Simple Mexican Rice with a burst of flavor!!!! Easy and Delicious!!

  • Mexican Rice
    This Mexican rice is the perfect side to any Mexican dish.
    I learned this recipe by watching my mother make it as a child. It's authentic and also simplified and still incredibly flavorful.

    Ingredients:
    1 cup of long grain rice
    2 tbsp olive oil
    1/4 cup diced onion
    1 serrano or jalapeno whole (optional)
    2 cloves minced garlic
    4 tbsp tomato sauce
    2 cups hot water
    2 tsp of chicken bouillon
    1/2 tsp salt
    1/4 tsp cumin
    1/4 tsp black pepper
    1. Heat a skillet over medium heat. Add oil and rice. saute the rice for 5 minutes, stirring frequently until the rice turns a golden color.
    2. Add diced onion and the whole serrano. Continue cooking for additional 2-3 minutes. Add garlic and sauté 30 seconds.
    3. Add tomato sauce. and stir to combine.
    4. Add hot water. The pan will sizzle loudly!! Enjoy that amazing smell! Stir the rice and add, chicken bouillon, salt, cumin, and black pepper. continue stirring and bring heat to a low. Your rice should be at a gentle simmer. Cover and cook 15 minutes. After 15 minutes fluff up your rice. Take the skillet off the heat and cover but leave the lid off slightly. Let rest additional 5 minutes.
    5. Enjoy!!!

    You’re the only Hispanic that makes this just how I made it. Other Hispanic people I’ve seen on YT don’t put these spices in. Nice to see you doing it this way, thank you !

    I LOVE cooking Mexican food and Mexican rice has always been hard for me to nail down. Not any more! From flavor to texture this recipe is amazing. Thank you for posting!!

    Dude ! This rice is amazing ! I made it with dinner tonight and we all loved it. I swear to you I skipped eating the tamales altogether and just ate this rice with my chips and guacamole.
    Miss Yesenia, we are two for two here with your recipes for Carne guisada and rice. Ooh, I can't wait to try out a few more !

    I'm new and OH BOY I'm so lucky I found you by accident!! Yesenia, do you have a recipe for Arroz con pollo. PLEASE share. I LOVE ARROZ CON POLLO. I've tried other people's Arroz con pollo but it just doesn't taste right - not like my mom's. Unfortunately, my mother never taught me to cook so I'm a weird @$$ Mexican. I'm going to have to make your Arroz because it looks exactly like my mom's.

      I put 3 in after I add the chicken broth , cover and remove when dish done.

    I couldn't discern--is the red ingredient tomato sauce, tomato paste or ketchup? Sorry if I missed it, but I have to know, lol!

      I was looking for a way to substitute tomato paste for the sauce because I don't like opening a can of tomato sauce and using just a small amount and then not having a good use for the rest. I buy tomato paste in resealable tubes for the same reason. A little googling suggests I can use 2 TBSP tomato paste and 2 TBSP water as a substitute for the 4 TBSP of sauce. In fact, I looked at the ingredients on a can of tomato sauce and they show the first two ingredients as tomato paste and water! Then they add onion powder, garlic powder, and red pepper. This recipe already includes onion and garlic so those are covered. I don't know that the small amount of red pepper in the sauce would even be missed. I suppose I could add a small dash of cayenne pepper.
