INGREDIENTS FOR THE BROTH
5-7 pounds pork neck bone, pork spear rib, pork bones (combine)
11/4 pounds boneless pork shoulder
1/2 cup dried preserved salty shrimps
2 dried squids
2 pieces preserved salty daikon (fresh one is optional)
3 to 5 pieces stars anise spice
1/2 tablespoon white peppercorns
1 1/2 roasted onions
2 small rock sugar or 2 tablespoon granulated sugar
1/2 tablespoon salt
(don't start off the broth too salty since there are preserved salty ingredients already. We will season to tasted later.
4 liters water(the more bones, the more tasty the broth is :)
NOODLE TOPPING
cooked ground pork
sliced cooked boneless pork meat
shrimps
seafood
liver if you like
twist cruller bread ( Cha Kwai)
bean sprout, chives, scallion
served along side fish sauce, soy sauce, and chili sauce Хобби
