wes, it's not great. I have a couple suggestions. Perhaps make something like Carmel pecan, where you want that extra salt. Salt free cottage cheese is sold in larger stores especially at Passover.

    Adding a tablespoon of grass fed beef gelatin might solve the solid freezing problem. It helps popsicles have a better texture. Just a thought. But idk.

    I did not like it frozen. I was actually going to throw it out and had it sitting on the counter. I gave it a taste before I was headed to the trash, but just chilled, it was delicious! I added a cookie crust in ramekins, my cottage cheese mouse, and topped with whipped cream. It turned into a really nice dessert!

      I did the same thing. It was headed for the trash when I decided to leave it on the countertop to see how it was. Not delicious, but certainly edible. I left it out for about 40 minutes to be able to spoon it out.

      The reason for this was probably not enough sweetener. When things are frozen, they taste less sweet. That's why if you've ever eaten melted commercial ice cream it probably tasted too sweet. They add more sugar, knowing that most people won't be able to taste it when frozen. If you tried this again, add sweetener until the mixture tastes a little too sweet at room temp. Then freeze.

    I'd use chocolate stevia drops in addition to the allulose for the chocolate.
    For the berry one, you CAN thaw the berries so you can chop them up so you don't get the single giant whole strawberry.

    I’m definitely going to have to try this. I just started making strawberry cheesecake parfait’s, which are absolutely delicious. I use the food processor for the cottage cheese, but I use the emulsifier tool rather than the blade. It whips it up beautifully, making it really light and fluffy, and it seems to double in volume.

    Ok…I’m going to try this recipe again now that I’ve seen your video. I made one with fresh blueberries and swerve with vanilla and touch of lemon juice cooked down in skillet. I thought it tasted okay-but even tho curds were undetectable, it still had that cottage cheese texture to me. Maybe I needed to process it longer as you did.

    NOW brand liquid stevia has some wonderful flavors, like lemon twist, dark chocolate, cinnamon vanilla, which I have used to make ice creams in the Ninja Creami. But I surely will try the cottage cheese like you have done here. It looks like a lot of fun for experimenting. Thanks for testing it all!

    I made chocolate peanut butter cottage cheese ice cream and strawberry they were both so good! I felt really good about eating it too!

    I just made some! Yumm. I was on keto for a year and a few months. lost weight and sickness, felt the best in my life. Went on a cruise and totally fell off! Weight gain and sickness back. Sigh 😔 So here we go again. It’s gotta be a way of life. I’m still hopeful. ☀️
    I made mine with cottage cheese, pineapple, strawberries, a lil frozen banana, vanilla extract and a lil allulose.. Wow! I didn’t even wait. I ate as a milkshake lol. Awesomeness! I got used to the twang of the cottage cheese taste. My new go to! Thank you.

    This is the first time I've seen this! Definitely doing to try it. Some keto maple syrup and walnuts would be good. Or stir in some peppermint extract and chopped up sugar-free chocolate chips. Yum!
