- Clara's Poorman's Meal is one of my favorite dishes. It was the reason we began this channel. I could never remember just how Nana made it, and being a visual person, what better way to have the recipe than as a video.
This is a higher resolution version of Clara's Poorman's Meal video. It was shot in SD and now up-resed to HD. Not perfect, but a big improvement from the 2007 RUclips standard of 144p!
This was the very first meal we filmed for her show. We'll leave up the original and enjoy this one for improved clarity as well as a new ending message from Clara.
I recently rediscovered the original tape, dated April 10, 2007, just days away from its thirteenth anniversary. On June 2007 I posted it as the 4th video of our initial posts (saving the best for last, of course). At the time there were very few concept RUclips channels and it wasn't yet owned by Google.
As a filmmaker, I tried convincing TV studios that this was a great show idea. I was told that there wasn't really an appetite for a cooking show about the history of the Great Depression, hosted by an unknown 91 year old Grandmother.
I saw RUclips as a place I could make the show anyway and let people decide for themselves if they wanted to learn meals from the Depression and meet my amazing Grandmother. And you did decide. Thanks for watching and I'll try to continue to share Clara and her incredible cooking as best I can.

In this harsh economy, I just made the poor man's meal again for my family and they loved it! It's January 21, 2024 and all these years later, Clara is still in our hearts.
My Nana was Maltese from Malta, which is very similar to the Sicilian culture. She was born in 1913 and was so much like Clara. She passed away in 2006 at 93. The stories and life lessons I got to learn from her, and I feel so blessed to have been taught the old ways, especially with cooking.
Clara's videos mean so much to me. It's like visiting with my own Nana, and what a treasure she is! Thank you to Clara's grandson for sharing your grandmother with us. You have no idea how much it means!

@@granthopper4132 The British taking all of the other food the Irish grew, at gunpoint, was probably a bigger factor to the famine than one specific item having a crop failure. They had plenty of food, but the Crown took it all for their own profit.

Young people these days just “ok boomer” everyone over the age of 50 and it infuriates me. Listen to your friggin elders! They lived that long for a reason!
I feel like when my generation reaches this age, we won’t have anything good to say.
I would stop by the school lunch room before school opened and the lady who cooked would give me a piece of bread with peanut butter and jelly before all the kids came for breakfast. She knew I was hungry. That was fifty years ago.

My grandmother was born in 1923, and she would make meals from the 30s and they were delicious. You better respect people who grew in this Era, they had it hard than anyone else alive today. I respect my elders, where they came from and what they went through to get us here

Brace yourself. Future generations will have it harder than anytime in the past. Orwell's 1984 is almost upon us. This time there's nowhere to run, nowhere to hide. Digital ID, digital currency, 15-minute smart cities, biometric facial scanners, QR codes needed to grocery shop, RFID chip implants and other under-the-skin surveillance methods, etc. It appears the 'crazy' conspiracy theorists were right about everything. Anything that hasn't yet come to pass will eventually be fulfilled. As they say, the difference between conspiracy theory and conspiracy fact is about six months. With enough time every conspiracy theory is fulfilled.

You are blessed. My Mom a Tennessean and my Father R.I.P., from the Caribbean had many stories. What is considered organic now was their life, after they grew and slaughtered the food.

It's a pity that I only discover this when she has already died. I found out only 2 weeks ago that my own grandmother is still alive and I can still spend some time in this world together with her and I am grateful for that❤. I now watch such videos with a better conscience ❤

My mother told me the story of how one Thanksgiving during the Great Depression, her family had only one solitary potato to cook and eat. It was supposed to be able to feed her mother, her brother, her sister, and herself. (Her father had passed away before this.)
Her Uncle Jimmy surprised everyone by showing up with some fish he had caught in the river. My Grandmother's eyes were full of tears, and the family ended up having fish for Thanksgiving.
It's stories like that one, which make me appreciate whatever little I might think at times that I have.

I'm so sorry to hear about Clara dying. I loved her and thought she was a great example of what the depression did to the greatest ANERICANS EVER!i loved my Grandparents so much I would listen to their stories forever. I miss them so but was so rich from being with them so much!!!

She reminds me of my grandmother who passed in 2009. That generation survived, was happy to be alive, and put family first. No political bullshit, no fancy cars. Just life and family. I miss those people every day.

