The Lost Episode.
In 2007 four Great Depression Cooking episodes were filmed.
Tapes from the fourth episode, “Pasta Aglio e Olio (Garlic Pasta),” went missing and the episode never aired.
In 2009, with the help of Clara and her granddaughter Abby, we attempted to recreate the missing footage.
Now that episode will finally appear on RUclips for you to enjoy.

I was just thinking the same thing. The world needs Clara! Thank you so much for bringing us these lost bits. I took care of my mom for the last three years of her life and I remember doing the same thing with her and her box of addresses. There were only a very few left when she was done. We lost her in 2018 when she was 94. I loved watching Clara's videos with her. It was some of our favorite times together. She loved Clara as much as I did.

My grandma always told me you stay married until death when your Italian. So she probably knew not to associate with the person who re married and that's why she ripped up the card if she was brought up old school .

This is one of the oldest dishes in Italy! Pasta, oil, garlic, lemon, parsley, and these days, red pepper flakes! My Nonna would be proud
Is it just a squeeze of a lemon wedge? I love this dish, but never paid attention to how it was made. I do like the hint of lemon in the garlic pasta of my memories.

Yeah, just a splash will do. But experiment. It's your recipe! Like, I will also add a blend of herbs, not just parsley. It's so good.

My grandmother was of that era. While in the USAF I happened to be stationed not far from where she lived as a widow. I'd visit on a weekend, and her greeting when I arrived was, "Well hello, are you hungry?" What a strange greeting I thought until during our conversations i began to understand that in the early 1900's being hungry was a common pastime.

Our elders are our treasures. This woman reminds of my grandmother that passed away 6 years ago at the age of 90. She was amazing cook and the whole family would ask her to show them how to cook her amazing dishes she made for her kids back in the 40s - 60s. Treasure your parents and grandparents and absorb all their knowledge and wisdom. When they are gone you will sorely miss them.
I worked for a home health care agency for many a year. As a child I always wanted to be around my grandmother and great grandmother, Clara reminds me alot of my " Nanny" sadly I have to say with a very few exceptions alot of the elders I met acted very entitled and owed something. Obviously very different from the attitude of Clara and and my grand mother and great grandmother. Whats wrong with people? Rip Clara you are a treasure..Watching your videos bring me comfort and soft fuzzy feelings.
She reminds me of my Memere. My great grandma who helped raise me. Even her face is very similar. I sure miss my great grandma and these videos make me feel better.

I love this woman. My grandmother was an English honors teacher for 34 years at Vanguard High School in Ocala Florida. I love and miss her so much but I love this one cuz she reminds me of my grandmother
She reminds me of my favorite aunt, Aunt Mary, whom I loved being with more than my own mother. She was my dad's sister and the best Aunt in the world. I loved her cooking so much and would eat it now above any chef in the world if she was alive to make it. I love and miss you Aunt Mary.

My grandma was born in 1908 and she lived thru both wars, the depression and died in 2002. She was very simplistic, cooked for her and her dog, but saved every penny she didn't need , rode the bus, never had car insurance to pay, never had car payments, used the same décor from the 40's lived life simply but rose at the same time and retired at the same time, always ate oatmeal, gardened her entire life, never drank or smoked and lived to a ripe old age. I loved my grandma and Clara reminds me of her.

@@AD-jx1vl I was 17 in '07 so yeah I wasn't too worried about bills just yet, but if I could trade that economy for today's I'd do it in a second.
Had to smile with the pasta and the bread, my gran also had bread with every meal, I asked her why and she said that you allways clean your plate with a piece of bread, nothing wasted . Sad as it was those people had a lot of wisdom to share, hugs and blessings.
I’m 45 and I was raised to finish everything on my plate. Some things get passed down from generation to generation!

When my brother's wife passed away, his ten year old son would call his Nana (my mom) for cooking recipes. His older brother and he had already learned to make some of their late mom's recipes. (My brother worked 3 jobs to repay hospital and funeral debt.) Standing on a wooden step stool with a dish cloth tucked into his Wranglers, he would concentrate on stirring and tasting various pots. He wasn't allowed to use the oven. The youngest was barely four years old but her Big brothers always took time to teach her how a family recipe was made. There's nothing written down but with eight grandkids, the recipes won't disappear.

I've made a fudge recipe that my dad made every Christmas. I believe he must've learned it from his mom, because she still made it for years! He never made any other candies, but his fudge was to die for! I've now made it myself, and my sister and kids do too. She was iffy about it, because she didn't remember much about what he put in or some of the steps. So when I reminded her, she was fine! I'd say: "Do you remember when daddy did this, or added that? She and I used to watch him making it, and would "help". Then her kids wanted to learn how to make it! Also, my 21 year old granddaughter wanted to make it! And to make a cream caramel recipe I learned to make years ago, in school cooking class. So before last Christmas, I was able to teach a candy-making class for a couple of young ladies! (granddaughter and her roommates) There was fun to be had by all, and we taste-tested it when it was ready!
We are in the great quarantine depression right now. Clara went through those days and now it's our turn. God bless Clara and family for these amazing depression recipes!

