Gourmet Makes just felt mean after a while. I love seeing Claire experiment and invent things, GM just leaned into "ain't it funny to watch people get frustrated?"
And I think this is what gourmet makes should have stayed. I don't want anyone to do candy, or other stuff exactly as they sell it, she improves quality and flavor, and I think that is more important than nail the aesthetic or the color or whatever
This series is such a boost of nostalgia and comfort every time. I hope you never stop making these! Would love to see some European stuff in the mix sometime in the future
Absolutely agree! Everytime I see one of these uploaded I stop whatever I'm doing and watch it (granted I'm not at work or driving 😂) It's so refreshing to see her do it without restrictions and of her own accord as well, you can feel the difference ❤
I do absolutely love how you've changed the old show to not just be a basic "gourmet" remake of a dessert but instead improve upon things, especially in this case where you're trying to recreate a childhood nostalgia version.
Well, she said she had dehydrated strawberry powder. That would have been fine. But, am I the only one who thought the color was more pink than mauve anyway??
She used annatto to help redden the red velvet cake; that may have helped here. That or a bit of acid to make the anthocyanins shift more in the red direction.
From an oil painter - the Hibiscus powder very much has a cool hue to it, meaning that it's a cool red or reddish purple hue without the tint, not a pure red. Adding it to anything would increase the coolness of the tone. Adding it to the strawberry cake certainly in this case aided in making it mauve. Pure strawberry would've been more successful in keeping it warm pink.
Actually hibiscus has pH indicator properties. So adding it to something more acidic you get more vibrant red and basic gets a murkier mauve-blue leaning color.
My younger brother passed away a few springs ago. For his first birthday after his passing, I decided to make an ice cream cake as it was always his favorite. I remembered us eating these strawberry bars as kids, and I took it upon myself to make a round cake version of this popsicle stick treat. I spent all day making and freezing the layers (freeze-dried strawberries, crushed golden Oreos, vanilla and strawberry ice creams, etc), and my family gathered around to eat it in his memory. Thank you, Claire.
this is an amazing suggestion. thank you. i clean my spice grinder so much bc the nigerian and indian spices i grind are soooo different that it'll be unpleasant if i mix those up. i was considering buying two spice grinders but imma try rice to see if it works!
@@SuperTinyTurtle food coloring can have a very chemically taste and because you can’t have light red without it being considered a different color as opposed to a color like light blue or light green, you will often end up using a lot of red dye to avoid it just being pink. same goes for black. also, red 40 in particularly can contain cancer-causing substances. it’s not gonna kill you in one bite or anything but it doesn’t taste as good as it just makes it a little more unhealthy

For anyone wanting to use their coffee grinder for other things: I've had success with cleaning old coffee grounds out of my grinder by cleaning it well with soap and water, drying it, then grinding some uncooked rice which will help grab and dislodge fine coffee particulate in hard to reach places as well as grab some oils. Then clean once more to get rice powder out. No detectable coffee flavor after that! Eventually I picked up another coffee grinder from a free pile and keep one for coffee and one for everything else.
I actually like that your recreations aren't the same color as the manufactured ones! We're so used to seeing packaged foods in these unnaturally bright or pastel colors that i think a lot of us have forgotten what foods made with regular and natural foods look like. It's a good mental reset imo!
Please try Funyuns next episode! I’m loving that this series is back in a totally different way. It feels nostalgic but much more personal and homey now vs then!
I know in my head that Claire is exceptional and skilled and smart and hardworking, but there is a goofiness about her that makes me feel at home, like I'd be able to pull off any of her recipes

