I feel like it’s a lot more realistic, the set up of Gourmet Makes is just very mellow and not super highly produced. So seeing people is just like “yeah this could be a place where someone just tries different recipes”
I think it's probably a combination of their silence and the ambient sound of the blowers / hoods. That ambient white noise is really soothing to me.

I feel like Chris is both very honest and good at what he does. He always has constructive criticism to give and is not afraid to compliment something when it deserves to. Definitely one of my favourite BA people along with Claire and Brad

My 77 year old grandmother makes peanut butter cups......but hers are made in cupcake wrappers and she adds marshmallow creme in them, and makes them in dark chocolate for me. It seems she has been doing this since I was young, maybe before, and definitely before youtube. I'm sure if I emailed her a link for a video, she would try it out. I tried to make horchata but the flavor was off and it was a pain in the butt. I'm no cook, but I could be tempted to try this. The wafer seems more like waffle cone ice cream cones. I love making belgian waffles and love belgian beer. I'll finish the video now and see if she figures this one out.

I personally find cooking easy but I will admit there is a partial struggle when first doing a recipe, getting it perfectly is a great feeling though.
T3 Chicken the struggle comes from the fact that she's creating the recipes. I doubt you do that

Well they're saying that this is the actual struggle of cooking and while yes this a struggle in cooking most of the time it's, "Hey, I kinda like this recipe but want to change it, what modifications actually work?" not "Hey, I need to recreate something from scratch with no instructions." and for the most part, it's not too hard to accomplish making the recipe if you have a solid baseline like she always likes to start with in these videos.

for anyone who wants the recipe.
kit Kats -
1 cup cake flour
1/2 cup cornstarch
1/3 cup powdered sugar.
1 1/2 tsp baking powder
1/2 tsp salt.
pulse together,
stream in slowly
1/2 cup melted butter,
3/4 cup water
2 tsp vanilla.
cook on greased waffle cone iron.
trim to mold
bake at 300 till crisp
crush trimmings, and sift them
bind crumbs with melted chocolate. salt.
spread on wafers, 3 layers
wrap, weigh down, chill.
trim to size.
12oz melted chocolate, double boiler till it reaches 110 f.
off heat, add 3oz chopped chocolate. stir
sit 3 min, then stir until 86 f.
pip into mold, add wafers, chill.
slice, and more chocolate , chill
cut into blocks of 4.

Brad is my favorite. His explanation of a trapezoid killed me "little animal in and trapped."
I worked in a chocolate factory, and Tempering was THE most difficult part of the entire chocolate making process, if you miss the temperature by literal fractions of a degree, it just won't come out of the molds, the smaller the piece, the harder it was. Like everyone would think making 1 gram chocolates would be easy but it was significantly more difficult than a 50g bar because the tempering needed to be so precise or you'd end up with dozens of molds where the chocolate just will not come out.
We had very expensive tempering equipment, I can't imagine trying to temper chocolate without it, much less by stovetop with a thermometer. When I heard you say you had to temper, I legit burst out laughing because I knew from then that it'd be a great challenge. I think it took me about a month to learn how to properly temper and mold chocolates, molding definitely took the longest but understanding the importance of the temperature changes and how to combat them definitely occupied a significant portion of my mind for quite a while, after a bit it does become second nature, but learning it from scratch is no walk in the park.
Also, more Brad and Claire! You could do Oreos, They seem pretty straightforward and everyone loves Oreos

I just had to say I really love the editing style on Bon Appetit. The subtle edits and some bg sounds, not "in your face" type of humour... they're trying to keep it as raw as possible and i love it.

Kalibie The whole point of this series is that it is someone without experience in what she is trying to make (e.g. candy, chocolate) but enough experience (she is a pastry chef) to figure it out.
Kalibie and the chocolatiere would have gotten the waffle faster also? Nope. Recreating already existing food is actually harder than to come up with your own creations.
