My husband is no keto fan (lol), but he said it tasted like whip cream to him, so he will eat it.😂 I may try the Snicker version next, but would love a butterfinger version. I tried Factor but found their meals were too high in carbs to stay in ketosis. Do you guys have tips or eat differently through the day and splurge on one of the meals, because 3 of their meals would be super high in carbs for me. Thanks! I’m new to your channel and happy to find you guys!
If you blend your frozen berries with the half cup of cottage cheese, stevia, and vanilla, the berries will freeze the ice cream as you blend, so no need to freeze them afterward. It's surprisingly good.

Yes FROZEN Blueberries or Cherries are fantastic for this...I use a coffee mug add frozen berries and top with either Half half or and high fat Milk or cottage cheese...Add sweetner if you need but either way it allows portion control
In order for the chocolate to not freeze as hard, so that you can taste it better in the ice cream, melt it with one teaspoon of oil per 2 oz of chocolate. Pour out a thin layer onto wax paper. After it sets break it up into "flakes". Fold it in as the last ingredient before freezing.
As a diabetic I've been making whipped cottage cheese as a sweet treat for a while now. Never thought to freeze it though. I usually will put a little pumpkin puree, pumpkin pie spice, vanilla, stevia and walnut in it. Now I want to freeze it

Maybe this: 1/2 c cottage cheese, 1 heaping Tbsp cream cheese, 1 Tbsp sour cream, 1/2 tsp vanilla & sweeten to taste..approx 2 rounded Tbsps. Add all to blender & pulse. Add froz berries if you wish. Or flavoring. Whatever. Blend well. Turn into a bowl & freeze for no longer than 2 hours. You won't be able to spoon it out if it gets too frozen. In which case you can nuke it for about 12-15 seconds. 😋

I experimented with this tonight! In the cottage cheese I used allulose, vanilla, strawberry essence, and a touch of cream, since the cottage cheese was large curd (thus a bit 'dry'). I made a small batch and put it into my Dash Mini Ice Cream maker and it was done in ten minutes. It stopped the dasher, it was so thick and creamy, so if you try this, don't walk away from the ice cream maker! Tasted like strawberry cheesecake! Hubs loved it.
I’ve made it! I used 5oz frozen fresh strawberries, 113g 2% or 4% cottage cheese, 2 stevia pkts, a splash of unsweetened almond milk, and 1 tbs SF jello-o cheesecake powder. Because I used frozen strawberries, the consistency came out JUST like ice cream! 😳😄 It tasted absolutely AMAZING!! I topped it w 7g raw pecan halves. A. M. A. Z. I. N. G.! Macros are WAY healthier than regular ice cream.

Thank you for that. I tried it with eryrithritol (spelling ?) as that’s all I had on hand, and my ice cream was very hard- had to melt it in the microwave to eat it. But it was very tasty 😋
i make a keto ice cream thats just allulose, acacia fiber, stevia, vanilla (with alcohol), optional flavoring like nuts or berries, then water. between all of those ingredients theres no way any crystals are going to form lol. mix it hard with the immersion blender, seal it up and its ready to eat anytime
I think if you just melt the chocolate and fold it in as a swirl it will just harden back up. I think though, if you made a ganache by heating whipping cream and pouring it over the chocolate, letting it melt and beating until smooth, it would act more like a fudge ribbon swirl. I tried several flavors and the next one I'm going to try is to make lemon curd and blend that in with a swirl of white chocolate ganache.
I gotta say, the cottage cheese, sweetener and just add cocoa powder until it is super thick tastes amazing. You dont even need to freeze it. It is so good
@creinicke1000 Cant say for sure. I usually preblend and sweeten a few tubs and use it as a base to make flavoured versions as I need depending on my mood. It should only take a few seconds in a blender
Using an immersion blender is such a big brain move! I tried this with my Ninja blender and it was a lot of work. I had to stop and scrape the sides half a dozen times and felt it was more work than it was worth, especially after factoring in cleanup.
I have made this. I found that my favorite way to make it is to use frozen fruit. I add 1/2 or 1 cup of frozen strawberries, 1 tablespoon of monkfruit sweetner. I pulse until strawberries are chopped up. Then add 1/2 or 1 cup of cottage cheese and 1 or 2 tablespoons of heavy cream. Pulse until smooth. Has a soft serve ice cream constancy without waiting 3 hours. I personally love this.
You girls are heaven sent! I never thought of turning cottage cheese into a "treat". After watching this I blended the cottage cheese and added sugar free lemon jello. Then froze. The 2nd batch I put in sugar free lime jello. Both were sooo good. Tonight I just blended the cottage cheese and added lemon/lime zest packet plus stevia and it was great and cleaner ingredients. Only a few spoonfuls and I'm satisfied. Thank you so much!
I was one step away from ice cream all these years. I've been mashing and whipping the cottage cheese and pureeing fruit to mix into it for a while now (tastes just like fruity yogurt from the store, but with less ingredients). Now that I have a food processor I can freeze the fruit and grind it all up together to make ice cream (or more like frozen yogurt).