I think a streusel with freeze dried strawberries might have worked well for a topping! Would have gotten the soft "crunch" with the varied crumb size.
Streusel was also my first thought and when she said she had rethought about the cake, I thought for sure she would do streusel. I wonder if she did think about it but decided against it for some reason.
one of my dishes in my restaurant is a sable cookie, I've baked hundreds at this point, if you underbake it, let it sit, it'll be the perfect somehow soft crumble, and then freeze dry it and it'll be exactly what u want
I don’t mean to say anything controversial but I haven’t once ever made one of Claire’s recipes but every time she uploads, I watch. More than just the recipes, there is such a realness to this channel and Claire’s honesty. Something we fell in love with at BA but even heightened now that she’s comfortable in her kitchen and with her friends. Great videos. Thanks for letting us into your world! It’s a fun place. ❤
A lot of them are kinda hard compared to staple recipes I always use... After watching Clair stuff for 4 y I only ever made her lemon bars, they were good, but a lot of work.
@@jdb101585they’re a bit involved but rarely totally impossible for the home baker. I don’t bake much (limited sweet tooth and no one to share baked goods with) but I’ve made a handful of her recipes, namely her banana bread a number of times and the brown butter chocolate chip cookies once or twice. they’re totally doable if you know how to read a recipe. hers are well written, in terms of precision of writing and explaining what needs to be explained, compared to a lot I’ve seen. Having a food processor, which I don’t, is the biggest hurdle.
I don't think that's controversial. There are the people that watch baking videos for something to bake and there are those that watch them just cause they like to watch them

Claire absolutely DETESTING food coloring is the funniest thing to me and I don’t really know why? I think it’s the contrast between her being like “this could be better but I don’t hate it” about kind of not very good manufactured food even if she clearly doesn’t like it and her going “food coloring is a cheat and I refuse to use it” and trying to find work arounds at every opportunity. Anyway cat cam my beloved
I really appreciate how much less overconsumption there is with this series compared to the old version. The moutian of products they bought for the shot and all the very specific tools ingredients ect never sat right with me. This format of using what she has and not focusing on making them exactly the same feels so much more relaxed and true to Claire
When I tell you... I INHALED these as a kid... I loved these bars SO much. I skipped ahead admittedly lmao both look like nostalgia to me. Like good freaking work, Claire! (Maybe the chocolate version next, I think that one could be improved a bit; I don't remember the chocolate being all too great.)
The final cross section made me think chicken cordon bleu😂 but wow is that so eye opening on the crazy wild colors that are put in our food. Definitely would choose the gourmet cordon bleu strawberry bar all day everyday
it's so nice to have this series come back on her own channel and where she can set her own boundaries and goals. she never had to do an exact replica or start all over when something wasn't perfect and we still would've watched. I'm happy she can be happy this way :)
Would love to see you recreate a protein bar of some kind. Protein bars are typically super dense and require a lot of flavoring to make palatable so I know it’d be a real challenge to try and improve on. 🍫
I love all your content but I think Claire Recreates is my favorite of your series'. I love that it looks homemade, it puts into perspective how weird it is that manufactured foods are so processed they hardly resemble food made with real ingredients. your version is far superior, I don't even need to taste it.
My go to comfort videos!! In Mexico, we have some cookies called Sponch! They have marshmallows, coconut and strawberry jelly on them, they were super fun to eat and are very nostalgic to so many mexicans but I´m sure they could be way better! You can get them in many places in the USA. Also, maybe a recreation of some spicy candy or spicy snack would be so fun to watch! Thank you so much for the quality wholesome content c:
I think for my personal childhood nostalgia recreation I wouldn’t fuss with reddening the crumb coating, I think I’d just use chopped frozen strawberries. And in my head I remember the outside having a slightly crisp coating, so im wondering if something like Rice Krispies+cookie crumbs would work
I would love to see you try to make one of my favorite childhood snacks: Dunkaroos. You’d have to make your own weird two-compartment packaging though.
I'm so glad that Claire started doing Recreates again!! I love that Claire is enjoying the recreation process... But I also love that we get a glimpse of what other recipes Claire reads and refers to. It's awesome to watch a professional baker like Claire approach her craft in a new angle!
Claire, I haven't enjoyed an episode as much as this one in a VERY long time. And to be honest, it's partially because I don't think this creation was a stunning success in the way that it could have been. And so I think it would be very interesting to see how you would approach and tackle this idea again, sometime in the future. And please know that I mean this with sincere admiration. Each creation you make is a story. And like a story, while some are singular, some have sequels. And I think this story, in particular, deserves a sequel. 💪😎👉
After taking time to recover, I would love to see a take 2 on this! Take what you learned and make a version that tastes like strawberry shortcake and maybe looks closer to the original!