I’m watching Clara two days after the passing of my own Grandma and she reminds me so much of her, it’s a tremendous comfort. My grandma was a true Londoner and shaped by the war rather than the depression but they’re both so similar with their gentle sense of humour, careful preparation, and the appreciation of all the small things in life that I think only living through such difficult times can give you. If they happen to meet ‘up there’ I think they’d enjoy a good laugh over some good food!

This reminds me as a child sitting with my grandma at the dinner table going through pantry ingredients to discover what was available to make. We have recipes labeled as GD&GM (granddaughter and grandma), dated , mistakes and discoveries that were made. It was super fun. 🥰

When i was young, we used to have a "dinner bell" on the outside of the house. My grandmother would ring it so we all knew it was dinner, may she Rest in Peace, also. She was born during the 1918 flu and lived to almost 101, passing over a year ago. These videos are invaluable with Clara's knowledge and cooking. They preserve for those of us who could not.💕
My grandma would tap the metal spoon on the sink as the dinner bell... Sometimes i do it & i live alone 😫 gotta have a big metal spoon

I just love Clara she’s reminds me so much of my late grandmother. That generation worked hard , had pride , love and confidence despite there long long years of hard ship . I admire there hard work , making something out of nothing and having pride in it . Those days are pretty much gone .

All the rest of us suckers bought expensive pots with handles. Clara’s keeping that money for herself and using pliers that work just as well
Funny thing is I've seen designer pots and pans without handles, where you use a detachable handle that kinda grip like a plier. I believe the idea is to save room in the cupboard, since they stack more easily.
So, Clara was probably on to something there 😄

Handles are a safety thing for me.
Save and use pasta water to stop the garlic from over-cooking and it makes it more like a sauce and the pasta won't be "dry". Love Clara, she reminds me of my Mom who I miss terribly. :(
We would pour water in a coffee cup and put on the tabke with the pasta.
Clara ( Nana ) was and is a tremendous treasure. I'm so glad Christopher her grandson decided to share her and her wisdom and recipes. I love how she tells stories along with her cooking.

This is one of my most favorite dishes to make. There is no such thing as too much garlic and your kitchen smells so good when making this! I add more parmesan cheese than I should, and I squeeze a whole lemon and throw sauteed mushrooms into mine. So delicious! I love seeing this from Grandma Clara :-)
I had my version of Clara in my Salvadoran grandma who was from the countryside, didn't have much in the way of material things. She could whip up the most amazing meals in no time. Always had food ready for anyone stopping by. Lovely gentle soul but feisty when she needed to be.

Every time I watch one of Ms Clara’s videos I pray that I am able to bring joy into my family like she does. My grandmothers never cooked and certainly didn’t enjoy cooking. Meal times with them were never a pleasant time. I raised my children to love our meal times and it was our most bonding moments! I have 7 children and they all love coming home for a good ole fashion home cooked meal! We laugh! We cry! We share! My daughter in laws and son in law don’t cook. It’s sad for what they are really missing.

Clara reminds me so much of my own Sicilian grandmother who would be 102 this year. She grew up in NY during the Great Depression and taught me to cook many of the same recipes, (peppers and eggs, cucidati and pasta with garlic and oil), that Clara cooks. I just know that if Clara and I knew one another, we would be great friends! Thank you for posting another terrific video.

My Mom made this. I Ioved it. She reminded me that even in Italy, these were considered poor man's dishes.
Beautiful Clara filled with laughter while she spoke to her daughter in law was simply delightful. My Papa also made this dish and if his tomatoes were in season he would also dice them and quickly add them to the garlic and oil. What a precious legacy Clara has gifted everyone with her recipes. They made be made during the depression but nowadays you will find many of Clara’s recipes being used in top restaurants.

@@meggrotte4760 Biden won't be the cause of the depression, it started mid 2020, the start is out of biden's hands, Biden will have to try and repair it all tho. Don't bother trying to argue, the "show of force" by pseudopres was enough, Clara would be greatly saddened but at least she extended her wonderful knowledge so now many of the already impoverished Americans have some delicious hope for good quality meals on an already tight budget.

My Mom was born in 1937, and was a girl during WWII. She learned the skill of using everything as long as you could and throwing nothing away! To this day I try to do the same ☺️
@@susanhewitt6359 Your mom was 10 when I was born but I still learned and have kept some of those frugal habits that my mother had to live with during WWII. My dad was serving in the Army at the time. He came safely home, thankfully.

I have my grandmother's recipe boxes, like Clara's address boxes. I also found a book that her mother(my great grandmother) had collected recipes in by gluing them to the pages... handwritten. ❤

truly I have never felt more blessed to have grown up in poverty because survival in times like this brings out a skill I forgot I had !! I ate rice and potatoes all last week and couldn’t have been more content.
