I've had a few people tell me that their chips didn't flatten out. I've asked them what brand of cottage cheese they used and to list the ingredients, but no one has replied. If this recipe doesn't work for you, please reply to this comment with the brand of cottage cheese you used, whether it was full fat, and list the ingredients. It shouldn’t take long to narrow down the culprit. Some of the brands that don't work are: Member's Mark, Good Culture, Great Value, Prairie Farms, Knudson, and Kroeger. What all of these brands have in common is that they use skim or fat free milk. My hypothesis is that these brands then use more thickening agent (usually guar gum) to offset the thinner milk.
My chips did not flatten. I'm using 4% milkfat, large curd. After reading this comment I checked the ingredients and was a bit surprised: cultured nonfat milk, cream, whey, salt, maltodextrin, guar gum, citric acid, carrageenan, mono and diglycerides, locust bean gum, polysorbate 80, potassium sorbate, flavors, enzyme.
For sour cream and cottage cheese I use Daisy, their sour cream is just cultured cream and their cottage cheese is cultured skim milk, cream, and salt. I've found most other brands to use some sort of extender/filler product (guar gum, locust bean gum, carageenan, etc,). There are probably other good brands out there, you just need to check the ingredients. Fun Facts: if you were a kid in the 80s you'll know guar gum as the key ingredient of toy store slime E.G. Ghostbusters slime, Masters of the Universe Slime Pit, etc.
Mine spread out a bit, but didn't flatten. I used Daisy 4% milkfat. Ingredients: cultured skim milk, cream, salt. They were very crisp, but not as flat as yours.

This was great, Steve. I've also been inspired in making these by the wonderful Keto Twins. My method is to mix a 32 oz container of cottage cheese with 1 tsp each of garlic powder, onion powder and black pepper. I use however much I need and put the rest of the seasoned mixture back in the cottage cheese container for next time. I can't wait to try your baked method! Try this seasoning mixture, it's really good.
PS: I make mine by spreading out a thin layer of the seasoned cottage cheese mentioned above onto an air fryer parchment insert, slide it onto a plate and microwave it for 8.5 to 9 minutes. Let it cool and break it apart into 'rustic' pieces. I'm excited to use your method and bake some perfectly round chips. Thanks again!

I just ran downstairs to whip up some cottage cheese chips after getting inspired by this vid. I'm impatient, so I just used the microwave method. I miraculously had all theses things: the cottage cheese, the ranch powder, the pork panko crumbs, and some pecan flour. No measuring, I put in just a sprinkle of this and that. Stirred it up and put on Silpat rounds . Tasted great, but not as beautiful as Steve's oven baked chips but, hey, they were done by the time the coffee was ready. Thank you Steve for sharing your experiments with us.
I sure would have liked to see a little bit of the dehydrator experiment! I have a big one that I’m using more. I tried your chip experiment in it with pepperoni. When I left thin pepperoni in at 158 F for about 6 hours, I got a delightful snack. It seems like a weird universe where we spend our days making crackers out of pepperoni and cottage cheese on YT, but I sure do appreciate you!
I 've made the chips 3 times now, all using Daisy brand full fat. I just used a Macaroon silicone mat & spread them out to the large circle with a spatula. They turned out great, thin & crisp! Thank you!

I suspect it's because we are all more into content creation than administrative tasks. If an angel investor and someone who could handle the business aspects (accounting, payroll, publishing, etc.) would come along, I'd totally be for that. I’ve never been able to make these in my microwave. Steve’s 30-second tortillas don’t come out evenly either so I’m pretty sure the problem is my microwave. So glad to see I can try them in the oven! Thanks Steve for all your efforts 😊
Variation ideas: SAVORY: Add chopped kalamata olives & a bit of rosemary. SWEET cookies: Add non-calorie sweetener of choice & vanilla or almond extract. Drizzle or dip one end in melted keto chocolate, or adhere 2 cookies with melted chocolate (like Milano cookies). 😋
These also remind me of the Swedish cookies that you put in your palm and tap to break, hopefully into 3 parts (as a kid I think that was a good luck sign :-) ). They were sweet and a bit spicy. I think ginger in these and a little sweetener might make a admirable substitute! Holidays are a comin'...

