Dear Rachel, my confession is I've lived in Arizona for 30 years and I've never mastered the art of tortilla making. Both my flour and corn tortillas resembled something more suited to a construction site instead of the dinner table. Until now. I purchased a tortilla press and played your channel in the kitchen as I made corn tortillas. When they actually puffed up in the pan and turned out soft and muy delicioso I was so happy!!! @@margaritariveria6940never heard of sweet bean tamales but that sounds really good! Tamales canarios use golden raisins as well as pecans, pineapple chunks, rice four instead of masa harina, and no lard. So many different varieties of tamales that most people outside of Mexico has ever heard of 😮🫔

I tried making these before from your other video. I got mine too wet and when they were pressed they would not come off of the plastic. I will try these again as you made them look so simple. Your directions are perfection, so maybe it I get the yellow Maseca this time they will come out like yours! I had the white. My flour tortillas came out beautifully, so I am batting 50%! You have to account for the climate you live in or at sea level/elevation level. It should feel firm in your hand but still pliable almost like play dough. If it is to wet and still sticks to your fingers/bowl even a little just add a sprinkle of masa at at a time then mix. Once it has that play dough consistency you will be ready to have the dough rest for 30 min before separating.
The best treat, a fresh hot corn tortilla right off the comal....yum! My dear Rachel, you've blessed us all with an arsenal of the best and easiest ways to enjoy traditional and delicious Mexican food. And now adding corn tortillas is perfect. Rachel, my grandmother used to make enchiladas with the masa in a thicker pancake than a regular tortilla. She’d fry the masa enchilada then dip it in enchilada sauce and add onion and cheese. Have you ever made these type of enchiladas? And I love watching you! 😊

Pancake style or "stacked" is the only way my family made them growing up, unless it's green enchiladas. Oddly enough, I like the taste of the powder ones once in a while and I love the way Rachel makes them!! Many people get stuck in their way but I think it's good to experiment for a change.

Saludos… when I was a little girl many,many years ago. My grandma would make tortillas and would give us kids tortillas right out of the Comal with a little water and salt. She called them Ranitas ( little frogs) the water was from a bowl she had next to the tortilla press to wash her hands after every tortilla, she made. I did the same thing for my kids and now my grandsons . You remind me so much of my grandma. Thank you for the great memories.

I made the enchiladas once. It took me hours, and my legs were killing me afterward. Then were delicious! The recipe made a lot, so I froze the rest for another meal. I made the frozen enchiladas a few weeks later. Even though the sauce was frozen separately, the enchiladas weren't very good. Rachel is amazing! As for me, I think the restaurant may be a better choice 😊

There's nothing like a homemade corn tortilla fresh off the Comal. We also love it with breakfast or made into enchiladas. My preference is cheese and onion in red sauce...makes my mouth water.

Hola. Muchas gracias. I do have a problem to determine when my dough is ok. Sometimes, the masa seems perfect (good consistency, not sticky) but when I cook them, they look dry. I even try wetting one ball with a bit of water to hydrate more the dough and still the result was so so. Love your voice. Espero que la proxima sera la buena.
Mine never did puff up. Too thick perhaps. I was afraid to make it too thin. I know my skillet was hot enough...it was smokin'! 😂 I placed them in my tortilla warmer with a towel to rest after cooking them; they tasted ok, but was definitely thicker than expected. I will try again and squish them just a bit harder this time. Thank you for sharing your God given talent with us ❤

Thanks. I make these all the time. Now I know how to make them puff up! I flip them only once, not three times. I don't have a tortilla press; I use a small cast iron skillet, which works fine.

Pancake style or "stacked" is the only way my family made them growing up, unless it's green enchiladas. Oddly enough, I like the taste of the powder ones once in a while and I love the way Rachel makes them!! Many people get stuck in their way but I think it's good to experiment for a change.
I just made a batch of these for the 1st time ever ... and they didn't turn out quite like yours, but I will keep trying!! :) Thx for sharing your talents!! ❤
Update ... watched another chef's video for corn torts, and he cooks his for 45 seconds to start, 90 seconds after the 1st flip, then another 45 seconds for the 3rd flip. They turned out really tough!
So, I watched your video again, cooked them exactly for the time you suggested ... they turned out soft & deelish!!

Saludos… when I was a little girl many,many years ago. My grandma would make tortillas and would give us kids tortillas right out of the Comal with a little water and salt. She called them Ranitas ( little frogs) the water was from a bowl she had next to the tortilla press to wash her hands after every tortilla, she made. I did the same thing for my kids and now my grandsons . You remind me so much of my grandma. Thank you for the great memories.

I made the enchiladas once. It took me hours, and my legs were killing me afterward. Then were delicious! The recipe made a lot, so I froze the rest for another meal. I made the frozen enchiladas a few weeks later. Even though the sauce was frozen separately, the enchiladas weren't very good.
Rachel is amazing! As for me, I think the restaurant may be a better choice 😊

Thank you for the step by step instructions. I have been trying to master corn tortillas for a while with no success. Now I see what I have to do to correct my recipe. I have found a non GMO corn ready mix made by La Guadalupana. They are so flavorful. Thank you again for all of your help!
Looks delicious I need to try it like this. I use the same kind of dough for bean tacos. I put refried beans and cheese in a uncooked tortilla seal it nicely and deep fry them

There's nothing like a homemade corn tortilla fresh off the Comal. We also love it with breakfast or made into enchiladas. My preference is cheese and onion in red sauce...makes my mouth water.

Hola. Muchas gracias. I do have a problem to determine when my dough is ok. Sometimes, the masa seems perfect (good consistency, not sticky) but when I cook them, they look dry. I even try wetting one ball with a bit of water to hydrate more the dough and still the result was so so. Love your voice. Espero que la proxima sera la buena.
Mine never did puff up. Too thick perhaps. I was afraid to make it too thin. I know my skillet was hot enough...it was smokin'! 😂
I placed them in my tortilla warmer with a towel to rest after cooking them; they tasted ok, but was definitely thicker than expected. I will try again and squish them just a bit harder this time. Thank you for sharing your God given talent with us ❤

Thanks. I make these all the time. Now I know how to make them puff up! I flip them only once, not three times. I don't have a tortilla press; I use a small cast iron skillet, which works fine.
