It shouldn't be for a pastry chef really. I don't think I've seen anybody on the Great British Bake Off fail at it - and some of them have trouble caramelizing sugar.
A common misunderstanding is that claire CANT temper chocolate but thats never really been true. She CAN temper chocolate, her problem has always been that she finds it very boring and very tedious and so she avoids doing it. Thats why now that she has the sous vide technique she is less reluctant to do it because it doesnt actually require her to do much with it.

This is absolutely one of the most informative "foodie" "science" shows on the internet. I loooooove these people!! The chemistry in the bowl and in the workplace is amazing. This is absolutely one of the most informative "foodie" "science" shows on the internet. I loooooove these people!! The chemistry in the bowl and in the workplace is amazing. It doesn't hurt that they are so knowledgeable and so creative and not afraid to make keep trying until they get it "right on". They are wonderful and thank you all for a great show!!!
Awe, I love when Claire has a good time. More often than not she gets soo stressed out and you can tell how much it takes out of her and how defeated she feels sometimes. It's awesome to see her nail a challenge *and* have fun doing it.

Claire if you had watched the Unwrapped episode on Butterfinger, they mix the corn flakes into the hot sugar mixture before the lamination process. Which most like makes the sugar much more brittle.
It's actually a gourmet version and not just Claire trying to recreate an industrial process in a regular kitchen. Really good episode!
