I made the flatbread your way but poured a small amount in 2 parchment lined metal muffin top sections and it worked great. I used the rest of the batter in a silicone rectangular pan I have for keto egg pasta which kept it from getting burnt edges. That seems to be the trick, filling a mold so it doesn't get too thin. Your way is great for tacos, sandwiches or I guess you could cut them into strips for noodles/pasta. I'm trying some for lasagna tomorrow. Just a comment on the avocado oil spray. From a recommendation from another RUclipsr I bought an oil sprayer/mister from Amazon (there are many and the one I bought from Misto seems to not exist anymore), and refill from the avocado oil I buy from Costco. The original reason was because the propellants use supposedly hurt non-stick surfaces. I have had it 3 or 4 years now and I am sure I have saved money and don't have to store spares.

This is a great video!! I noticed you were somewhat at a loss of what to call your buns. Without knowing it, you have actually made "Vietnamese Bao Buns"
Basically, you could call this video, "How To Make Keto Bao Buns"
    Just my two cents...😊

I wasn't ever really interested in flatbread. I wouldn't know what to do with it even if it tasted amazing. But THIS looks much more useful! I already have the whoopie pie pan which I use with an egg white bread, but that recipe is a super pain with lots of ingredients and you have to whip egg whites forever, plus it's still a bit styrofoamy, but fulfilled a need. Two ingredients and a simple few seconds in a food processor really appeals to me. I am going to try this. Thank you for the great idea!

Steve, I have been watching your channel for several years now. I am now starting my own channel sharing my personal journey. I am going to reference this video in my video. Thank you for your hard work in your test kitchen. I bought the silicone molds so I hope my cottage cheese flatbread comes out as well as yours did. Thank you for the idea!

My flatbread also cracked. Maybe it was "overdone" because it was super crispy. Still lovely to eat. Just not rollable😂 i will try it again though.

Came across your video. Just try this except used ricotta instead of cottage cheese. It was what I had. It did not come out as firm or dry as yours appears to. I think the ricotta is maybe wetter or has more liquid? Good flavor and I will try it when I get some Cottage cheese. Thanks for doing the video and a lovely explanation.

My issue with the Dash (or any waffle maker) on recipes like this is that the Dash cooks kind of hot, and there is A LOT of temperature variation as the heating element cycles on and off (I've tested with an IR thermometer gun). This can result in an over-done exterior, which in my experience, amplifies the eggy taste.
Plus, one of the advantages of this approach is that I can do them in bulk faster and with less oversight than making them in a Dash Mini.

Point taken regarding Dash cookers. I have at least five different ones/types. They're primitive.

I like how these turned out, but my silicone pans seem to leave a slight chemical aftertaste. Does anyone have a specific brand that doesn't leave a strange flavor? I have the same problem with the silicone sheets.

I've had good luck with the original recipe unless it's tomorrow, then it cracks for me too even if I warm it. But what a good idea making the little ones. I like that idea much better than making wraps. Very cool. Hopefully they won't crack when cooled. Thanks for your ongoing content.

Spray oil is such a waste. You get so little for your money, and you are breathing in the propellant gasses, and releasing them into the air. I keep my daily-use oils (Avocado, Olive, and Coconut*) in squeezy bottles, and you can coat a pan with your fingers or a silicone brush that costs $1.25 at Dollar Tree.
_*You can't keep coconut oil in a squeezy bottle if it's hard at room temperature. I can only do it during the summer here, OR, you can cut it with avocado oil and it will stay liquid all year round._

dont let any smirks bother you, there are more creepy idiots out there who thrive on putting others down, it makes them feel better about their worthless selves. I have tried following many recipes and failed but the old saying is if at first you dont succeed try try again and who cares what it looks like especially if you eat it in less time than it took you to make it, after all its not like you are making it for a group of family or friends, and even if you do you could all have something to joke about before you eat it

I did notice that one person highly recommended using the large curd cottage cheese, which I couldn’t find. And yet another person whose one cup and one large egg turned into a really thick batter used a magic bullet. But I particularly like having the individual “buns“ what a great idea! Thank you! Thanks for the link to the bun formers.
