Learn how to make a wedding cake in this three part wedding cake recipe series. In this part, we review how to stack and 3 tier wedding cake.
Part 1: • How to Make a Wedding ...
Part 3: • How to Make a Wedding ...
Materials Required
• 6" double layer buttercream coated cake
• 8" double layer buttercream coated cake
• 10" double layer buttercream coated cake
• 7 Wooden dowel rods (or plastic)
Procedure
1. Place three rods into the 10" cake in the shape of a triangle, about 3"-4" apart. Make sure that the rods will be underneath the 8" cake that will be above the support rods.
2. Mark the rods with an edible pen, or score with a knife, just below the top of the cake. Trim the rods using a knife, saw or sharp sears to the trim line.
3. Reinsert the rods into the previous holes, and ensure that they are flush with the top of the cake. If they are not, re-trim them.
4. Place the 8" cake on top of the support rods.
5. Place three rods into the 8" cake in the shape of a triangle, about 3"-4" apart. Make sure that the rods will be underneath the 6" cake that will be above the support rods.
6. Repeat trimming process of the rods and insert them back into the holes that go through the 10" and 8" cakes.
7. Place the 6" on top of the support rods.
8. Trim one rod to fit below the surface of the top of the cake, and press down into the cake through all three layers of cakes. This will prevent the cake from moving.
9. Using a small amount of buttercream, patch the hole at the top of the cake and spread smooth.

I wanted to say thank you for not only being specific and informative but also just cutting to the quick..you are the only one that I have seen that does not take a lifetime to explain the how to's... :)
To all the people thinking you cut the cake with the dowels in. Only the bride and groom cut into the cake when it's stacked. Once you are ready to serve the cake you un stack it. Remove the dowels and then serve it to guests.
Lynn B i was wondering about that 😅 thanks lol
Four years later and still helpful! Thank you!
Lol. Thx

how do i download your work to try?
Can you use skewers instead ow dowels?
Peaches Bapoo Just for the size and weight of the cake, I would recommend not using skewers, and going with dowels. You definitely need something sturdy holding the cakes together, all that cake ends up weighing a lot more than you'd expect.
Lol

What a wonderful video! Thank you for all the details! I always wondered about the cardboard bottoms, so glad I listened and heard you say they stay underneath the cake. Thank you again!!!!