If you want to make a keto friendly swirl, melt the chips and add a little bit of heavy whipping cream. Basically make a ganache and gently stir it in. Works for white or chocolate chips

@signalfire6691 Yes! Add a splash of vanilla, and a pinch of salt and it really emphasizes the chocolate flavour, I especially like it with dark chocolate as it balances the sweetness of the dessert and if you're not into Coconut flavour, you really don't taste it!

I love cottage cheese n fruit. But most fruits I used to use are too carby…pineapple, peaches, pears. I always have frozen blueberries in the freezer so I’ve used those now that I’m low carb. But never thought to grind it all up n freeze it! I miss ice cream so am excited to try this!

I would have left out the lemon juice, too tart, and maybe added a dash of full fat whipping cream for extra creaminess. And maybe made a thick chocolate ganache layer to pour over the peanut butter one instead of the chips. But they both look yummy, I'm looking forward to trying them. 😋 I think I will try a cherry vanilla almond one with frozen cherries, vanilla and almond extract and slivered almonds for crunch. I'm so craving these now!
I was thinking of blending it with the Skinny Syrups. I have one that is a chocolate coconut macaroon and I thought I would also add a little coconut flavoring plus some unsweetened coconut. Hoping it tastes like an almond joy.
Little bit of Folgers Gourmet dark coffee. melt some of that chocolate and with that cottage cheese. Like a frozen Frozen Starbuck mocha ice cream. Yum. Don't forget the Stevia. Pretty easy
I like your idea of using the organic cottage cheese... As I do Carnivore, I would not add the sweet stuff... but cottage cheese with vanilla and maybe egg yolks might be good for ice cream...

When chocolate is frozen, a lot of times it does lose its flavor. When it’s in a ribbon, it has more flavor! I love thar you’ve both lost weight and are keeping it off! The trick is to never go back to the foods you ate before or the reasons you ate what you did before!

While this comment isn’t about Ice cream, it IS about cottage cheese. Any recipe (like stuffed chicken) that calls for certain cheese like cream cheese or ricotta can easily be substituted with cottage cheese. I discovered this last night when I made my Ruth’s Chris stuffed chicken but was out of cream cheese. So I blended the same amount of cottage cheese and used that in place. It worked perfectly! 😃 good to know, because we don’t always want to rush out to the store if we can figure it out ourselves 😊

I greatly prefer allulose for sweetening ice cream, as it depresses the freezing point so the frozen result is actually scoopable, same as sugar. I recently tried adding tara gum, which made it much smoother, effectively removing all iciness. 👍

Whenever I make sugar-free ice cream, I sweeten it with Vegetable Glycerin. It's a pretty common ingredient, found in any WalMart or similar store (usually in the same aisle as rubbing alcohol & band-aids). It also has somewhat of an anti-freeze effect so it helps make a smooth texture, sort of. I find it to be just barely not sweet enough, which is perfect overall.
@@ladonnademarce5029 Well, I make big batches at a time so for every half gallon of heavy whipping cream, I use 1/2 cup of glycerin. Not sure what that works out to be in metric.

It would certainly maintain its integrity with the blended cottage cheese! I'm late to the party but I just started on my lower carb lifestyle change and couldn't believe there was a substitute for ice cream! I made a chocolate version with a splash of coffee and also a mango lassi version which turned out amazing! Mango puree from frozen mango, a touch of ground cardamom and the tang from the cottage cheese was a hit. I also chopped up a few cubes of the frozen mango and stirred it in before freezing. Used xylitol for the sweetener and yeah it definitely got hard in the freezer but leaving it out on the counter for a bit before scooping helped.