I feel like a sorbet would’ve been more accurate for the core, or maybe using a strawberry jam? To me the core is more jammy/sticky than just regular ice cream. These are my fav treats and we can’t buy them in grocery stores in Canada, I can only get them at the resort store at Blue Lake, MB in the summers 🥰 Also, the colour is great! I’m sure it looks mauve in real life but in the video it looks pink!
Claire always makes me feel like a kid with how under developed my palate is. Every time she eats something I think is still delicious she scrunches her face up. 😂
I would love to see Claire recreate something that she's never tasted before - like an international snack! That way we would get her reaction to popular non-American childhood snacks and they may present new challenges to recreate :)
the thing i love most about these videos is listening to claire explain things. it's very direct, simple, and easy to understand. i appreciate that as a novice baker and also a professor who does the same for my students! i could listen to claire explain baking techniques all day...
Curious that Claire tried making cake and then cookies for the crumb topping but not shortcakes? When the bars are supposed to be strawberry shortcake? Shortcake is denser and more crumbly, it might have given her the texture she wanted
Vinny and Cal telling Claire to just stop when she was tired made me low key emotional. Looking back, part of the shtick of Gourmet Makes was pushing Claire too hard (emotionally and also probably physically I imagine). I appreciate that Claire doesn’t have to do that anymore.
suggestion for another recreate: i know you've done a couple little debbies already but I'd love to see you tackle the star crunch. i cannot figure out how they're made at all! never had a strawberry shortcake bar (something about the look always put me off) but i would totally try one of the recreated ones!
I was so excited to see this in my feed today! We recently purchased these Strawberry Shortcake bars and I was so disappointed! They taste nothing like they did when we were kids. About ten years ago, Michael Simon made a version of these bars and it was one of my favorite desserts for years. BUT he went the easy route and used store bought ice cream and sorbet for the ice cream. His crumb topping was inspired! He used freeze dried strawberries and made your typical crumb topping with a bit of flour (if I’m remembering correctly.) I still have the recipe somewhere if you’re interested. I don’t think you can find it online anymore. Good effort on this one!
I’m sorry, but I’m so sick of yt chefs eating our peasant food and being disgusted. Like stop pretending like it’s so freaking terrible and you’re going to die. Like it could be an Oreo or an Arby’s sandwich and we know it’s not the best, but it’s not going to bite you. Please stop.
You people are insane! You complain that she calls out some shitty food that's mass produced by a literal billion dollar company, while teaching you how to make a better version? God forbid you learn how to make your own unnecessary desserts. Have you even tried that original product? It tastes like a chemical factory.
as a suggestion, one of my favourite snacks as a kid was the milchschnitte, a cream sandwich with soft chocolate cake slices. I think in english they're sold as kinder milk slices or milk sandwiches? might be too simple for you but I think seeing you make your own version might be fun!
Claire! I just wanna say that while I'm not big on baking at all, I've been following you from day one. Ice cream is my favorite dessert, but I find most store-bought stuff way too sweet, and your recipe and tips about creme anglaise have been my go-to for homemade ice cream ever since you recreated Ben and Jerry's, way back. I even bought a proper ice cream machine just for that, and for experimenting with flavors! My fave creations have been pumpkin/pink pepper and rosewater/ port wine ice cream. Much love to you

I was looking for a comment about the color of the hibiscus, I used to work making kombucha and I made some with hibiscus tea, and it is dark cool red

I’ve made this in ice cream form for my husband and this is what I did! I was literally yelling at the screen MAKE A CRUMBLE.

It's all about the last couple bites at the bottom of the bar. I think it was that the crumble coating was a little thicker there and just so tasty.

I use her focaccia recipe all the time - find it very easy and great to customize if you want to mix up the toppings.

Food coloring isn’t good for you, and she has shared her sentiment on that in previous videos.

