    I always watched my mom cook because she wouldn’t let me help …. Right now she’s in the hospital and your recipes really help! Ty! My dad wouldn’t eat my moms albondigas but when I made yours he loved them! He’s in heaven now but I’m so glad I cooked for him 😊

    Hola Claudia. I can make any Mexican dish there is. From tacos to enchiladas to chile rellenos, but I have always had trouble with rice to the point I get my wife, named like you Claudia, to make rice all the time. I tried this style of making it in the oven. Damn it lady! The rice came out so good. I made a ground beef chile colorado enchilada casserole to go with the rice. My wife had three little cups of the rice before I could finish with the casserole. She said it was the best. I used a cast iron skillet and workout just perfect. I wouldn’t change a thing on this recipe. Gracias y saludos!

      When you used the cast iron pan, did you put a lid on it when you put it in the oven?

      @@Hope-ot1xy Yes, I did. I know that cast iron skillets don’t come with a lid but I have one from another pan that fits it just right. You want to cover it so it doesn’t dry it up. Good luck!

    I have never made Mexican rice, and I spent a lot of time searching for one that would taste like my favorite Mexican restaurant’s with all of the rice cooked thoroughly. Now, I have made this recipe several times and won’t bother trying another. My go-to! Very good recipe.

    I have been making Spanish rice for 30 years and I have never been happy with it. Some of the rice is not done and the rest is mushy. This recipe turned out exactly perfect just like a Mexican restaurant! I am so happy!!! Thank you so much Claudia!!! ❤

      The secret is browning with oil, it cooks the rice that way too. It’s how Indian recipe pulaos are made too.

    I just made this today and it came out perfectly! And it’s the first recipe I’ve tried that actually tastes the closest to my mom’s rice!     I tried your receipe!! It's awsome!! I had to change it a little, had 4 Mexican chilies, 3 jolopenioes and about 6 regular tomatoes, had to reduce the amount of water, and used 2 1\2 cups rice. Worked out perfect!!

    So I just made this. Came out amazing! I will add more garlic next time. It took me 45 minutes in the oven. I had to keep putting it back in. Flavor is great though! First time I feel like I cooked it perfectly. Thanks Claudia!❤

    My brother and I have been trying to make better rice than our Mom. She doesn't bake it and we just learned from watching her over the years. In the family she's the designated arroz person for every party.

    Thanks to many methods of cooking mexican rice on youtube, including yours, I was able to recreate my abuela's rice recipe. She passed away 25 years ago and took me 20 years of trial and error to get the exact flavor she would make for us everyday. No other rice from other families would ever hit the flavors, texture and warmth like she did. And she was from the pueblitos of northern Tamaulipas, she did no such things as measurements, all by feeling, taste and eye balling.

    I just got done making this version and after successfully making your original and IP versions, I must say this oven version is foolproof and turned out perfect!!! I used my 6-qt. enameled dutch oven as it's the only ovenproof pan I have. Thanks for always looking out for us novices that want to learn. Cheers!

    My uncle that would sell Mexican food made rice extremely similar, but he also had some secret Achiote Paste recipe to make the rice come out so much more orange/red and adding some more earthy undertone to the rice. Your recipe is amazing.

    Made this for Christmas! This recipe comes out nice and fluffy. I doubled it so
    4 cups and it was more than enough for 12 people.
    I only use the baking method now! It’s hard to mess up.

    I've only ever tried with reading recipes for Mexican rice but I'm so glad I found your video because it never turned out right until now! I made it vegan by just replacing the tomato and chicken season portions with vegan bouillon cubes and it's perfect! Thank you for making this I was feeling hopeless lol

    After making rice awhile now,I had only recently learned about using the tomato bouillon also. Makes sense to me. I had never seen it finished in the oven though. I will definitely try this. I just saved this so I can get your book! Good food served with family and good friends is still the best!

    Growing up my mom would make this with pork chops… baking the pork chops with the rice. Man I loved that stuff. Thanks for sharing!