Thanks for sharing this idea! I'm not adverse at all to cottage cheese. And how easy could it get (if I only had that immersion blender 😀which I've wanted to try anyway). What I'm thinking are my favorite Baskin Robbins flavors - jamocha almond fudge - which has chocolate covered roasted almonds and coffee flavor. (Hhhmmm....now I'm thinking of that whipped instant coffee being mixed in). Also what about mint chocolate chip! Lots of possibilities, but I would love the cheesecake flavor.
Go get the immersion blender. I use it several times a week. It make throwing together soup a snap. Yesterday day I made chili and only tomatoes I had were diced. I needed more of a sauce because I was doing it in instantpot. In about 3 seconds I had a can of sauce. It also works well to puree some beans to thicken soup, use it to get rid of lumps and puree roast veggies in gravies. I really use it for so many things. I encourage you to get one or add it to your Christmas Wish List.

OMG. This is just the thing for me! I weaned myself from the commercial keto frozen desserts because they triggered my cravings for actual ice cream. I’m going to give this a try. The only cottage cheese by that brand at our stores is low-fat, so I’m going to try it with a higher fat cottage cheese. But I’m really looking forward to the results.
I found full-fat c/ch at Kroger, much to my shock. Kroger has gotten very keto friendly since Rona.... Not the brand they used, but I'm trying the one I currently have way too much of in my fridge because apparently I have ADHD....

I've been carnivore/ketovore for seven months. Everything tastes so sweet now. The fresh strawberries I got were so sweet by themselves, I didnt need to add sweetener. It's funny that even a yellow bell pepper we had the other day tasted like candy, lol.
Greetings from Canada. Thank you for sharing. I just finished making my very first batch of what I call "nice cream". First, I measured 15 fresh cherries, 1 ripe banana, 1 TB each of lemon juice and Stevia, 1 teaspoon of vanilla and whizzed these together in my Nutri-bullet. Next, I whizzed 1-1/2 cups of cottage cheese into the mixture and taste-tested it. It was very sweet, so I added the final 1/2 cup of cottage cheese. I reused the cottage cheese container and half of another container to store the nice cream, and it's now in my freezer for the next few hours. I'll be experimenting with the addition of various nuts, seeds, and bits of whole fruit in future batches.
Last summer I "accidentally" discovered the same thing with spreadle goat cheese ! With stevia and honey extract, it sounds bizarre but it's delicious if you like the taste of goat cheese. I will definitely try with cottage cheese this year !
Ice cream is my most MISSED desserts. I have never been able to eat cottage cheese because of the curds. I call them slick knots. 😂🤣😂. Love the cottage cheese ice cream! The only way to get rid of the chunks is the emersion blender because I tried other methods and they didn't work. I do find that mine freeze very hard and seem to be full of crystals so I have decided I like mousse better and freeze in tiny cups, then remove them from the freezer to the frig for a day. Thanks again for the recipe. I am a major ice cream lover and find the ones for sale are outrageously priced. I also use frozen strawberries softened and sweetened in it. Excellent
I wasn’t a fan of the viral cottage cheese ice cream craze. I tried it two ways and used full fat Too Good brand cottage cheese. The smell and taste made me gag. IMHO not as good as ice cream made the traditional way. To each his own.
I made strawberry ice cream with greek yogurt the other day, it was delicious! Used strawberry flavored protein powder, liquid egg whites and frozen strawberries. I added a sweetener called Swerve (allulose) that does not have sugar alcohols and measures like sugar. I also added a tiny amount of xantham gum, to keep it from becoming a solid ice block. I bought enough unflavored greek yogurt to make 2 and a half batches. But I was torn at the time deciding between the yogurt and cottage cheese. I will definitely try cottage cheese next time.