46:45 I think Claire's would taste so good, but it kind of looks like a Chicken Cordon Bleu popsicle with an extra thick piece of ham in the center. 😂

My go to comfort videos!! In Mexico, we have some cookies called Sponch! They have marshmallows, coconut and strawberry jelly on them, they were super fun to eat and are very nostalgic to so many mexicans but I´m sure they could be way better! You can get them in many places in the USA. Also, maybe a recreation of some spicy candy or spicy snack would be so fun to watch! Thank you so much for the quality wholesome content c:

Freeze dried fruit is the best way to add fruit flavor to a cake or ice cream. Blend it to powder and then add it right in to your mix.

I think for my personal childhood nostalgia recreation I wouldn’t fuss with reddening the crumb coating, I think I’d just use chopped frozen strawberries. And in my head I remember the outside having a slightly crisp coating, so im wondering if something like Rice Krispies+cookie crumbs would work

I'm so glad that Claire started doing Recreates again!! I love that Claire is enjoying the recreation process... But I also love that we get a glimpse of what other recipes Claire reads and refers to. It's awesome to watch a professional baker like Claire approach her craft in a new angle!

Every time I watch Claire recreates it’s a very different feeling than gourmet makes. Claire recreats is very relaxing very nice.
Claire, I haven't enjoyed an episode as much as this one in a VERY long time. And to be honest, it's partially because I don't think this creation was a stunning success in the way that it could have been. And so I think it would be very interesting to see how you would approach and tackle this idea again, sometime in the future. And please know that I mean this with sincere admiration. Each creation you make is a story. And like a story, while some are singular, some have sequels. And I think this story, in particular, deserves a sequel. 💪😎👉
After taking time to recover, I would love to see a take 2 on this! Take what you learned and make a version that tastes like strawberry shortcake and maybe looks closer to the original!
We make a dessert based on these at the pastry shop I work at. We use streusel for the crumbs and it stays crunchy. I love these episodes so much ❤

I feel like a sorbet would’ve been more accurate for the core, or maybe using a strawberry jam? To me the core is more jammy/sticky than just regular ice cream. These are my fav treats and we can’t buy them in grocery stores in Canada, I can only get them at the resort store at Blue Lake, MB in the summers 🥰

the thing i love most about these videos is listening to claire explain things. it's very direct, simple, and easy to understand. i appreciate that as a novice baker and also a professor who does the same for my students! i could listen to claire explain baking techniques all day...
Curious that Claire tried making cake and then cookies for the crumb topping but not shortcakes? When the bars are supposed to be strawberry shortcake? Shortcake is denser and more crumbly, it might have given her the texture she wanted
Vinny and Cal telling Claire to just stop when she was tired made me low key emotional. Looking back, part of the shtick of Gourmet Makes was pushing Claire too hard (emotionally and also probably physically I imagine). I appreciate that Claire doesn’t have to do that anymore.

I was so excited to see this in my feed today! We recently purchased these Strawberry Shortcake bars and I was so disappointed! They taste nothing like they did when we were kids. About ten years ago, Michael Simon made a version of these bars and it was one of my favorite desserts for years. BUT he went the easy route and used store bought ice cream and sorbet for the ice cream. His crumb topping was inspired! He used freeze dried strawberries and made your typical crumb topping with a bit of flour (if I’m remembering correctly.) I still have the recipe somewhere if you’re interested. I don’t think you can find it online anymore. Good effort on this one!

as a suggestion, one of my favourite snacks as a kid was the milchschnitte, a cream sandwich with soft chocolate cake slices. I think in english they're sold as kinder milk slices or milk sandwiches? might be too simple for you but I think seeing you make your own version might be fun!

Claire! I just wanna say that while I'm not big on baking at all, I've been following you from day one. Ice cream is my favorite dessert, but I find most store-bought stuff way too sweet, and your recipe and tips about creme anglaise have been my go-to for homemade ice cream ever since you recreated Ben and Jerry's, way back. I even bought a proper ice cream machine just for that, and for experimenting with flavors! My fave creations have been pumpkin/pink pepper and rosewater/ port wine ice cream. Much love to you
