*Here's how you make a gourmet Oreo:* _Cookie:_ 155 g butter ⅔ cup sugar ¼ cup brown sugar 1 tsp vanilla extract 1 cup regular wheat flour (10% protein) ½ cup strong wheat flour (12% protein) 3 tbsp cocoa powder 2 ½ tbsp alkalised cocoa powder ½ tsp salt ½ tsp baking soda (sodium bicarbonate) 1. Melt and brown the butter, then let cool until room temperature while stirring occasionally. 2. Blend butter, sugar and vanilla extract. 3. Sieve and blend the dry ingredients, then add them to the butter-sugar mixture and blend until everything is well combined. 4. In pieces of *9 g,* put in moulds and *freeze for 10 minutes.* 5. Bake from frozen, for *14-16 minutes at 175° C* (350° F). 6. Let cool on a wire rack and turn half of the cookies upside down. _Filling:_ 50 g coconut oil 50 g cocoa butter 100 g powdered sugar 1 tsp vanilla extract ½ tsp salt 7. Melt the coconut oil and the cocoa butter in the same pot on low-medium heat while stirring to combine and avoid splitting. Let cool to room temperature. 8. Mix the fat with the powdered sugar, vanilla extract and salt. Stir to make an even, thorough blend. 9. Spread the mix on a baking paper and roll to a thickness of about *3 mm.* 10. Punch out circles slightly smaller than the cookies. 11. Freeze until solid and then put the filling on the upside down cookies. 12. When the filling has thawed, gently put the cookies together.
Finally someone who spelled Mould properly. Mould and Mold are very different! Ahah I always get so irked by it, I watch a lot of Resin videos so I see it way too often
Murrika, lol... I try to be aware of all the mutations of English, and not just my own, but that's probably because I live in a border town that straddles two anglophone countries with different orthographic standards ;p
That makes no sense since not tempering chocolate is a KNOWN CULINARY FAIL in these recipes which even Claire admits and started tempering. SCIENCE RULES not game show rules.
Right? Trying to make pop rocks without realizing that she could have put the sugar mixture in a soda siphon and compressed it with CO2 cartridges? I mean, someone's gotta' show that girl some commitment, just like she shows us with every making gourmet episode.
I think my favorite thing about these videos is the gourmet chef remarking on how the store-bought, processed food is delicious. I feel like a lot of chefs would turn up their nose at much of the stuff Claire recreates, but everyone in the kitchen here is just like "yeah, it's so good."
Candy is one of those foods where the factory does it better than a chef can. They have a lot of specialized machines and ingredients that can be difficult to recreate in a kitchen (which is why she has such a hard time on some episodes). Other foods though, like frozen dinners, is where a factory is extremely mediocre compared to any decent chef. Even a home cook can make better food than comes out of a factory 9/10 times.
the frozen dinners maybe a lot more mediocre because they have to adhere to extrme standards when using certain ingredients ( meats, spices and produce) and machinery. processed food is a lot more chemically changed than candy because candy is heated to high temps which also breakdowns added chemicals. But if at home a chef doesn't have to adhere to factory standards and can use the freshest things they want or use gmo peoduce.
Jewels Elle_Ginger Or, you know, it's just gone through a lot of development and testing to make it taste the way consumers want, so it tastes good. You don't have to make a conspiracy theory out of it, chill.

I liked the struggle and the frustration and finally the relief and proudness at the end when she finally figures it out.

I'm so glad she got so many compliments!!! She definitely deserved them, this series is so difficult and demanding it's great to have an easier time with one of these! Keep going Claire, you're fantastic!!
I worked at the OREO factory in Chicago before it closed and they were made 24/7 using a rolling mold/punch, a city block-long oven on a conveyor, the cookie is just a standard chocolate wafer cookie, like a Nilla wafer but chocolate and the cream was made using pure hydrogenated oils and emulsifiers and flavoring. There is no dairy in the cream ... accurate. When I worked there we got a lot of free cookies and I got super fat. Cheers!
Only one constructive criticism is that hers have butter, so aren’t vegan. I don’t know anything about baking, I’d assume it could be quite difficult to just replace it with something else.
Maybe they saw how popular they are and decided to include more of the behind the scenes stuff. Her trials and errors are most of the fun. And Brad ribbing her.

Ferrero would be a good one. I imagine the challenge of that one is really mostly in the creation of the wafer, though. That would be challenging just because of the shape, more than because of the ingredients. In many ways, it's the kit kat but just harder without the specialized machinery that makes it trivial. But still yea, would Claire have to make her own hazelnut chocolate too XD
Eyy Kenzie, what you do is temper some chocolate, put a small amount in a paper muffin form and turn it to cover the sides of the form. Wait for it to firm up a little then you place a small chunk of peanut butter into the mold (for extra authenticity use reeses peanut butter). Cover with tempered chocolate and let firm. Easy peasy lemon squeezy.
They’re not hard to make actually. I made some delicious vegan peanut butter cups, and I liked them more than Reese’s. The recipe itself used only two ingredients and took like 5 mins excluding freezing time.

Oof. This comment aged poorly. For the record: referring to co-workers / employees as family is definitely a red flag. It basically allows people to leverage personal relationships against fair treatment/equal pay.