My grandparents lived through the Depression and the stories I heard. She would meet you at the door with hugs and kisses. The the very next thing out of her mouth was, “have you eaten, I got....”. I was about 40 and decided to ask why she always asked that. The answer floored me. “Well, we didn’t know if everybody had a meal that day and if they hadn’t, we made sure they had. “ This told me that they had did without a lot more than they ever mentioned. She quit school in the third grade to help the family survive. I learned more from her than the college I paid for. Dang, something dripped on my phone.
My parents lived through the depression also, most people have no idea what that generation endured. Back then you didn’t have (unless you were rich) “store bought” clothes. Flour was in pastel flowered 25 pound cloth sacks, my grandmother let the girls pick which sack to buy, because that sack became their next dress. They found a way to use everything, no such thing as waste. My Mom used to say “waste not, want not”.
I fully understand! I lost my dad 2 years ago, he was 98...the stories hecould tell! We take so much for granted.

Barely a minute in and Clara says she had to quit school because they couldn't even afford socks. This made me think of my Grandma (who was the oldest of 9 siblings during the depression). When I was a kid, she got me a Walkman for Christmas, it was the "big" thing I'd been wanting so I was thrilled. In my joy, I asked my grandma what her favorite present was when she was little and she replied, "I remember the day I got a new pair of socks. I hid them in the back of the drawer so my sisters wouldn't wear them. They were my prize possession." A pair of socks.

Yes, the value of sox knows no bounds. Growing up, we always got new socks and underwear from my maternal grandma. She made sure each of her grandakids had socks and underwear. She had eight grandkids... It makes me mindful to buy a couple extra pair to donate. People caring for people.
We celebrated Dia de los muertos today and this is the meal we closed out the night eating. Blessings to her family and remember this soul who shared her life with us viewers
When you think it about, it's really incredible. Clara passed away 7 years ago and her videos are needed now more than ever. It's almost as if Clara was preparing us for the hard times we would face in 2020 when she wouldn't be here to help in person. God bless this wonderful lady. She is missed very much.

Also, when you worked hard, and were hungry after a long day, one wasn't quiet so picky. Love her! I totally would protect my garden like she talks about! You work hard to get a good harvest! It’s not enough protecting from insects/disease, and wild animals/birds…but to have to protect from your neighbor is ridiculous!! No manners. Reminds me of my great grandma! I loved her life stories. She saw inventions of radio, tv, cars, airplanes, restaurants, movie theaters…you name it really. She road a wagon to take kids to school and church and occasionally to town. Work a farm, take care of ten kids. She saved money to buy a singer sewing machine using foot pedals. She gave it to me…not a scratch on it and it still works great. She was a great dress & quilt maker.
I never heard her say a rude comment about anyone. She lived just fine with my grandpa until she was 97.
Grand Parents are such good comfort for children growing up.

@@skilladunge No I’m not comparing it to the pandemic. I was a teenager when I watched this and I had a stable living environment at the time. I’ve been homeless for about a year and I’ve only recently been able to afford an apartment with a few roommates. I need relevant advice to help myself survive off the little that I have and videos like this helps. people say “just eat ramen and bologna sandwiches” but ramen is expensive per meal and sometimes I have no where to store items that need to keep cold

She was the housewife and obviously worked very hard to support her family through tough times and good times. I couldn't believe what I was seeing, a lady of her age cooking a big meal. In my opinion, you have to be over 60 to appreciate mums of those time and I loved my mum so much. Cheers to the old mums.
I'm almost in tears from laughter, love and a touched heart. I had a grandma just like her growing up. God I miss my Grandparents. Thank you Mrs. Clara. The emotion I felt watching this was a release of pushed down feelings freed from the depths of my heart, and I am blessed for the memories you brought back to me. It's really great that this lady and her grandson made these videos for future posterity, as so much useful knowledge & wisdom has been lost over the generations, its good to see this being knowledge being shared in this day and age. My grandmother was the same depression era generation as this lady. My nan used to make homemade wine and homemade jam and pickled onions, I remember as a kid my nan's homemade jam and homemade pickled onions tasting out of this world best jam and pickled onions I'd ever tasted.

