I have always wanted to make Mexican rice correctly. My brother would make it real quick with tomato sauce and onions. I think TINA pretty good, but I tried it, and I couldn’t get it just right. I am so grateful to be taught how to make the Mexican rice correctly! Thank you so much beautiful woman.

I grew up on arroz and frijoles my mom was from Chihuahua and I cannot make my rice taste as good as hers! That said, you have a different recipe which I hope will make my rice tastier! Please publish a cookbook!

Ive even called on my brothers for helpful tips. Nothing- straight poop. For YEARS. Rice was usually too mushy.. or not enough flavor..always something. I gave up. Until I found your video. I figured why not? Shes either full of it, or she may actually know what shes talking about. Well I'll be damned.. i followed your instructions exactly and my rice was phenomenal! I made it and remade it 4 days in a row!! Amazing each time. I dont know what it was or how you did it but your video is magic and turned my food Amazing! Thank you and looking forward to watching more videos!
Just came on to say I FEEL YOUR PAIN. Tried to make Mexican rice yesterday for a dinner party, using the Instant Pot. And failed--twice. Rice was mushy and gross. I'm stumped. On here now researching new recipes to see what to do differently next time. Bc: NEVER AGAIN! I have bookmarked this page and will be returning the next time I want to make Mexican rice. :)

You are an angel! I’ve made Mexican rice for years but it never turns out fluffy! I use tomato sauce like my mom did, but I’m anxious to try it with the bullion. Thank you for explaining what to look for while it’s cooking too! I can see where I’ve been going wrong thanks to your explanation. It’s what I love most about your videos.
We tried this twice. The first time I did not strain the sauce, it was too strong of onion and tomato flavors. The second time it was PERFECT! I followed the recipe exactly...12 min. to brown the rice on med/low, 17 min. to cook on low, and leave it covered off heat. (I got busy making your beef enchiladas and did not "Fluff" it for 30 min. but it was soft and delicious!!!) NOTE: Your enchilada sauce is Absolutely THE VERY BEST!!! I've made it with chicken, beans, cheese and onion, and now ground beef, we LOVE it! Thank you for the detailed and patient instruction. I never dreamed I could cook such a fabulous meal until I watched your videos.
I'm making the rice and beef enchiladas at the same time right now! Rice is at the resting point and enchiladas are on their last 10 in the oven, can't wait to taste this meal!
Definately don't add the salt or buillin till you mix everything in the rice ! We all have different sazòn ! Even if portions are the same, never understood why, maybe is the stove, the skillet, 🤷🤷 but it never comes out the same

Made this rice with Birria tacos. Unfortunately, I only had (canned) petite dice tomatoes on hand, but I followed all other instructions. I multiplied the recipe to 2.5 cups of rice (we have a big family and like to have leftovers). In addition to the tomato/onion mixture I added in an additional 4 cups of liquid (including broth). This was very similar to our favorite Mexican restaurant rice, EXCEPT BETTER!!! This was literally the best Mexican rice I have ever made or eaten in my entire life. Keep the recipes coming Rachel!

Lucky for me as a rice lover I learned about KNORR chicken/tomato bouillon base from a Mexican friend. Yes it is the best additive for your rice recipe. Cumin is a must. I’ll do it your way next time.

There are some things I make that are really good, this was unreal. For those in the lower mainland of British Columbia, Canada, Don Chendo has the quality tomatillo, puyo, guajillo and ancho chiles beyond compare and made the recipe shine. Thank you so much, it's the food of love.

Hi Rachel! I love your videos. I brown my rice for about 3 minutes then add my onions & brown for about a couple of minutes. Then add my tomato sauce, HOT water & all of my spices (including Caldo de pollo) stir well. Bring it to a rolling boil for about a minute or two then lower my heat to lowest setting cover and don't open for about 15 minutes. I'm the official rice maker in my Chicano family & they love love love it!

Believe it or not, I do love carrots in my rice because it adds a pinch of sweetness which is a perfect combination with the other ingredients (sweet and savory) but it is optional. Thank you so much for your comment my friend. ❤️

Good morning Rachel, I've been a fan of your cooking videos for several years,(from the very beginning) I've noticed you deleted quite a few older videos, the beans w/ham hock, the chicken noodle soup w/amish noodle your bread video and your 1st flour tortilla video where you used crisco (about the size of egg). I personally follow your videos while making the recipe - it makes me feel like I am cooking along with you. Your recipes never disappoint. I do have to say, I am a fan of your older videos , that include personal story like the one about your Dad saying that the tortillas don't need to be perfectly round because they will eaten anyway. Love that one cuz my tortillas don't seem to come out round but they are delicious (follow your old recipe). Will any of the old videos make a come back? Will you consider including those old videos should you do a CD compilation of your cooking videos for purchase

This technique looks very much like the way my mother prepared her rice, something which I have yet to master. I do not make Mexican rice often, but it is quite versatile and I should. Excellent demonstration.
I'm Mexican and there are so many different ways that people make rice. I don't make mine like this and also do not use bouillion as it has tons of sodium. I use natural vegetable broth instead. I also use stewed tomatoes--perfect for the broth and I squeeze out the juice from the tomatoes and it's perfect. Have never used pepper or cumin, but like I said, everyone makes it differently. Thank you for your version :)

There are some things I make that are really good, this was unreal. For those in the lower mainland of British Columbia, Canada, Don Chendo has the quality tomatillo, puyo, guajillo and ancho chiles beyond compare and made the recipe shine. Thank you so much, it's the food of love.

Hi Rachel! I love your videos. I brown my rice for about 3 minutes then add my onions & brown for about a couple of minutes. Then add my tomato sauce, HOT water & all of my spices (including Caldo de pollo) stir well. Bring it to a rolling boil for about a minute or two then lower my heat to lowest setting cover and don't open for about 15 minutes. I'm the official rice maker in my Chicano family & they love love love it!

Believe it or not, I do love carrots in my rice because it adds a pinch of sweetness which is a perfect combination with the other ingredients (sweet and savory) but it is optional. Thank you so much for your comment my friend. ❤️
Made my first Mexican rice 1 year ago for the homeless in our local park. I was asked to make it since I participated in the cooking the meal every Sunday. The cumin is the important ingredients plus of course the tips you've shared with us. Thank you, now I could make a better Mexican rice!

Good morning Rachel, I've been a fan of your cooking videos for several years,(from the very beginning) I've noticed you deleted quite a few older videos, the beans w/ham hock, the chicken noodle soup w/amish noodle your bread video and your 1st flour tortilla video where you used crisco (about the size of egg). I personally follow your videos while making the recipe - it makes me feel like I am cooking along with you. Your recipes never disappoint. I do have to say, I am a fan of your older videos , that include personal story like the one about your Dad saying that the tortillas don't need to be perfectly round because they will eaten anyway. Love that one cuz my tortillas don't seem to come out round but they are delicious (follow your old recipe). Will any of the old videos make a come back? Will you consider including those old videos should you do a CD compilation of your cooking videos for purchase

This technique looks very much like the way my mother prepared her rice, something which I have yet to master. I do not make Mexican rice often, but it is quite versatile and I should. Excellent demonstration.
I'm Mexican and there are so many different ways that people make rice. I don't make mine like this and also do not use bouillion as it has tons of sodium. I use natural vegetable broth instead. I also use stewed tomatoes--perfect for the broth and I squeeze out the juice from the tomatoes and it's perfect. Have never used pepper or cumin, but like I said, everyone makes it differently. Thank you for your version :)