You've improved the process and I just tried it with Pork King Good's ranch pork rinds and a tablespoon of their ranch seasoning and they are delicious. Please keep on, I'm going to try it their smoked jalapeño and cheddar seasoning.
ooohhh I had choczero hazelnut spread..... the keto Chow chip crunched up with chopped hazelnut mixed with the spread into balls, cooled and dipped into a melted chocolate ....may be my keto Ferrero Roche for Christmas treats....
@@exchangestudent2..... I could not get the Keto Chow mix, opted on Catalina Crunch honey grahams chopped. So without a binder, they did not set enough to dip. Took some keto marshmallows and melted it and added to the mix and shaped into balls and cooled it again and they set really well.... they tasted so good that I did not bother with a dip in chocolate. (Added finely chopped pecans already had and wanted to use them up, the little chocolate protein crunchies, and the keto hazelnut spread.)
Thanks for the experimenting Steve. Other videos that I've seen with cottage cheese has inconsistent chips. I like how your version takes care of that problem. It actually doesn't take longer when it comes to time you spend working on it... it's much less... and you can get more at one time. I got some One On One flavors, so this should be a good way to use some of them. I've got a potato flavoring in my collection, so that should make a good potato chip version that's much healthier.

Use Great Value 4% Milk fat Large Curd Cottage Cheese foe all the chips I make. Into food processor with Garlic Powder, Onion Powder, Basil, Oregano, Pork Rinds(any flavor), Potato Flakes(1/4 cup is not very high in carbs) or any combination or any thing else I can think of. Must adjust microwave time for each type. Put 9 in circle on parchment for about 4 min. Potato goes about 4:30 and comes out thicker. Always watch and pull them just as they start to turn brown. Great flavor and great crunch. Consecutive batches get done faster because plate in microwave gets hot.Use each parchment sheet at least 4 times by hitting gaps with second batch then do the same on reverse side. I make a full batch in 30 minutes. Not as beautiful as your but mine only last one day. 3 mouths around here. LOL Thanks for all you do.
Love the keto twins. I’m still waiting for a chip that can replace potato chips. If you have one, please let me know. I have some salt and vinegar seasoning just waiting for a good faux potato chip. Have I missed one, I don’t always get online, so it’s easy to miss things. They tried adding instant potato and so did I but I wasn’t taken with the result. Potato chips have always been my addiction, and oh how I miss them. About once every three months I give in and buy a bag and devour the bag. Doesn’t fulfill the need, but it helps, with everything but the guilt.

Thanks so much. Mine never turned out well in the microwave or the air fryer or the toaster oven. I’m a person who needs crunchy food everyday. Sooooooooo. I will give this a try even though I decided cottage cheese chips were not for me and swore I’d never make them again. (Also. I don’t think this is necessarily more time since I had to stand and watch for timing before and only had 2-4 chips at a time. Lots of wasted time babysitting the chips!). I have left over cottage cheese so in the oven it’ll go. (I love watching Keto Twins as well).
You and your wife are so cute together! I have made these with the mashed potato extract and with the very small amount of potato flakes , like the twins did , and it was so good. Didn’t feel like I was missing potato chips at all. I am going to try next adding the ranch seasoning from flavor god and the ranch porking good crumbs. I am wondering if besides using the corn extract flavoring if grinding up some baby corn in it will help with a corn chip taste. Thank you for your experiments with the recipes and reviews. Whenever sliced mushrooms are marked down for quick sale, I used to buy them and rush to make somethig before they turned slimy. Now I just buy as many as I can and pop each container onto a tray in the dehydrator. I can either add the dry mushrooms to a soup or blitz them for Umami powder! I was coming to suggest drying the baby corn but you beat me. I'm glad to see great ideas crossing other great ideas.
@@robinq5511 A 1/2-cup serving of baby corn contains just 5 grams of carbs with 3 grams of fiber for a net of 2 g net carbs. I doubt you will get much better numbers, that will make it worth the effort, but just for ideas, how would you ferment the baby corn? It makes me think of theancient process of using lime on corn, I'm not sure what that does but it was important in history for getitng better nutrition out of mature kernals.

