  • 1 Head of Cabbage, chopped
    1 cup onions, diced
    1 cup celery, diced
    1 cup carrots, diced
    2 garlic cloves, minced
    1 Head of Cabbage (about 5 cups), chopped
    1 (15 ounce) can diced Fire Roasted Tomatoes
    5-6 cups water
    1 teaspoon Better Than Bouillon (chicken flavor), optional
    1 teaspoon salt, optional
    1/2 teaspoon black pepper
    1/4 teaspoon crushed red pepper flakes (add more or less)
    1 medium sweet potato, diced
    1 cup peas, frozen
    1 cup corn, frozen
    1. Add 2 teaspoons olive oil into a large sauce pan or Dutch oven, oven medium-heat. Add carrots, celery, and onions. Cook for 8 minutes or until vegetable begin to caramelizing around the edges, stirring often. Add garlic and cook an additional 1 minutes.
    2. Add the chopped cabbage, fire roasted tomatoes, water, chicken bouillon, salt, pepper, and crushed red pepper flakes. Stir well. Bring to a boil over medium-high heat. Reduce heat to medium. Cover with tight fitting lid and cook to 10 minutes.
    3. Stir soup. Continue cooking for an additional 10 minutes with lid vented.
    4. Stir in frozen peas and corn. Continue cooking for an additional 10 minutes with lid vented. Total cook time is 30-35 minutes.
    5. Add fresh spinach, cilantro, and/or parsley to severing bowl before adding hot soup, optional.
    TIP: Store CABBAGE SOUP in an airtight container up to 5 days!
