- Expert chef Frank and home cook Lorenzo are back, swapping their recipes and ingredients for your culinary viewing pleasure. We gave Lorenzo $98 worth of ingredients and Frank's notebook to make the best burger he could (with an assist from food scientist Rose!) On the other side, Frank received $9 worth of materials and tried to improvise his way up to gourmet. Who achieved the most impressive results under these mixed up circumstances?

Most of us already have a lot of these ingredients in the house so it only seems extremely expensive because they bought all the ingredients fresh and new from the store. I bet they already had most of these ingredients in the house/studio but for these episodes they buy everything brand new.

I've always appreciated how Frank never talks badly about cheaper ingredients.
Take Gordon Ramsay for example. Earned 23 or 26 Michelin stars with his restaurants. A cheese soup costs like 80 GBP at one of his places. BUT
Watching him e.g. in India learning from village people local curry or cooking a simple scrambled egg he's enthusiasm, excitement is awesome, and how he was excited when made scrambled egg for local villagers in Peru and was clearly excited if they would like it.
Now that is the passion for the profession. For them every ingredient is an ingredient. They are aware if any of them is expensive, but will treat the cheap ingredients with the same care.
And this applies to Frank as well.
What is important is the end result, the outcome.
And that is why they are so great. And did not became snob with food.

I find experienced chefs are often much less pretentious than your average foodie and can see the value of simple or even straight up trashy food. It's like music, sometimes Beethoven or whatever just isn't what you want to listen to and you wouldn't try to play it at a punk gig
most of the time you like the high production values of a popular band on the radio other times you go listen to the local garage band because you think they have talent.

That was so much fun. Making a burger today. Picked up a lot of useable steps, from how to cook the burger, what you put in the burger, how to cook with the bun, to the White Castle onion trick. I learned so much today that certainly will hold me in good stead in the future.

Edit 2: I’m concerned for you guys. I really am. I don’t know much about cookware but this is entertaining.
Lorenzo had the better pan (cast iron vs. Frank's crappy stainless pan), and the better stove (gas is always better than electric because you have so much more control over the heat).
@@ArcadeSchool cast iron or stainless pan was their choice, Frank's burger is relatively thinner than Lorenzo's so he used nonstick pan cause it conducts heat faster and more even to make his burger crispy, also a lot of pro chef prefer nonstick pan rather than cast iron.
@@GeralgiCaesario I don't know what universe you cook in, but stainless steel is by no means nonstick...cast iron is actually much closer to a teflon coated nonstick skillet because when you season it properly you're creating a layer of polymer from the heated fat.

I love that Frank doesn't act like he's too good for cheap ingredients like some chefs love to do. For instance, lots of chefs love to act like they wouldn't touch American cheese with a ten foot pole, but Frank is like "Hell yeah, melts perfectly for a burger".

Frank is just so chill and smart, and isn't condescending to other less adept cooks or their ingredients and he makes amazing twists on what the average person expects

I mean.... you're not wrong.
One of the things I appreciate about Frank is that he never scoffs or seems shocked by the lower cost recipes or ingredients. The culinary world can be incredibly elitist and classist, but he seems to avoid that kind of behavior. He is still able to elevate the dishes and show his knowledge, but it comes more from a place of passion and intent to educate, as opposed to showing off. And Lorenzo is just a ball of human sunshine. No complaints.

That thing that always tells me Frank is a real chef is how he appreciates even the cheapest of ingredients.
I really need to watch more of his videos, but the couple I've see, he really does seem to appreciate all types of food. Like for these, since he's being chef-y he goes super impressive just to expose people to a novel take on something, but then his home things he goes basic and just really good quintessential food while still keeping it creative. He's also just so genuine and supportive of all the other chefs.

That was such a strange comment. Trying to keep the family out of my grandma's kitchen was near impossible - especially when she was make tomato sauce... She actually had to make double because of all the bread dipping.

I think both are more of an equivalent enchange. Brussels sprouts aren't very expensive and doesn't alter the cost, and the vinegar is a pantry staple, which he has been allowed to use in the past.
Jury's still out on if hot sauce qualifies as a staple, though.