Good Culture has cottage cheese at 6 grams of carbs per cup. Try adding powdered parmesan cheese, perhaps 2 T. per cup of cottage cheese, and salting the batter. The parm makes them taste more like a potato chip. I really like the idea of adding crushed barbecue pork rinds to the cottage cheese chips. Thanks for that idea. If you have not tried making cheese crackers with shredded parmesan cheese, they are freaking awesome too. It would be nice to offer my guests your chips in barbeque and the parmesan cheese crisps for my Christmas eve get together.
I've been doing this in my dehydrator for a while now & love it. I just spread it all out on silicone sheets & break it up. Sounds crazy, but spaghetti mix powder is my favorite, with Tajin a close second. I also do yogurt & sandwich meat in the dehydrator. I keep 8oz deli containers of each in my purse so i can snack when I need to.
I did SO MANY iterations of this recipe in a dehydrator and just couldn't get the texture I wanted. Once I went to an oven and got the time/temp dialed in, I was thrilled with the results. Also, I did a video on dehydrating deli meats into chips. 😉
I had made these in the microwave many times and they were great, but time consuming. I just tries them in the oven @325 and followed Keto Twins suggestion to add a tad of potato flakes, but they didn't crisp up. I am so excited to try this. Does ot mater what kind of cottage cheese, other than full fat. Thanks so much Steve.

I just made my chips today, I used Daisy CC 4% milk fat. After reading comments, I initially put them in at 225, but half way thru the time I spread them with a spatula and changed my temp to 250 F on convection bake ( this was in the first 40 minute bake). Then I proceeded at that temp. 250 for the next 40 minutes. They came out great! I did not need to let them sit in the oven for the next 20 minutes. Nice and crunchy!
@@cathybaumfeld8107 Based on the comments, the Daisy brand doesn't work well for this. It does work well for the mini "flatbreads" that I did in a more recent video. In one of the cracker follow up videos, I list (in the description) which cottage cheese brands work and which don't, based on viewer feedback.
I used good culture 2% cottage cheese and they came out amazing. My only mistake was putting everything but the bagel seasoning and they were too salty so live and learn again the good culture two came out awesome I baked them for 35 minutes and they were crispy and delicious.
I like many of The Keto Twins recipes... I tried these when I saw them do it. Not bad... Seemed like a lot of work and time for a few chips. I might try three sheet pans at once to speed up the process.
And if you don't care about presentation, u can save more effort by spreading the mix on the mat/parchment paper as a whole thin layer. U can par bake cut/score into even pieces and then return to oven to finish. Even less effort - bake as a whole and then break into pieces😅 I'm making these with peanut flour (pecans are awfully expensive here in Asia) Thanks, Steve!❤

I have successfully tried this recipe. I've also added OOO mashed potato flavoring and sprinkled a little Redmond's real salt on top. It's really good and I love the crunchiness!