I’ve been making the best keto ice cream by Indian carnivore. I use my small dash ice cream maker. I mix heavy cream, 2 egg yolks, and sour cream. Throw strawberries on top- delish!!!!
I've been using cottage cheese, blended with either savory seasoning for lasagna or sweetened to be used in danishes. Better and cheaper than ricotta or cream cheese.

growing up summer time cool salad was gelatin mixed in cottage cheese- just folded in. Hi Ladies. I found a recipe for ice cream with only heavy cream and, sweetener, flavoring . The secret ingredient was 1 or 2 teaspoons alcohol. She used rum I used vodka. Just a small amount like only one teapoon for two cups cream. Suppose to stop it from getting rock hard-it worked. I did stir again after it froze . It has some ice crystals but they went away when I stirred it. Also I heated my cream on the stove (not up to boiling)to dissolve the allulose. I also added a yoke after tempering . I experimented with this tonight! In the cottage cheese I used allulose, vanilla, strawberry essence, and a touch of cream, since the cottage cheese was large curd (thus a bit 'dry'). I made a small batch and put it into my Dash Mini Ice Cream maker and it was done in ten minutes. It stopped the dasher, it was so thick and creamy, so if you try this, don't walk away from the ice cream maker! Tasted like strawberry cheesecake! Hubs loved it.
I actually love cottage cheese and need to try this. I'm thinking some sort of mocha ice cream with instant espresso, cocoa and stevia.

I do heavy whipping cream and cocoa, vanilla flavor and stevia. Whip it up and freeze. Also you can add cream cheese if you want it a bit heavier

I’ve made it! I used 5oz frozen fresh strawberries, 113g 2% or 4% cottage cheese, 2 stevia pkts, a splash of unsweetened almond milk, and 1 tbs SF jello-o cheesecake powder.
Because I used frozen strawberries, the consistency came out JUST like ice cream! 😳😄
It tasted absolutely AMAZING!!
I topped it w 7g raw pecan halves. A. M. A. Z. I. N. G.! Macros are WAY healthier than regular ice cream.

FYI If you're making ice cream allulose is the ONLY sweetner that won't crystalize when frozen and the ice cream stays softer.

i make a keto ice cream thats just allulose, acacia fiber, stevia, vanilla (with alcohol), optional flavoring like nuts or berries, then water. between all of those ingredients theres no way any crystals are going to form lol. mix it hard with the immersion blender, seal it up and its ready to eat anytime
I used Boca Sweet insteaad of Allulose and it worked just like Allulose!

I think if you just melt the chocolate and fold it in as a swirl it will just harden back up. I think though, if you made a ganache by heating whipping cream and pouring it over the chocolate, letting it melt and beating until smooth, it would act more like a fudge ribbon swirl. I tried several flavors and the next one I'm going to try is to make lemon curd and blend that in with a swirl of white chocolate ganache.
I'm a big fan of the peanut butter powder and a few drops of English Toffee extract really kicks the flavor up a notch!
I gotta say, the cottage cheese, sweetener and just add cocoa powder until it is super thick tastes amazing. You dont even need to freeze it. It is so good
What about ricotta cheese instead of cottage cheese. So the cottage cheese doesn't have to go thru the long grinding to make Smooth?
@creinicke1000 Cant say for sure. I usually preblend and sweeten a few tubs and use it as a base to make flavoured versions as I need depending on my mood. It should only take a few seconds in a blender
Using an immersion blender is such a big brain move! I tried this with my Ninja blender and it was a lot of work. I had to stop and scrape the sides half a dozen times and felt it was more work than it was worth, especially after factoring in cleanup.

I have made this. I found that my favorite way to make it is to use frozen fruit. I add 1/2 or 1 cup of frozen strawberries, 1 tablespoon of monkfruit sweetner. I pulse until strawberries are chopped up. Then add 1/2 or 1 cup of cottage cheese and 1 or 2 tablespoons of heavy cream. Pulse until smooth. Has a soft serve ice cream constancy without waiting 3 hours. I personally love this.

this I blended the cottage cheese and added sugar free lemon jello. Then froze. The 2nd
batch I put in sugar free lime jello. Both were sooo good. Tonight I just blended the cottage cheese
and added lemon/lime zest packet plus stevia and it was great and cleaner ingredients. Only

I was one step away from ice cream all these years. I've been mashing and whipping the cottage cheese and pureeing fruit to mix into it for a while now (tastes just like fruity yogurt from the store, but with less ingredients). Now that I have a food processor I can freeze the fruit and grind it all up together to make ice cream (or more like frozen yogurt).