Well today she can afford to put a sunny spin on it and laugh it off. Enough time and distance have passed so that it no longer affects her. I am sure that back then, as she was going through it moment by moment, she probably didn't always feel so positive about it. I am sure there were alot of tears and anxiety about their future to go with that hardship.
@@thegreatbamboozler4837 You have to understand that she and everyone who lived through it lived in a different time. They were usually already used to living rough. Maybe not as rough, but things weren't nearly as easily accessible then, even without the Depression. You can't compare the way people lived the to the way they live now. Yes, it does suck that people think they can't live without their phones or wifi, but today's generation has grown up with those things. Anything you grow up with only to suddenly lose does make you feel crappy.
🥺 I was struggling to keep myself and another person fed 2019, and 2020. I found this video, and made Clara's Poor Man's meal. Cheap and filling indeed, thank you for sharing! ❤ I'm not as bad off as I was, but today I wanted to make it again.
My mom make this a lot, then put in some eggs to scramble. I still make it sometimes, if I am lazy and cold in the winter. lol. Filling and delicious with onions.
We ate this all the time when I was raising my kids and the wife was deployed. I used summer sausage I made from deer and other critters for the meat. The youngins liked it well fried.
Get ready for worse times. You can grow and raise everything that is required to make this meal. At least try to grow some onions and some potatoes oh, and it will teach you a bit of Independence and self reliability. We don't have much property, but I fill every patch of dirt I have and it's 1000% worth it

I personally think that those who give these kind of videos a "thumbs down" have never had to eat just what was available, they think the world is their oyster and they can have what they want. Back in the depression there was no going to the store and just picking up snacks, whatever you desired to eat. Times were very hard and the people who survived were hard too. They had to be hard, to survive.

I watched this with my children a couple of years ago and we loved it. We ate this for lunch that day and they have fixed it countless times since then! Love this video and this lady! What an amazing generation. ❤
I love Clara's story about the neighbor helping herself to her garden. "I didn't think you were so touchy". So funny! And so cute! I grew up in an Italian neighborhood and all the old folks had gardens that they loved! Clara is a true classic!

How great that is. I am excited to watch more. What a wonderful tribute to such a lovely lady, She has lovely skin from the time of this video at 91 yrs. old. Back then I'm sure the ladies knew all the home made facial things to use on skin, etc........that would be a neat video if you run across something in your files. MY Mom used baby oil, and had beautiful skin, I bet your Grandma had some neat things she used from back in that day, If I knew what they were I sure would try them. I make a version of this that started out as making Clara's poor man's meal but there were days we didn't have hot dogs or fresh potatoes so things got improvised. We now make ours with 2 cups of reconstituted shredded hashbrowns (found real cheap at Sam's), an onion, and a can of spam diced up real good. You have to brown the spam though. It tastes meh if the spam isn't don't just right. So I usually fry the onions and spam together until brown and then add the reconstituted hasbrowns with more oil. If we have eggs, we might add two scrambled eggs for each person eating. Drizzle on some ketchup since opening a whole can of spaghetti sauce for a couple spoons just wasn't feasible. My kids absolutely love this meal. Our version came about sort of like nick names do. Before you know it you have something entirely of your own but you weren't planning it lol. I love Clara's version also.

My grandmother grew up in this era, she had to quit school at 13 and work in a factory to help support her family after her father passed. It was tough to listen to some of her stories but it built who she was and that's amazing. She made $17 a month and gave $15 to her mom for house bills and family needs. Hardworking and selfless does not even begin to describe this generation. I am thankful for my grandmother, miss Clara and anyone else who imparts the wisdom of their experience onto younger generations. Thank you!

I wish more people thought like you. I am a nurse and hear people say things implying old people have no value all of the time. It really bothers me. I encourage them to sit and listen to an old person. All they know is hard work and sacrifice.

The 1930s was a more simple time, even though they were tough due the depression, it was still more simple. And I love films from that era, Clark Gable, Jean Harlow, James Cagney, Loretta Young, Laurel and Hardy, The Marx brothers, it was a golden age

My father was born two months after the Stock Market crashed in 1929. He was the youngest of 11 children in a family that was already poor before the Depression hit in Minnesota. When his mother put whatever food they could afford on the table the family hit it like wolves, and he got the scraps being the smallest. He was a skinny kid, obviously. He eventually grew into a man 6'3", a Korean War combat veteran, and he ATE once he could afford it. He was a big man, but not obese. I remember that he would eat ANYTHING put in front of him with gusto, and he said beggars couldn't be choosers. He would eat pickled pig's feet, tripe, liver, you name it. Tough man made by tough times. I miss him with all my heart.

My mother was born in 1929 also. No one left the table until the plate was empty.
Food was something not to waste but nothing was to be wasted whether food or anything else.
Today I still remember everything she taught me and I apply it.
I miss her deeply and my dad. They also served in the Korean war, dad Navy, mom Army.

Clara reminds me so much of my mother. My mom passed away in 1993. We just honored her passing last week, she would have been 96 years old now.
Yes, many of Clara's mannerisms and food preparations were identical to mom's.
Be evermore thankful for all the great memories you have of your grandmother. My maternal grandmother passed away when I was just three years old. I can remember a few special moments we had together. My paternal grandmother lived in another state and I didn't have too much interaction with her or grandpa. We knew they were family but, they were almost like strangers to us.