I saw another recipe using an air fryer and I didn’t have full fat cottage cheese. They all ran together and were Chewy. Like you, I didn’t give up and found your cooking channel on RUclips. Eureka! My first batch is cooking in the oven and I spiced it up with garlic powder and Italian seasoning. The kitchen smells amazing. I just checked on them and even though I used 2% cottage cheese, they are not watery and flattened out to thin wafers. I am new to keto. I made keto zucchini lasagna the other day. My son just found keto cheeseburger, lettuce boats on Tik Tok. I am hooked on keto. Never felt so good.
Thanks for the great recipes. The cheese crackers could be enhanced with nutritional yeast which has a great cheese flavor and is filled with b vitamins. 2 tablespoons only has 3 grams of carbs, 5 grams of protein and 2 grams of fiber.
I made these right after watching your video. They got too brown on the edges after the first step so I lowered the temp to 200’ (I knew my oven runs hot - my bad) They turned out exactly the shape and as crispy as yours. 👍🏻 They will be great for guacamole and cheese dips. Hi Steve, I think I may have figured out some small difference in the cottage cheese spreading vs not spreading. It seems silly but it seems to be the *amount of moisture.* I bought 3 cottage cheeses from Public; two publix brand containers 1 large and one small curd, and one Daisy. (i usually shop at Kroger and this might be important) All three Public CCheese had the same issue of not spreading. The curds were very solid before blending and the scoops of batter were very solid , like thick mashed potato. However, the Kroger cottage cheese was very wet and soft, and after blending, it was very soft like cold melted ice cream. In Fact, the Kroger cottage cheese batter spread so readily that I realized my stove is not level. Eureka, the batter needed to be wetter. I got flat crisp chips without having to finish them in the dehydrator for the first time.
@@SeriousKetoI tried several of the recipe flavors using only the 4% Daisy, that had none of the extra gums or ingredients, and mine wouldn't spread either unless I used the back of the disher to spread them out a little first. While they looked okay, they never crisped up and I had to try various extra times/temps with oven, air fryer and dehydrator. Eventually, they crunched up but were rock hard (like another commentor's). Could never get them to the nice light crispy texture you seemed to get, Steve. 😢 So, now I'm wondering also if the moisture is the key since there were none of the additives in the Daisy. 🤔 (Would also love a tender, buttery Ritz-type/flavor or the long discontinued Nabisco Bacon Thins!)

@@evamarie4736 Temperature, Moisture and Fat another brand tat did not spread easily is Aldi brand whole milk cottage cheese. I tried adding a Tablespoon of water , and it still didn't spread as thinly as Kroger brand with no edits. I tried adding some Liquid MCT oil( about 1 T) in the Aldi brand, and with the extra water and oil, they did finally spread thin enough to make crunchy crackers but not as crispy. I blend the heck out of the Kroger brand CC until it is a glossy pourable slurry and I let it come to room temperatue on the stove as the oven heads up. When I scoop, it comes out like melted ice cream and I tap the pan on my kneed to flatten it before I put it into the oven. By the end I get very thin crispy chips. Also, because I don't want to wait the final 10 minutes with the oven, I pull the chips out and finish them in my dehydrator while I start the next batch. Becaue of that my chips develope a pringles curl to them. My neighbor used some of the chips to have scoop nachos.
I did not see your video until i was in the middle of baking mine. I slightly flattened mine before i put them in the oven. They look great. I also made a batch in the microwave. They're just too thin.
I used Daisy brand and my crackers did flatten and crisp up nicely. I really prefer sweet snacks so I decided to try adding sweetners, unsweetened coconut, dash of vanilla and unsweetened chocolate chips. I decided to not blend the coconut and chips, so I folded those into the well blended cottage cheese, sweetners, and vanilla. I think next time I may just press the chips into the big dollup so they are evenly spaced. I did bake these at 300 for about 40 minutes I think. It was getting late! I did spread them out a bit before placing in the oven since I wanted them to cook quicker! Steve I am sure you can do better than me. I not very good at exactness when it comes to cooking. They were very tasty with gold edges and soft but firm middle. Letting the cheese, sweetners and coconut marinate for a few minutes might make them even better.

I suspect it's because we are all more into content creation than administrative tasks. If an angel investor and someone who could handle the business aspects (accounting, payroll, publishing, etc.) would come along, I'd totally be for that. I’ve never been able to make these in my microwave. Steve’s 30-second tortillas don’t come out evenly either so I’m pretty sure the problem is my microwave. So glad to see I can try them in the oven! Thanks Steve for all your efforts 😊

Variation ideas:
SAVORY: Add chopped kalamata olives & a bit of rosemary.
SWEET cookies: Add non-calorie sweetener of choice & vanilla or almond extract. Drizzle or dip one end in melted keto chocolate, or adhere 2 cookies with melted chocolate (like Milano cookies). 😋
These also remind me of the Swedish cookies that you put in your palm and tap to break, hopefully into 3 parts (as a kid I think that was a good luck sign :-) ). They were sweet and a bit spicy. I think ginger in these and a little sweetener might make a admirable substitute! Holidays are a comin'...
0:45 thank you, thank you, thank you, I've tried the Keto twins process and it seemed a lot of work for haphazard resulting chips. You've improved the process and I just tried it with Pork King Good's ranch pork rinds and a tablespoon of their ranch seasoning and they are delicious. Please keep on, I'm going to try it their smoked jalapeño and cheddar seasoning.

ooohhh I had choczero hazelnut spread..... the keto Chow chip crunched up with chopped hazelnut mixed with the spread into balls, cooled and dipped into a melted chocolate ....may be my keto Ferrero Roche for Christmas treats....