If you want to make a keto friendly swirl, melt the chips and add a little bit of heavy whipping cream. Basically make a ganache and gently stir it in. Works for white or chocolate chips

@signalfire6691 Yes! Add a splash of vanilla, and a pinch of salt and it really emphasizes the chocolate flavour, I especially like it with dark chocolate as it balances the sweetness of the dessert and if you're not into Coconut flavour, you really don't taste it!

I love cottage cheese n fruit. But most fruits I used to use are too carby…pineapple, peaches, pears. I always have frozen blueberries in the freezer so I’ve used those now that I’m low carb. But never thought to grind it all up n freeze it! I miss ice cream so am excited to try this!

I would have left out the lemon juice, too tart, and maybe added a dash of full fat whipping cream for extra creaminess. And maybe made a thick chocolate ganache layer to pour over the peanut butter one instead of the chips. But they both look yummy, I'm looking forward to trying them. 😋 I think I will try a cherry vanilla almond one with frozen cherries, vanilla and almond extract and slivered almonds for crunch. I'm so craving these now!

Little bit of Folgers Gourmet dark coffee. melt some of that chocolate and with that cottage cheese. Like a frozen Frozen Starbuck mocha ice cream. Yum. Don't forget the Stevia. Pretty easy
I like your idea of using the organic cottage cheese... As I do Carnivore, I would not add the sweet stuff... but cottage cheese with vanilla and maybe egg yolks might be good for ice cream...

When chocolate is frozen, a lot of times it does lose its flavor. When it’s in a ribbon, it has more flavor! I love thar you’ve both lost weight and are keeping it off! The trick is to never go back to the foods you ate before or the reasons you ate what you did before!

Chocolate coat the nuts in both recipes. That should do the trick. Personally I prefer toasted or roasted nuts.
While this comment isn’t about Ice cream, it IS about cottage cheese. Any recipe (like stuffed chicken) that calls for certain cheese like cream cheese or ricotta can easily be substituted with cottage cheese. I discovered this last night when I made my Ruth’s Chris stuffed chicken but was out of cream cheese. So I blended the same amount of cottage cheese and used that in place. It worked perfectly! 😃 good to know, because we don’t always want to rush out to the store if we can figure it out ourselves 😊

I greatly prefer allulose for sweetening ice cream, as it depresses the freezing point so the frozen result is actually scoopable, same as sugar. I recently tried adding tara gum, which made it much smoother, effectively removing all iciness. 👍

Whenever I make sugar-free ice cream, I sweeten it with Vegetable Glycerin. It's a pretty common ingredient, found in any WalMart or similar store (usually in the same aisle as rubbing alcohol & band-aids). It also has somewhat of an anti-freeze effect so it helps make a smooth texture, sort of. I find it to be just barely not sweet enough, which is perfect overall.
That’s a great tip! It does get hard if you leave it in the freezer, that might help it stay soft, or I’ve heard vodka can help too lol
How much glycerin do you add?
@@ladonnademarce5029 Well, I make big batches at a time so for every half gallon of heavy whipping cream, I use 1/2 cup of glycerin. Not sure what that works out to be in metric.

I was sitting here reading the comments, thinking the very same thing. ChocZero Cocoa Hazelnut Spread would be FABULOUS swirled in! It would certainly maintain its integrity with the blended cottage cheese! Oh, and maybe even cut ChocZero marshmallows into smaller pieces and add to it along with peanuts or pecans for a Rocky Road. BRILLIANT!

I'm late to the party but I just started on my lower carb lifestyle change and couldn't believe there was a substitute for ice cream! I made a chocolate version with a splash of coffee and also a mango lassi version which turned out amazing! Mango puree from frozen mango, a touch of ground cardamom and the tang from the cottage cheese was a hit. I also chopped up a few cubes of the frozen mango and stirred it in before freezing. Used xylitol for the sweetener and yeah it definitely got hard in the freezer but leaving it out on the counter for a bit before scooping helped.
Yumm....cannot wait to try that! I will probably start with the snickers version because my husband loves chocolate and peanut butter. Thank you!