    Arroz Con Pollo: add chopped carrots to onions & rice. Add fresh peas & shredded chicken before putting in oven. When using fresh chicken: I braise chicken BRIEFLY with the rice, once rice is coated with oil to lock in juices. Thank you, Claudia!❤😋😋

      Arroz con pollo! A staple dish that I make almost every month! What I do, is use skin-on, bone-in chicken thighs… I fry them skin side down. Then I remove them and brown the rice in the chicken fat and fond that has built-up on the surface. When the rice has browned, I add the thighs back in along with the seasoned tomato broth, cover with a heavy lid and bake for 20 mins at 375° then remove and allow it to finish off the heat for 10 min.

    Made this to contribute to a dinner get together last night. You should be super happy to know that it came out perfect just like everything I have made from your channel. Excellent recipe and super authentic just like the restaurants around town. I have complete faith in your recipes, I know that if I follow the instructional video and recipe list (No substitutions) it will come out 100% every time. You can't always say that about recipes I've made plenty of lack luster recipes over the years, but not from you!! I appreciate your attention to detail and excellent videos and tips.       I seriously think some cookbooks contain "filler" recipes that look good but have never been tested before publishing. It's nice to get authentic recipes that have been perfected by the contributor over time. I have only made a few recipes from Claudia, but I fully trust anything she puts out.

I have looked and looked for a recipe AUTHENTIC Spanish rice and beans and even though I have yet to make one of your dishes step by step, as this is my first time watching your video, I must say I’m sure when I go to make this, it’s going to taste the best. Thank you! Really and truly! I can’t wait for a video perhaps you already have one that I didn’t see in your videos of how to make red salsa and the red chile sauce. I’m not a fan of enchilada sauce but I love the red chile sauce..

    We had a friend in California who was white white but she made the best Spanish rice i ever had in my life. And believe me I ate alot of rice lol. But I have gotten my recipe so stinking close and it's all in the tomato and carrots!

    I made your chile relleno and it was perfect and wanted to do the mexican rice and I knew you would have a way to do it. This recipe seems perfect, I'm going to make it this weekend.     I did everything in my Ninja Foodie and it came out great! I added about 1/8 cup more water over the 4 cups. I skipped any heat this time, because I also made your green chili enchiladas, and those had enough heat for me. Thank you!

    Hi Claudia! I just wanted to add to my remarks about loving this recipe(which is true, I do love it!). I have to watch my salt intake so I make my own adjustments. Low salt bullion is hard to find. This time I substituted low salt boxed broth for all my liquid. I make up for flavor sometimes by using something like red hot hot sauce or another brand if needed on my food when I eat. But if I’m eating with beans or fresh chilies, I’m good. I just wanted to say if salt in your diet is an issue there are ways around it.

      I've been doing this method on my last 4-5 batches and it's magic!! I'm giving away my rice cooker! This is the only method I will ever use again! I came back to check the temperature for the oven because I couldn't remember. I am increasing my rice to 2 and 1/2 cups, and my liquid to 5 cups because I want a little extra rice. I hope it doesn't change the outcome. 🎉🎉

    ❤🎉I just made your Chile Colorado for burritos and Oh my goodness!!! It’s delicious! Girl! You have NEVER failed me! Thank you!!! I’m making this rice and beans to make burritos. I’m going to be selling them to pay for living expenses that my full time job is no longer enough for. I keep applying for second part time job but no one is hiring yet they keep the signed up saying they’re hiring! So frustrating! That’s California for ya!     I thought I'd already mastered mexican rice, but this recipe looks amazing. As far as the method, I really need to invest in a pan that can go in the oven. BRB calling Santa.

    Thank you for all your recipe. Last year I tried your tamale recipe where I was able to use my kitchenaid and WOW noe I know how to make tamales. I've been making different ones all year long. Claudia make Dennys Crepes they are amazing.