@@exchangestudent2..... I could not get the Keto Chow mix, opted on Catalina Crunch honey grahams chopped.
So without a binder, they did not set enough to dip. Took some keto marshmallows and melted it and added to the mix and shaped into balls and cooled it again and they set really well.... they tasted so good that I did not bother with a dip in chocolate.
(Added finely chopped pecans already had and wanted to use them up, the little chocolate protein crunchies, and the keto hazelnut spread.)

Thanks for the experimenting Steve. Other videos that I've seen with cottage cheese has inconsistent chips. I like how your version takes care of that problem. It actually doesn't take longer when it comes to time you spend working on it... it's much less... and you can get more at one time. I got some One On One flavors, so this should be a good way to use some of them. I've got a potato flavoring in my collection, so that should make a good potato chip version that's much healthier.
Does the potato flavoring really taste like potato? I tried the corn flavoring and it really does not taste like corn to me.

Use Great Value 4% Milk fat Large Curd Cottage Cheese foe
all the chips I make. Into food processor with Garlic Powder, Onion Powder, Basil, Oregano, Pork Rinds(any flavor), Potato Flakes(1/4 cup is not very high in carbs) or any combination or any thing else I can think of. Must adjust microwave time for each type. Put 9 in circle on parchment for about 4 min. Potato goes about 4:30 and comes out thicker. Always watch and pull them just as they start to turn brown. Great flavor and great crunch. Consecutive batches get done faster because plate in microwave gets hot.Use each parchment sheet at least 4 times by hitting gaps with second batch then do the same on reverse side. I make a full batch in 30 minutes. Not as beautiful as your but mine only last one day. 3 mouths around here. LOL Thanks for all you do.

Love the keto twins. I’m still waiting for a chip that can replace potato chips. If you have one, please let me know. I have some salt and vinegar seasoning just waiting for a good faux potato chip. Have I missed one, I don’t always get online, so it’s easy to miss things. They tried adding instant potato and so did I but I wasn’t taken with the result. Potato chips have always been my addiction, and oh how I miss them. About once every three months I give in and buy a bag and devour the bag. Doesn’t fulfill the need, but it helps, with everything but the guilt.
I can't say I would put that much time into making chips but it's terrific you have worked it out

i made a tray of similar cottage cheese chips but made them in my dehydrator they were really good and i use salsa for dip

How much everything seasoning did you use? I found when I did a batch with it, I pretty much just tasted garlic.

It’s actually about 5 minutes of work. The rest is passive time. And you can absolutely do two trays at once, doubling your output. 🙂

Thanks so much. Mine never turned out well in the microwave or the air fryer or the toaster oven. I’m a person who needs crunchy food everyday. Sooooooooo. I will give this a try even though I decided cottage cheese chips were not for me and swore I’d never make them again. (Also. I don’t think this is necessarily more time since I had to stand and watch for timing before and only had 2-4 chips at a time. Lots of wasted time babysitting the chips!). I have left over cottage cheese so in the oven it’ll go. (I love watching Keto Twins as well).

I have made these with the mashed potato extract and with the very small amount of potato flakes , like the twins did , and it was so good. Didn’t feel like I was missing potato chips at all.
I am going to try next adding the ranch seasoning from flavor god and the ranch porking good crumbs.
I am wondering if besides using the corn extract flavoring if grinding up some baby corn in it will help with a corn chip taste.