Thanks for sharing this idea! I'm not adverse at all to cottage cheese. And how easy could it get (if I only had that immersion blender 😀which I've wanted to try anyway). What I'm thinking are my favorite Baskin Robbins flavors - jamocha almond fudge - which has chocolate covered roasted almonds and coffee flavor. (Hhhmmm....now I'm thinking of that whipped instant coffee being mixed in). Also what about mint chocolate chip! Lots of possibilities, but I would love the cheesecake flavor.
Go get the immersion blender. I use it several times a week. It make throwing together soup a snap. Yesterday day I made chili and only tomatoes I had were diced. I needed more of a sauce because I was doing it in instantpot. In about 3 seconds I had a can of sauce. It also works well to puree some beans to thicken soup, use it to get rid of lumps and puree roast veggies in gravies. I really use it for so many things. I encourage you to get one or add it to your Christmas Wish List.

OMG. This is just the thing for me! I weaned myself from the commercial keto frozen desserts because they triggered my cravings for actual ice cream. I’m going to give this a try. The only cottage cheese by that brand at our stores is low-fat, so I’m going to try it with a higher fat cottage cheese. But I’m really looking forward to the results.

I've been carnivore/ketovore for seven months. Everything tastes so sweet now. The fresh strawberries I got were so sweet by themselves, I didnt need to add sweetener. It's funny that even a yellow bell pepper we had the other day tasted like candy, lol.

Greetings from Canada. Thank you for sharing. I just finished making my very first batch of what I call "nice cream". First, I measured 15 fresh cherries, 1 ripe banana, 1 TB each of lemon juice and Stevia, 1 teaspoon of vanilla and whizzed these together in my Nutri-bullet. Next, I whizzed 1-1/2 cups of cottage cheese into the mixture and taste-tested it. It was very sweet, so I added the final 1/2 cup of cottage cheese. I reused the cottage cheese container and half of another container to store the nice cream, and it's now in my freezer for the next few hours. I'll be experimenting with the addition of various nuts, seeds, and bits of whole fruit in future batches.
Last summer I "accidentally" discovered the same thing with spreadle goat cheese ! With stevia and honey extract, it sounds bizarre but it's delicious if you like the taste of goat cheese. I will definitely try with cottage cheese this year !

Love the cottage cheese ice cream! The only way to get rid of the chunks is the emersion blender because I tried other methods and they didn't work. I do find that mine freeze very hard and seem to be full of crystals so I have decided I like mousse better and freeze in tiny cups, then remove them from the freezer to the frig for a day. Thanks again for the recipe. I am a major ice cream lover and find the ones for sale are outrageously priced. I also use frozen strawberries softened and sweetened in it. Excellent

I wasn’t a fan of the viral cottage cheese ice cream craze. I tried it two ways and used full fat Too Good brand cottage cheese. The smell and taste made me gag. IMHO not as good as ice cream made the traditional way. To each his own.

I made strawberry ice cream with greek yogurt the other day, it was delicious! Used strawberry flavored protein powder, liquid egg whites and frozen strawberries. I added a sweetener called Swerve (allulose) that does not have sugar alcohols and measures like sugar. I also added a tiny amount of xantham gum, to keep it from becoming a solid ice block. I bought enough unflavored greek yogurt to make 2 and a half batches. But I was torn at the time deciding between the yogurt and cottage cheese. I will definitely try cottage cheese next time.
Please let me know what the benefit is between the two.

I’ve been making the best keto ice cream by Indian carnivore. I use my small dash ice cream maker. I mix heavy cream, 2 egg yolks, and sour cream. Throw strawberries on top- delish!!!!

growing up summer time cool salad was gelatin mixed in cottage cheese- just folded in. Hi Ladies. I found a recipe for ice cream with only heavy cream and, sweetener, flavoring . The secret ingredient was 1 or 2 teaspoons alcohol. She used rum I used vodka. Just a small amount like only one teapoon for two cups cream. Suppose to stop it from getting rock hard-it worked.
I did stir again after it froze . It has some ice crystals but they went away when I stirred it.
Also I heated my cream on the stove (not up to boiling)to dissolve the allulose. I also added a yoke after tempering . I hope you two can find the recipe and will try it on your channel. This ones a easy win for me. Hope you like it. Yall are awesome! -DW
Alchohol must act like antifreeze in a car radiator. Dark Rum sounds great.
