Freya Guppy That’s such a good point. It’d be great to show one of these videos to a science class learning about the scientific method for the first time. Then have them analyze it for the steps of the sci. method. I wish I could’ve done that back in elementary school.

It's because some of us have never seen them before lmao. Cheetos aren't really made in the UK so we don't have them, and I've never seen a flaming hot cheeto IRL. Just on buzzfeed videos haha.

This is the first time I've watched an episode of this series... the Cheetos brought me here... but I am planning on watching this tomorrow with my 13-year-old son because if this isn't a perfect example of perseverance, I don't know what is. This chef has the exact determination, grit, and stick-to-it-iveness that we teachers want to instill in our students, and we parents want to see in our kids and if it takes a video of an obviously talented and knowledgable gourmet chef making multiple attempts to replicate the delicate wonder that is a Cheeto, I'm more than happy to bust open a bag and spend 16 minutes cozied up on the couch with my son and laptop. Having worked at the factory, I can assure that Cheetos are NOT fried. They use a process similar to frying, which is called extrusion. After the pastry gets cut into shape, it goes in a conveyor belt, inside the extruder. This machine sprays hot oil on the pastry for a certain amount of time. There is no flavours added so far. Then, when it cools down a little bit, on another conveyor belt, it is dropped into a drum with the flavouring and colouring. This drum works like a tumble dryer and the thing stays tumbling there for a few seconds and go to another conveyor belt, to be taken to the packaging area.

The ferrous sulfate, niacin, riboflavin, thiamine and folic acid are there because of the flour being used. Flour needs to be enriched with those nutrients. There are actually laws about that. So the list of ingredients is now much shorter. The lactic acid and citric acid are there to preserve the food.

@@lindski11 It's because of the difference in diets. I'm Australian and flour used for bread here has to have folate and thiamin added. I have coeliac disease and have to use unenriched flours like rice and potato. After I was diagnosed I almost immediately became folate deficient. It's actually something they warn you about when you have to stop eating bread.
It’s because some countries grind their flour so finely that all the nutrients disappear. Those nutrients exist naturally in flour, but fine, white flour is so processed that it has basically lost all nutritional value, and that’s why they have to add it in afterwards in order for it to even count as a food. If German flour don’t contain additives, it’s because their processing methods are able to keep what’s already in there naturally, and it’s not necessary to add anything. It’s a very sad, capitalistic phenomenon that started sometime after the second world war, if I remember correctly. Solution: Use more coarsly ground white flour, or wholemeal flour. Not sure if organic would also do the trick, might be worth researching

I have huge respect for bakers. Like, in stove top cooking you can fix problems as they happen. Taste it, oh it needs more garlic then add the garlic. Baking is a science, if you mess up that structure or ingredients even a little you have to throw the whole thing away and start again

I used to work at Frito Lay, the producer of Cheetos. They are hot-air extruded and then sprayed with vegetable oil and tumbled in a drum with the cheese seasoning.
I figured it had to be specialized equipment. There's no other way a professional chef would be this perplexed with creating a corn puff with cheese dust.
Seems too easy for this show. I've made them before. Just puff pastry, any type of jam or jelly and then some kind of glaze or icing. It would be a pretty short video.

Roro Hall what bad/unhealthy ingredients did she eliminate? Other than maybe msg (which recent studies show is no worse than table salt) the ingredients would be nearly identical. The long list of vitamins and minerals in the enriched corn meal (main ingredient in the Cheetos) are probably in the corn meal used for the polenta she used as a corn meal substitute, but if the polenta wasn’t made with enriched corn meal then she eliminated good things. Otherwise still just dehydrated cheese and deep fried corn meal with seasonings and regular salt in place of msg.

The ferrous sulfate, niacin, riboflavin, thiamine and folic acid are there because of the flour being used. Flour needs to be enriched with those nutrients. There are actually laws about that. So the list of ingredients is now much shorter.
The lactic acid and citric acid are there to preserve the food.

I live in Germany and there is nothing in our flour.. so I really don't think it's necessary to enrich the flour with anything
@@lindski11 It's because of the difference in diets. I'm Australian and flour used for bread here has to have folate and thiamin added. I have coeliac disease and have to use unenriched flours like rice and potato. After I was diagnosed I almost immediately became folate deficient. It's actually something they warn you about when you have to stop eating bread.
It’s because some countries grind their flour so finely that all the nutrients disappear. Those nutrients exist naturally in flour, but fine, white flour is so processed that it has basically lost all nutritional value, and that’s why they have to add it in afterwards in order for it to even count as a food. If German flour don’t contain additives, it’s because their processing methods are able to keep what’s already in there naturally, and it’s not necessary to add anything. It’s a very sad, capitalistic phenomenon that started sometime after the second world war, if I remember correctly. Solution: Use more coarsly ground white flour, or wholemeal flour. Not sure if organic would also do the trick, might be worth researching

I have huge respect for bakers. Like, in stove top cooking you can fix problems as they happen. Taste it, oh it needs more garlic then add the garlic. Baking is a science, if you mess up that structure or ingredients even a little you have to throw the whole thing away and start again
its not just talent tho....its specialized knowledge she has acquired through hard work and she's very good at creative problem solving and critical thinking because of that knowledge AND talent.

Roro Hall what bad/unhealthy ingredients did she eliminate? Other than maybe msg (which recent studies show is no worse than table salt) the ingredients would be nearly identical. The long list of vitamins and minerals in the enriched corn meal (main ingredient in the Cheetos) are probably in the corn meal used for the polenta she used as a corn meal substitute, but if the polenta wasn’t made with enriched corn meal then she eliminated good things. Otherwise still just dehydrated cheese and deep fried corn meal with seasonings and regular salt in place of msg.

Sounds tasty, but so much work and stuff needed. I'd think I'd just go and buy some Cheetos.
Now Pringles on the other hand... I'm guessing one would need to just get some Potato Buds, mix it like you would for mashed, season it, roll it flat, and throw it on an oven pan and bake until crisp. Much easier for the home cook.
Pringles use a lot of rice and corn starch to get their consistency, if you picked any other crisp you'd be close.