Whenever sliced mushrooms are marked down for quick sale, I used to buy them and rush to make somethig before they turned slimy. Now I just buy as many as I can and pop each container onto a tray in the dehydrator. I can either add the dry mushrooms to a soup or blitz them for Umami powder! I was coming to suggest drying the baby corn but you beat me. I'm glad to see great ideas crossing other great ideas.
@@robinq5511 A 1/2-cup serving of baby corn contains just 5 grams of carbs with 3 grams of fiber for a net of 2 g net carbs. I doubt you will get much better numbers, that will make it worth the effort, but just for ideas, how would you ferment the baby corn? It makes me think of theancient process of using lime on corn, I'm not sure what that does but it was important in history for getitng better nutrition out of mature kernals.

Good Culture has cottage cheese at 6 grams of carbs per cup. Try adding powdered parmesan cheese, perhaps 2 T. per cup of cottage cheese, and salting the batter. The parm makes them taste more like a potato chip. I really like the idea of adding crushed barbecue pork rinds to the cottage cheese chips. Thanks for that idea. If you have not tried making cheese crackers with shredded parmesan cheese, they are freaking awesome too. It would be nice to offer my guests your chips in barbeque and the parmesan cheese crisps for my Christmas eve get together.

I've been doing this in my dehydrator for a while now & love it. I just spread it all out on silicone sheets & break it up. Sounds crazy, but spaghetti mix powder is my favorite, with Tajin a close second. I also do yogurt & sandwich meat in the dehydrator. I keep 8oz deli containers of each in my purse so i can snack when I need to.
I did SO MANY iterations of this recipe in a dehydrator and just couldn't get the texture I wanted. Once I went to an oven and got the time/temp dialed in, I was thrilled with the results. Also, I did a video on dehydrating deli meats into chips. 😉
I had made these in the microwave many times and they were great, but time consuming. I just tries them in the oven @325 and followed Keto Twins suggestion to add a tad of potato flakes, but they didn't crisp up. I am so excited to try this. Does ot mater what kind of cottage cheese, other than full fat. Thanks so much Steve.
I've used a couple of brands (both full fat) and it worked out the same.

I just made my chips today, I used Daisy CC 4% milk fat. After reading comments, I initially put them in at 225, but half way thru the time I spread them with a spatula and changed my temp to 250 F on convection bake ( this was in the first 40 minute bake). Then I proceeded at that temp. 250 for the next 40 minutes. They came out great! I did not need to let them sit in the oven for the next 20 minutes. Nice and crunchy!

@@cathybaumfeld8107 Based on the comments, the Daisy brand doesn't work well for this. It does work well for the mini "flatbreads" that I did in a more recent video. In one of the cracker follow up videos, I list (in the description) which cottage cheese brands work and which don't, based on viewer feedback.
I used good culture 2% cottage cheese and they came out amazing. My only mistake was putting everything but the bagel seasoning and they were too salty so live and learn again the good culture two came out awesome I baked them for 35 minutes and they were crispy and delicious.
everything but the bagel can pack a lot of punch.
In Canada, in store which is how I shop I buy 4% Dairyland cottage cheese and it seems to work good.

I like many of The Keto Twins recipes... I tried these when I saw them do it. Not bad... Seemed like a lot of work and time for a few chips. I might try three sheet pans at once to speed up the process.
This version is very low effort if you have the tools.
And if you don't care about presentation, u can save more effort by spreading the mix on the mat/parchment paper as a whole thin layer.
U can par bake cut/score into even pieces and then return to oven to finish.
Even less effort - bake as a whole and then break into pieces😅
I'm making these with peanut flour (pecans are awfully expensive here in Asia)

I have successfully tried this recipe. I've also added OOO mashed potato flavoring and sprinkled a little Redmond's real salt on top. It's really good and I love the crunchiness!
How much of the OOO flavor did you add?

I saw another recipe using an air fryer and I didn’t have full fat cottage cheese. They all ran together and were Chewy. Like you, I didn’t give up and found your cooking channel on RUclips. Eureka! My first batch is cooking in the oven and I spiced it up with garlic powder and Italian seasoning. The kitchen smells amazing. I just checked on them and even though I used 2% cottage cheese, they are not watery and flattened out to thin wafers. I am new to keto. I made keto zucchini lasagna the other day. My son just found keto cheeseburger, lettuce boats on Tik Tok. I am hooked on keto. Never felt so good.

