Phnom Penh Noodle Soup( roasted duck flavor): Kuy Teav Phnom Penh

  • INGREDIENTS
    - 1 roasted barbeque duck( save the meat for the topping and use the bones for the broth
    - 10 pound pork bones and ribs
    - 1.5 pounds boneless pork meat(shoulder meat)
    - 1/2 cup dried shrimp
    - 2-3 dried squids
    - 2 roots preserved Asian radish
    -3 to 5 star anise
    - 1 tablespoon coriander seeds
    - 1 and a half roasted onions
    - 3 pieces rock sugar/or granulated sugar (about 3 tablespoons)
    -1 and a half tablespoos salt (since we have lots of preserved salty ingredient already ,start off with a bit of salt . We'll season to taste later.
    - 2 tablespoons fish sauce
    - 4 liter of water( the more soup bones, the more tasty the broth is)
    - noodle (small or medium size egg noodles
    - small size flat rice noodles
    NOODLE TOPPING
    -sliced barbeque duck meat
    - sliced cooked pork meat
    - baby bok choy
    -crispy cruller bread( Cha Kwai)
    - garlic chives, scallions , cilantro leave ,bean sprout
    - serve along side - Hoisin Sauce, fish sauce, soy sauce
    chili sauce, ground black or white pepper, lime wedges

    That looks delicious. My stomach is growling. It's like Pho. I love soups, I'll try this.

    mmm wish there were more cambodian restaurants in US. this is great food :)

      +shenkel869 Your're right there's are only some in Cambodian Town Long Beach ,CA. Where I live,there are no Cambodian restaurants at all. I have to cook my own noodle soup

    This is a Chinese dish. I'm 100% sure this dish is made from a Chinese living in Cambodia.
