Made this traditional Mexican Rice today. Together with your Chorizo recipe (peppers were not easy to find here in the Netherlands but in the end I did) .... wow!... no... wow wow WOW! Super tasty food.
FYI that Staub pan inside is coated with black ceramic so you don’t have to worry about scratching it. It’s just like the white enamel coated in Le Cruiset pans.
That looks pretty good.
An option is to put the coriander and cumin powder into the toasting rice with the diced onion instead of putting them in the tomato sauce. It changes the flavor of the cumin and coriander making them more complex and a little stronger.
Sounds interesting but wouldn’t they over brown and turn bitter? As I think the seasoning ingredients are already roasted my friend.
You are correct! I’m Indian and we always cook our seasonings in a little oil to develop the flavor.

2 cups of stock plus the juice of those tomatoes will make your rice mushy. I used 3.5 cups of liquid per 2 cups of rice and my rice came out mushy

I know its not traditional, but I love to cook the rice about 2/3 the way more or less the same as you made it, but the last 1/3rd transfer everything into a sealed pot to steam cook. A bit of butter on the bottom of the pan to stop it sticking, then you end up with a slightly crispy, chewy crust on the bottom that is maddeningly good. Basically the Persian way of making rice, but with that incredible Mexican tomato recipe instead.
I made this last night with several modifications, mostly due to which ingredients I had on-hand. I used half a green bell pepper instead of a red one, and two large jalapenos instead of one serrano since that was what I had. Instead of fresh garlic, I used pre-minced garlic in a jar. For chicken broth/stock I used Knorr chicken bouillon powder dissolved in warm water. Since I didn't have any achiote (annato), I substituted Goya Sazon "con azafran" (with Saffron) seasoning. I kept the cumin, coriander and other measurements the same though.
It did have an unusual flavor that I wasn't able to identify, possibly due to the extra coriander and cumin in the sazon or the addition of the turmeric and Mexican saffron which are also included in the sazon seasoning, although I only used one packet of sazon.
This made A LOT of Mexican rice! I didn't notice until after I realized I had a full pan of rice that this recipe makes 12 servings. I'll be enjoying this rice for a week.
😅 Had I gotten here earlier I would have reminded you to freeze meals in separate containers since cooked food can only stay good for consumption within 4 days MAX. Any longer and bacteria will start to overgrow and ruin any quality of flavor you had besides adding their own 😷.
It looked like you wanted to make it so bad your mind got occupied juggling substitutes otherwise you would have noticed it was two cups unooked rice ✌🏻😬😬.

This is a good recipe. If you don't have achiote, use paprika. I also reduced the quantity of chicken broth to 3 C for a slightly firmer rice, to avoid clagginess.
This recipe tastes good but I definitely didn't expect the recipe to be this huge it feeds like 10 people lol, my pot couldnt evaporate in time and it became mushy, what am I doing wrong, the last rice recipe you made was perfect

It looks delicious. What about using a single jalapeno in the blender for a little heat and flavor? I did not know Staub made pans with glass lids like that, that is pretty sweet. I have a Staub Sapphire Blue 7 Qt Cocotte (Dutch Oven) and I love it.
Different kind of Mexican rice I have seen. I have Mexican family members. They don't make their rice like this. Looks good though.

Was it smoked paprika? Smoked paprika goes great with Mexican rice.

What is the point of using low sodium chicken broth if you then throw in a tablespoon of salt? Just use normal broth and reduce the extra salt.
I just add a couple tablespoons of my fav salsa to the toasted rice and broth. Perfect Spanish rice every time!

After some review of many Mexican rice recipes, I wonder why some will use "chicken/tomato bullion" vs. tomato paste in the broth. Some use Oregano and Cumin too. It's interesting how the spices vary from one recipe to another but in the end....its all about personal preference of course. I'm more opt to use twice the onion and garlic, yessiree.

Nothing beats the rice at the la salsa chain. The French chef Julian Child used to say first stop in Los Angeles for her was La Salsa.
Good video however my preference would be to use veg broth instead of chicken broth. Why adulterate such a wonderful veg rice dish with dead animal broth?
Because chicken broth is traditional and delicious. Also, it's environmentally friendly since you use all of the bird. Kinda strange to "adulterate" such a great video with a dumb comment.
That's my favorite rice because of the bold pepper flavor. I like to add sliced black olives and a big spoon of sour cream on a tortilla with refried beans and some cheese. Thanks for sharing your recipe.

What if you don’t have the achiote or the donato seasoning?
Is there a substitute for the annatto powder, or is it optional just for color? The only thing I could find at my local store was a paste that had additional ingredients.