Thanks for the great recipes. The cheese crackers could be enhanced with nutritional yeast which has a great cheese flavor and is filled with b vitamins. 2 tablespoons only has 3 grams of carbs, 5 grams of protein and 2 grams of fiber.

I made these right after watching your video. They got too brown on the edges after the first step so I lowered the temp to 200’ (I knew my oven runs hot - my bad)
They turned out exactly the shape and as crispy as yours. 👍🏻

I also like the Twins version because they’re like potato chips, though too fragile for dips.
Look at your owners manual. Most newer ovens can be calibrated with just a few steps to correct that problem.
Every oven I have ever used has been different.
Hi Steve, I think I may have figured out some small difference in the cottage cheese spreading vs not spreading. It seems silly but it seems to be the *amount of moisture.* I bought 3 cottage cheeses from Public; two publix brand containers 1 large and one small curd, and one Daisy. (i usually shop at Kroger and this might be important)
All three Public CCheese had the same issue of not spreading. The curds were very solid before blending and the scoops of batter were very solid , like thick mashed potato. However, the Kroger cottage cheese was very wet and soft, and after blending, it was very soft like cold melted ice cream. In Fact, the Kroger cottage cheese batter spread so readily that I realized my stove is not level. Eureka, the batter needed to be wetter. I got flat crisp chips without having to finish them in the dehydrator for the first time.
You may be on to something, but what I notice is that every brand that people have told me DID NOT SPREAD had guar gum as one of it's ingredients.
@@SeriousKetoI tried several of the recipe flavors using only the 4% Daisy, that had none of the extra gums or ingredients, and mine wouldn't spread either unless I used the back of the disher to spread them out a little first. While they looked okay, they never crisped up and I had to try various extra times/temps with oven, air fryer and dehydrator. Eventually, they crunched up but were rock hard (like another commentor's). Could never get them to the nice light crispy texture you seemed to get, Steve. 😢 So, now I'm wondering also if the moisture is the key since there were none of the additives in the Daisy. 🤔 (Would also love a tender, buttery Ritz-type/flavor or the long discontinued Nabisco Bacon Thins!)

another brand tat did not spread easily is Aldi brand whole milk cottage cheese. I tried adding a Tablespoon of water , and it still didn't spread as thinly as Kroger brand with no edits.
I tried adding some Liquid MCT oil( about 1 T) in the Aldi brand, and with the extra water and oil, they did finally spread thin enough to make crunchy crackers but not as crispy.
I blend the heck out of the Kroger brand CC until it is a glossy pourable slurry and I let it come to room temperatue on the stove as the oven heads up. When I scoop, it comes out like melted ice cream and I tap the pan on my kneed to flatten it before I put it into the oven. By the end I get very thin crispy chips. Also, because I don't want to wait the final 10 minutes with the oven, I pull the chips out and finish them in my dehydrator while I start the next batch. Becaue of that my chips develope a pringles curl to them. My neighbor used some of the chips to have scoop nachos.
I did not see your video until i was in the middle of baking mine. I slightly flattened mine before i put them in the oven. They look great. I also made a batch in the microwave. They're just too thin.
In my initial trials, I also flattened mine. Then I did a batch without flattening and was delighted that they flattened out on their own.
I used Daisy brand and my crackers did flatten and crisp up nicely. I really prefer sweet snacks so I decided to try adding sweetners, unsweetened coconut, dash of vanilla and unsweetened chocolate chips. I decided to not blend the coconut and chips, so I folded those into the well blended cottage cheese, sweetners, and vanilla. I think next time I may just press the chips into the big dollup so they are evenly spaced. I did bake these at 300 for about 40 minutes I think. It was getting late! I did spread them out a bit before placing in the oven since I wanted them to cook quicker! Steve I am sure you can do better than me. I not very good at exactness when it comes to cooking. They were very tasty with gold edges and soft but firm middle. Letting the cheese, sweetners and coconut marinate for a few minutes might make them even better.