You make it look so easy! I'm sure at some point I would have rolled a tier across the counter! Excellent job!!
Thanks!
I.....love that cake
Beautyful
muchas gracias
another thing I was wondering is how soon before the wedding should the cake be made and how would you store it to keep freshness?
Also wish to knw
2 to 3 weeks last min depending on the decorations and labor that need to be put into making the cakes. From my experience
@@anandaperez2985 so you freeze it,for two or three weeks? I have never done it,but I will give it a try. I heard they get more moist after you thaw it for a few hours before frosting it for the final decoration.
After baking and removing from the pan, wrap your cake in saran to sweat the cake, it keeps in moisture and tastes so moist! I make cakes 5 days ahead
Thank you for this tutorial. I saw a video where a baker used parchment between the laters and no cardboard and that freaked me the hell out. I have a three tier to stack Saturday
sooooo cool
Hi I love your videos
A good tip is to place the dowels, mark one, and cut the rest the same size as the marked one (as opposed to marking them all) That way if your cake isn't *perfectly* leveled (or squishes), at least the dowels are the same size and the cake will sit level on those. Great series! Loving the info you're sharing to people just getting into caking :)
Good tip.
Great video! I imagine that if you are stacking single layers the dowels are not needed. Thank you for these videos : )
Thanks
Super
I like the cake
AWSOME video! Very easy to understand and helpful! Thanks so much!
is awesome
For dowels, I get kebab skewers in the kitchen section at the dollar store (99cent) and they work perfectly and are Much less expensive!
You must be Canadian. I can tell when you say the word "out". Lol. Great videos!!!
thanku dear
For everyone that scare of wood dowel use bubble tea straws. They support the cake pretty well but i would suggest using more for larger cakes.
Hi Jen. I love your videos! Just a quick question. Have you purposefully made your buttercream frosting firm? It looks like its a little firm, just wondering if that's for a specific reason? It almost looks like white chocolate ganache :0) Thanks for these wonderful tutorials! Nick x
nice
can I chill my cakes before stacking to help smudging.
I know there is more than one way to do things but it has been my experience it is best to mark one dowel and cut all the same size do this for each tier . When you mark and cut each if your cake is not perfectly level you may have a disaster on your hand. . I have had to take co workers cakes apart at the last minute because they cut the dowels like s your video.
can you please make a video on the different ways we can use pillars😊
You make it look so easy, thanks. Also I'm glad you didn't use fondant. Fondant tastes so bad. lol
i've been doing it wrong. Now I know the correct way!
SimplyBakings Just because you haven't been doing it the way I have been doesn't mean that you've been doing it wrong...if it has worked for you, why fix it??
Cookies Cupcakes and Cardio haha, true. But I would feel better if I pushed the rods through the cakes, I never thought of doing that. :D
Once you stab the wood stick through the card board, wouldn't there be a little piece of that card board in the cake? What if someone swallowed it? :(
No
Nickesha Powell Okay, thanks
BeatlesQueen good luck making ur cake
In my head I was singing "we're stacking, we're stacking, we're stacking wedding cakes" as I watched the opening of this video. I kept staring, however, at your eyes. They look very purty.
Wait, hold up pardner. HOW did you know exactly where to place the second tier?Did you just use The Force? Or did you secretly mark is head of time and aim for that? Secondly, were the cakes frozen? Mine would have fallen apart, all over the cake, with dripping frosting, and it would have been a disaster. I really dislike the heat and humidity here. Okay, back to the video.
OHHHHHHHH It was a cardboard under there. okay that answers my question of part 3. Nevermind answering that one ;)
Knowing my luck, one of my dowels would cram into the one below it (from tier 2).
Okay, on to part 1!!
***** You were looking at the blinking, I know it!!!!! I always, always, always freeze my cakes. Any cake decorator, especially wedding cake decorators who say they don't are lying....or have yet to discover the difference between working on a frozen cake and a thawed one. The smaller the gab between tiers (in this case 1" around) the easier it is to place the tier. When there are larger gaps, it's harder and I have to use a ruler for placement. It has come with practice....I have done many wedding cakes in the last three years!
Cookies Cupcakes and Cardio Okay. I just really REALLY need to get a freezer. But I also need a fridge. But putting a refrigerator in on out back porch seems a bit much? And I'm afraid it would become "overflow" for crap like we have in our regular fridge HA!!
It was the blinking. LOL
Can I use straws instead of dowels?
When is the video about decorating the cake??my mom said your videos were helpful and one day I had a party and we made the recipe of the cookie shots with milk IT WAS SO GOOD thanks you
Einna Faith Queri Stay tuned!
I would go with 4 dowels for the first and second tier to get it really secure
Hello, I loved your video series on the wedding cakes! What are those metal sliders you used to stack the cake layers and where can I find them? Thanks
so helpful! When guests cut into the cake would they get a piece of the dowel in it? or when you cut it is the dowel too in the inner center to be apart of the slice?!
I saw the baking one I love it I won,t to be a baker win I grow up.
sooo cool!!! =P
My mother wants an m & m cake, it has three tiers with two m & m figures at the top fighting over a bag of m & m's which spilled over the side of the cake, this video definitely helped me figure out how to do that!
Hi love this tutorial!! How many servings will you get out of this cake? I will be making my first wedding cake and I need to serve 200 people
I have some really important questions, I am hoping you could answer for me! =-)
1. After you bake your cakes how long do you have them sitting out before you double wrap them to stick them in either the freezer or fridge? and once you are ready to decorate them are they still frozen or unthawed?
2. Once you have finally iced your entire cake and have tiered them how do you store them a day before a party? (leave out or back in the fridge)
3. Once you have iced your cake and added you decor is that icing hard? I am doing our anniversary cake and on a budget. Please please help, I love your channel and admire your talent!!
Andrea Valle You have to let them cool completely before wrapping them. I usually decorate while they are still frozen. I have 2 cake fridges so I store them in there. Yes the icing hardens.
For the 6" and 8" cake did you used the same size of cake boards?
Hi your work is awesome. What are the sizes of the cake.
this is so helpful! Just a question, for how many persons is this cake? I never know how many slices I can get out of a cake, do you have any tips for me?
Hi! Love your vids! One question. How long can ur buttercream recipe lasts without melting at room temperature? How many days/hours?
Nicest lady!
Sometimes I think: “what if I actually made this”
Do u refrigerator the cakes right before you take them out to bbq stack?
Hi. I love your videos. I have a question. Which type of board you use in the middle of each tier? Thanks.
hi, how do u insert the centre dowel when there are cake board at each tier of cake?
It has a pointed end so stabs in the card as it goes.
I was thinking the same thing...she must be using a very thin board a paper like thin
Yeah same thought
Nice please notificat more