My mother was raised with six brothers, she was the only girl. My grandmother lost three babies before mom was born. There were two girls and one boy. After grandma passed away, mom basically took over the job of raising her younger brothers. That was a heavy load to bear for a young wife and mother.

My grandparents grew up during the Depression and they must have taught this to my dad because he made this for us too. He would use Polska kielbasa instead of hot dogs.

I just lost my great grandmother today. She was 94. Watching this just flooded my memory of her cooking. It always smelled so good and tasted even better than it smelled. I will definitely miss her cooking.

It’ll be two years on Thanksgiving that I lost my grandmother she was 97 and I still pick the phone up to call her... I just turned 51 and blessed to have had her. I still have 1 grandma left and she will be 89 in January. Still getting around but Alzheimer’s is really setting in now. grandmothers always know how to make things better and dearly missed when they are gone.

Reminds me of my childhood, filling the bath tub, putting our cloths in the tub, standing in the tub stomping on the cloths, the good thing about this we came out clean too.
I didn't live as bad as a lot of people, but in 2017 we had to divide 3 filets of chicken with four people, and in the house was two developing teens, me and my cousin 😔
Thankfully those times are gone and I can eat until I'm fed 😋

I'm on a very limited income due to disability - this is the type food I eat regularly. I put it all in my rice cooker (that can cook everything a crock pot can, just a LOT faster) and the food comes out all brown and nice and luscious. Thank you, Clara, for all your ideas over the years.

I'm latina and we call this salchipapas (my country) and is like our fast food. We add cheese and sauces. You can find different versions of this depending of the restaurant (you could be paying $100 for a plate in a high level restaurant or $3 in a food truck) or the country. I like it with BBQ, pineapple and cheese. Try it with sauces, it makes it better, and remember, you could be eating like a Queen in another country. There is always something to feel bless by.
My mom made it the other day. She puts chicken in it too sometimes.
My daughter just sent me a text asking for this recipe. I used to make it when she was little. She is now 22 and living in a different state, trying to survive as a new college graduate. I know she is going to be excited revisiting this video from her childhood. RIP Clara!
I'm only 65, so I wasn't around for the depression, but my parents were. My dad recalled alot about that time and going out early mornings to harvest dandylion leaves and flowers. My grandmother would bread the flowers and fry them and the leaves were the poor man's spinach. Several of their neighbors had chickens that would sometimes lay eggs in the grass across the street so they were fair game!!! Thanks for your channel, it brings back good memories of my parents and their relatives sadly all gone now. I think we were all better for their experience, it taught me the true value of things and what is important. Thanks again. Hugs!!!

When I started teaching Gr 10 Canadian History in 2008, we watched the vide and borrowed a hot plate from the Science lab to make Poorman's meal. Those kids, now in their late 20s still remember that day. I haven't taught CHC in a number of years, but I'm back to it again. Not in Toronto anymore, but in rural Ontario. Tomorrow, we start our Depression unit. I've changed it up a bit - students have choice in the assignments they do. If they choose this one, they will make Poorman's Meal, Baked Apples, or Twice Baked Potatoes at home......and make a TikTok cooking video. Thank you Clara, for inspiring me to teach outside the box, and creating a wonderful opportunity for my kids. You are missed!
As an Asian who is living in the US, sometimes I found those kind of recipes are such a savior in my life. Life could be hard sometimes, but hey, we have poor man’s recipes to warm our hearts and fulfill our stomachs ❤

Thanks for your stories. I love hearing how people got along during hard times and easy times. I'm 74, so my parents grew up around the time of the depression. My father was a firefighter in Dearborn. He did his fare share of cooking at the firehouse. We had mashed potatoes at home with almost every meal. We even had potatoes with boxed pizza. That was some thin pizza. I grew to love potatoes, but when I married, my husband, who is younger than me with different family culinary experiences told me he didn't want so many potatoes. Potatoes weren't on their every day list. To this day, I love mashed potatoes. Now my daughter only has them a couple times a year, but when we make them, she adds garlic, sour cream, cream cheese and butter. She usually gets the leftovers after Thanksgiving and Christmas. That's ok with me.

I remember my dad cooking a big pot of stew for all the kids who lived in the projects, one kid, named Martin appeared everyday around 4 and was the first to eat. He was always hungry and my dad always had something for him.