Omg we didn't see Brad in a Claire video. That makes me feel weird lol But omg those Oreos sounded good (: Next you should try making Pringles. That'd be super hard lol
if you look in the ingredients of pringles, you'll see that they use potato flakes or dehydrated potato. to make it at home, you might need to make a paste with potato flakes and then air fry it (???) while holding it in the signature shape. I actually have no clue.
Urooba Ahmed I've watched videos on how Pringles are made. To replicate them at home I feel like would be a huge challenge. Mainly because of how delicate they are. I just think it'd be fun to watch Claire have a go at it haha

Are you kidding? I'd be like "B!$%~, that's my legacy" *time indexed youtube link*
... And probably never touch store bought food again 😂
If Claire is the next celebrity cook and gets a book deal 10/10 would buy
This video is effective marketing. Opened the video, watched 1 minute, paused the video, dressed up, drove to the grocery store and bought oreos and milk
Me too.
kudos on your tenacity and follow through! Just thought about it a lot around here!!
Honestly the BA test kitchen family are goals, I want a friend group like this
Oof.
This comment aged poorly.
For the record: referring to co-workers / employees as family is definitely a red flag.
It basically allows people to leverage personal relationships against fair treatment/equal pay.
Lmao 8:00 “ you people don’t deserve this”
I mean he’s not wrong I’m over here studying for exams and stuffing my face with digestives and she works solidly for a community I don’t deserve her
@ get help
we really don't
@@realerst3537 you get help.
It would be so cool if you made Gourmet Ferraro Rochers.
S Pandit yes!!!
Yesss
Lol as a joke she should box them up nicely and give them to Brad...
aren't they all ready gourmet ?
what would i know i'm broke as hell
Ikr!! But that would be hella expensive to make bc ferrero is alr expensive itself lol

"I feel like you should be more surprised"
"W0w"
In the past week been watching all of these. Claire is super likable. Seems very genuine. Loving this series.
Has anyone already suggested that we call them "gourmeos"
Alexandria A. Haha
YEEEEESSSSSSS!!! I LOVE IIIIT!!!
BRILLIANT!
Because 'Goreos' sounds like a cookie based heavy metal band.
Trademark that
You should do POPTARTS
Evie Katt YEAHH! She should try doing it without the gelatin.
I second pop tarts
Third!
FOURTH!
SIXTH
Dough:
125gr AP flour
62gr bread flour
18gr black cocoa
14gr dutch cocoa
1/2 ts baking soda
ts vanilla extract
Pinch of salt
155gr browned butter
130gr sugar
50gr light brown sugar
9gr cookie
175°
14-16min
Filling:
50gr refined coconut oil
50gr cocoa butter
100gr powdered sugar
I found that 175°c is too high and burned the cookies, 150°c for 15 minutes is ideal if you're not using a mold.
Claire didn't have an existential crisis. I want my money back!
You should try making nerds next, even if you never manage to create them I would love to see you try
also I hope to see lots of Brad in the next episode
When a baker talks about how much they like the cookie
Backer: I like the cookie because of the salt is balanced and chocolate is right
Me: I like it because it’s sweet
Actually a bit of salt can make the sweetness in recipes stand out.
A simple apple filling is a good example of it. 😉
*bAcKeR*
Me: I like it because it's a cookie.
And yet you eat Oreos instead of sugar.
Eat just sugar then
No one:
Claire: RiGhT?!
Me responding: "MFing right, Claire!!!"
Dark Leaves yeah, that's true.
Dark Leaves..they are an industrial masterpiece. Pringles has my vote.
She's done Pringles now
Put Claire's name in the title!!!! We care about Claire!!!
🏄⚖☪️♉️🔒🌨👐
yeah literally the only reason i subbed
Right ! Every one else gets their name in the title and Claire gets “pastry chef”

Maybe how the RUclips algorithm is right now?
She loves Oreos so much that she based her entire hairstyle on them.
yep
I think the white part is her natural hair.
Koko Yeah we know..it's a joke....
It’s hard to tell... sorry
Tanner's Tools ((
Legit the shortest and most smooth sailing episode of Gourmet Makes, she's so happy
Im mostly impressed your printer worked. Idk why in videos a working printer blows me away lol
I love that it's specifically only in videos that a working printer blows your mind lol. Also, that we're in 2018 and we still manage to be impressed by things like this.
Kent Heckel Haha I mean printers are ususlly broken in some way or another.
Printers are known to smell fears. They know not to work when youre pressed and in rush to print something 😂😂😂😂
Super impressed as well, since everytime I try to use one it never works
Yeah, especially a cat and printer combo is the worst. Printers smell fear. Cats smell chaos
Claire deserves a win haha. And we deserve seeing her successes (mixed in with hair-pulling trials, of course)!
Watch out Oreo, America has a new favorite cookie.
Michael Jay - Value Investing macadamia nut?
And her name is Claire
I just saw you at Babish's video.
I always get this sugar cravings whenever I see Claire’s “Gourmet makes” videos.
"You people don't deserve this."
Yeah.
We know, Andy.
We just don't need a reminder '-'
Claire never disappoints, hence high view count. She is fun, smart, informative, and is beautiful.
She is very cute, but she is chubby and chunky, maybe a little diet?
Dude, come on. 🙄
M.C. G. I think she's rather pleasant. And has a distinct personality, while two of the guys we've seen in this video come across as your typical gay stereotype.
she isn't chunky, she has curves. its a good thing
Thicc
I want to also say, "Wow! Claire, that's really good!" But, I'm not in their kitchen. 😢
Btw, this episode seems unreal. Like, Claire didn't even struggle! She just made perfect cookies from start to finish.
Rex Torres sometimes you’re just too good haha!
