If you open the cream cheese and put it in a bowl with a lid, then set it out on the counter until it softens you can avoid the "blend and scrape, blend and scrape, blend and scrape" completely. It stirs right into the sour cream with a spatula. The opening before leaving on the counter is only recommended because the foil seal is hard to remove after the cream cheese is soft.
Also, if you add a packet of ranch seasoning into it the resulting product can be mixed with boiled egg yolks for a stellar deviled egg.

I make bacon Mayo using leftover bacon grease. I used to use half bacon grease and half mct oil so it stayed soft in the fridge, but trying to go a bit stricter cut out the mct oil. It firms up a lot in the fridge but I don’t mind. Supposedly you can use more egg yolks to keep it from firming so much, but I haven’t done that. I use Steve’s (seriousketo) method for pasteurizing the yolks so it lasts longer. Works great for my family. I don’t do much dairy anymore, but I will try this recipe for my kids. It’s really easy even without a blender. Just place a folded towel halfway under a plate so that it is slightly tilted and beat the ingredients the right order thoroughly from the wrist with a whisk. Just remember to pour the oil slowly. Replacing lemon with lime is also great. I'm not on a carnivore diet myself so I vary with ingredients such as garlic, turmeric, black pepper or herbs such as sage, lemon thyme, lavas, marjoram, basil or fresh parsley etc.

I can't find a commercial cream cheese brand that is unadulterated. Most have at least Carob Bean Gum and some brands have many other ingredients.

I use a hand mixer and make sure the cream cheese is room temperature.
You can easily add taco seasoning (if you do seasonings) and make a taco dip.
I do that for my husband (he is not carnivore but I am working on adding more meats and healthy fats to his diet)

I tried making ranch with sour cream and Greek yogurt. It was good, but there was a bit off to the mouth feel. I'll have to give this one a try. Especially since I also use cream cheese and sour cream to make cheese cakes.

I’m curious. Which type of olive oil did you use-extra virgin or light? I heard extra virgin is too strong.

    • @InLawsAttic
      @InLawsAttic 8 месяцев назад

@@tycox8704 I used extra at first try, then light- which was a little better. The avocado best, but still not great. I do season it. Lighter oil, that really is olive oil pure- is hard to find.

Bertoli extra light tasting olive oil is the only oil that tastes right (to me) for mayo.
I’m intrigued by this recipe because the price of oil keeps increasing.

Use a bowl and an immersion blender! Much less cleanup!
I make eggs and cream cheese pancake batter (2 eggs, vanilla, liquid artificial sweetener, guar gum, 8 ounces cream cheese) in a bowl using an immersion blender and it’s way easier than using a regular blender. In fact, I use the immersion blender for nearly everything except when I need a really smooth consistency resulting from grinding up something very thoroughly.

Greetings from New Zealand. I have never been able to deal with taste of raw eggs, so great to find a homemade substitute for mayo that doesn't use them.
I like the name Not Mayo, that's how I have written it in my cookbook, lol. Cheers.

Melt a large stick of butter in a microwave, let it seperate and take off the solids, while it’s still at room temp just make some butter mayonnaise….its full on keto and if you like butter it’s magic. Use it on salads or smear it on a steak.

Manufactured mayo is very toxic, because of the oils they use. Even organic canola is still bad. Super easy to also make homemade mayo from and egg, 1/2 c bacon fat and 1/2 c avo oil, 1 tsp mustard and salt and pepper and use and immersion blender. I do mine mostly with all avo oil. I do crunch with chicken thigh skins. I remove them before cooking the thighs in the instapot to make chicken and broth. Air fry them and they're so crunchy or I do pork fat I get for $1.99 a pound and air fry that and it's amazing and sometimes my meal. Pork belly is also great and can get very crisp, bonus, you get all the fat to pour off to your grease jar for cooking everything else and you never even have to buy oils. You should try powders instead of granulated onion and garlic, they help to thicken sauces etc ad the flavor is better. Will try this recipe, wonder how it freezes?

only problem with the ranch is I know it's amazing but it's loaded with oxalates especially considering the spices are dehydrated. The N-propyl disulfide content from the alliums is also increased exponentially
