- Expert chef Frank Proto from the Institute of Culinary Education and home cook Beth are swapping materials and hoping for the best! We equipped Beth with $75 worth of ingredients and Frank's recipe notebook before asking her to recreate his gourmet grilled cheese. To lend a helping hand, food scientist Rose dialed in for a tutorial teleconference slash pep talk. On the other side, Frank received $7 worth of supplies - usually more than enough to make a solid grilled cheese. But what tricks does he have up his sleeve for improvising his way up to gourmet? Tune in and find out who succeeded under these mixed up circumstances!

Sorry for your loss
Yeah I used to make cookies with my grandmas all the time. I miss them dearly
My abuela and I were a menace when cooking as I would cook and my grandma would add the most random ingredients to a recipe we always made. My family was always weary when we were in the kitchen. Love you, abuela, wherever you are!💝
P. S. Somehow the expirements ended tasting real good and I ain't spilling.
Same man, my grandma was alive until two years ago but even tho she was alive she was always sick so we had to take care of her, RIP
My mom had her first kid at 16. She’s a young granny
I love how Beth was also aweing at Frank's ingredients, calling them "beautiful" and just overall appreciating the very nice ingredients she got to use
"Dash of super expensive olive oil, pinch of salt, dusting of fancy flour...and now I get to keep the rest for me."
14:42 I'm shocked that Frank sent a loaf of bread instead of a packet of yeast, 542g of flour, 11g of sugar, 2 1/2 tsp of salt, and 379g of luke warm water.
Himalayan salt, pure cane sugar, specially grown fancy flour, and water collected from Alaska's oldest glacier.
LOL, he only challenge himself. He won't challenge another chef.

Too much work, it's a grilled cheese, the point of it is it's fast and simple, not to use the same time and effort you do on a Thanksgiving turkey.
Simple 5 minutes: Cheese, seasoning, bread, grill it, done.

In Spain we generally use 3 types of olive oil: The extra virgin olive oil to dress salads, the virgin one for sauces, creams and such, and lastly the "basic" olive oil is used to fry/deep fry stuff. Using the extra virgin for that would be a waste! That oil reaches a lower temperature point so your food could not get crispy, just mushy... Also, most of the essence of the oil would get killed by the high heat!

God, Frank's skill on price guessing is absolutely out of control.
A chef has to know exactly what the restaurant spends before they can possibly know how much the restaurant is making. He's a beast lol.

Frank pridefully showing his princess mug and Beth talking about her grandchildren gave me a great amount of joy. thanks for the dopamine
It's a shame that these aren't set up so that the two can taste each others results.
Frank had the outside portion of the bread left over. He found a way to use it as a side snack, but I have another use for extra bits of bread (such as the heels of a loaf). I put it in an open baggie inside of a container of brown sugar. It keeps the brown sugar moist and loose, non-clumping. You can even do this after the brown sugar has become a solid block. 2-3 days will make it loose and easy to use again. Be sure not to leave the bread in for longer than that. It will have become rather desiccated and can start growing mold if left in longer. This bread trick also works with raisins, dried cranberries, and the like.
BTW, I have used ricotta in grilled cheese as well, and it was great. My best grilled cheese has ricotta (blended with some red pepper flakes and minced sun-dried tomato), provolone, and olive tapenade on Italian bread (cut on a diagonal to get a decent sized sandwich.) I call it my puttanesca grilled chesse, as I was thinking about penne puttanesca when I put this together.
