I want to buy heavy duty batteries for my 2004 F 350 PowerStroke 6.0 Diesel putting into consideration the cold weather.The batteries that I have now in the truck are not powerful enough.I will really appreciate your recommendation and also that of RUclipsrs that can also help.
Get Interstate batteries they are the best by far. The model you want to get is the Group Size 65, model MTP-65HD. This battery has 850 cold cranking amps vs 750 and works better in colder climates. Make sure your alternator is still putting out the correct number of volts as it would be a shame to cook 2 new batteries. Get it tested if you dont know how to.
I have disconnected both batteries numerous times for maintenance and never had to re-calibrate after doing so. I only had to re-calibrate after the throttle assembly was replaced.
I don't think the truck would not shut off from a bad pedal sensor. You just would not have any throttle, but the truck would still run. You might have a bad ICP sensor. I would do some research online to compare the symptoms of a bad ICP sensor to what you experienced.

I just replaced my Accelerator pedal on my 2001 7.3 I have service engine on but when step on the pedal service engine light goes off
