HOW TO MAKE PERFECT MEXICAN RICE EVERY TIME: Easy Recipe and Tips for Cooking Delicious Mexican Rice

  • For years, I struggled to make good Mexican Rice. It was dry or mushy, and always inconsistent...until I learned HOW TO MAKE PERFECT RICE EVERY TIME. In this video, I share my easy recipe, as well as some tips for cooking delicious Mexican Rice. Some of you may call it Spanish Rice. What's funny is, when I was growing up, we just called this, "rice." At any rate, read on for the recipe.
    Mexican Rice
    1 cup long grain rice
    2 cups hot water
    2 tsp. chicken bouillon
    1/4 of an onion, chopped small
    1/2 an 8oz. can of tomato sauce
    1 tsp. cumin
    salt to taste
    *You can also add peas, carrots, and corn to Mexican rice, if you choose.
    Place skillet on stove over medium high heat and coat the bottom of the pan with oil. Add in rice and brown, stirring continuously to ensure it doesn't burn. As rice begins to turn a light golden color, add in chopped onion and continue stirring until onion is soft and rice is golden. Next, add in the tomato sauce, the salt, the cumin, the hot water, and the chicken bouillon and mix well. (This is the last time you will stir.) When it comes to a boil, reduce the heat to low, cover pan with lid, and let cook untouched for 15 minutes. (Do not remove the lid during this time.) After 15 minutes, remove from stove, but leave lid on, and let sit for 5 to 10 minutes. Then remove lid and fluff rice with a fork. It should be cooked to perfection.

    I never liked Spanish rice until my mother-in-law made it. She added a green bell pepper with the onion and I was hooked. She's been gone quite a few years but every time I make my rice I think of her.

    I've been trying to find an simple easy recipe for Mexican Rice yours is the one I will be using. I'm and older single man and I cook for myself. There are plenty of videos on RUclips and so far your video is a one pan deal. No roasting peppers and tomatoes then blending. Just one pan.

      I brown 1 cup long grain white rice in corn oil in a Dutch oven. Add 2 cups of fluid that consists of 1 cup red enchilada sauce and 1 cup water. Bring to rolling boil, put lid on, reduce to low for 20-22 minutes. Fluff when done and add some chopped green onion.

      Most people add a clove of fresh garlic and saute it along with the onions. However if you want to make it even more simple try using both some garlic powder and onion powder. That way you don't have to saute anything other than the tomato sauce. You'll have to play around with the measurements for both depending on your taste, but probably use less garlic than onion powder. Maybe 1/2 a teaspoon of garlic powder and 1 teaspoon of onion powder.
      I would also make sure the oil is hot before you add the dry rice to brown it.
      Lastly, after you add the water, taste it for seasoning since this is the last chance you'll have to adjust the salt. Also, I would start with a 1/4 teaspoon of cumin because it can be overpowering. One teaspoon for one cup of rice is way too much cumin. If you have it, place a few sprigs of cilantro on top of the liquid just before you put the lid on. Carefully remove the cilantro sprigs before serving. Enjoy.

    I just made this for Super Bowl !! Used onion powder instead of fresh onion (husband doesn’t like). Going to serve this with home made pinto beans, fresh tortillas, salsa and avocado! Marcy you are the best ! Thank you for teaching me how to make this!

    Almost exactly how Mi Ama use to make our arroz. The only difference is Ama would wet the rice and drain it prior to browning to release the starch for a much fluffier rice in the end....

    I am so proud of myself! This is how I do, except for the bouillion. If my husband sees me cooking rice, he doesn't want to see the tomato sauce. I use it, then hide can. And also the cumin. He swears he hates both, however when I make it, he tells me, "See this is better without the tomato or cumin. He justs wants salt and pepper. I say this today and I am going now to look up some more recipes. I hope they are Mexican.

    My mom used to wash it first and I noticed it's easier to brown it without the starch. I also use real chicken broth if I have it. I love it with small cubes of corn, or peas and carrots. And yes. 15 min is important.

      Do you use frozen veggies? At what point do you add them in (whether fresh or frozen)? I've rinsed rice for some recipes but rarely. Do you find it makes the rice less mushy?

    We call it Spanish rice. I never add peas or carrots, but here in San Antonio some restaurants add them. Maybe it’s a Texas thang 😊 I make mine just like you, and I love lots of comino in mine!!

    I've never added cumin or chicken bouillon but I have added minced garlic, cilantro, green onions and I use El Pato tomato sauce for a little kick 🌶️

    I love Mexican rice so much I think I could eat it every day! 😄 A long time ago a friend taught me how to make it two ways, one being very similar to yours. The other she called her cheat way, using a box of chicken flavored Rice-A-Roni, a can of Rotel tomatoes, a little cumin and 1 1/2 cups water. It's delicious!

    I've tried to make Spanish rice several times and it hasn't once turned out good. It's hard to replicate that restaurant flavor. I love what we call Mexican food. It's probably recipes from many places though. Whatever it is...I love it!

    Thank you for showing me how to make it from scratch. I was buying Spanish rice in the packet that you microwave.....well I've mastered chili rellenos and now it'll be the rice. Please excuse the misspelling 😊 I will visit Albuquerque in Sept and I can't wait to eat the real thing 😂

    I always chopped up colorful bell peppers and instead of tomato sauce I used diced tomatos and a teaspoon of chile powder...but we called Spanish rice..but the steps in the preparation was the same, great as left overs also...nice recipe always made that with having Mexican night...at least twice or three times a month....the kids loved it...

      Mexican rice really good with fresh tomatoes also, either blended or chopped. By the way, some people call it Spanish rice but it's very different from actual Spanish rice.

    Thank you! I’ve tried to recall my grandmother’s method - she used chicken stock she made from her chickens. But I always ended up with “mushy”. Now I know why! I needed the HOT water, and NO FLUFFING!

    Your recipe is spot on in my opinion. Basic and then we can add from there. One thing I do sometimes is add a can of Ro-Tel. It's good.

      The secret for no sticky rice is to let the tomato be absorbed into the rice allowing it to almost dry out before adding the water or chicken stock. The rice that tis most common in Mexico has green peas and small cubed carrots in it. And definitely no cumin. This is more of the way people cook it that have Mexican ancestry but have lived in the US for generations. Other than that, the instructions are right on.

    When I was a teenager, I lived in San Marcos Texas I got a job working at a daycare center that was primarily Hispanic. The ladies there taught me how to make Mexican rice and this is exactly how they did it. It was wonderful and I've made it this way all of my adult years. I'm 55 now and it has never turned out wrong.

    I make it like this too. I started using caldo de tomate instead of the tomato sauce because it works too and I don't have to store half a can of sauce. I spent years trying to imitate a local restaurant I frequent a lot. I think I'm there now (and I keep my eyes open), but I have to say that the ambiance of my restaurant brings a lot to the party.

    Your recipe is so simple and we are able to make it fast. My family loves it. Our rice is very similar, however we add ground beef and diced red/green bell peppers, which takes a little longer.

    Hi Marci. Next time, try subbing a 7 oz. can of Salsa Casera for the tomato sauce. I think you'll like it.

    I love your recipe because it is so simple - you use tomato sauce. A lot of recipes add chopped onion, bell pepper and tomato to a blender and add it to the rice. I'm sure its delicious but more time-consuming for me.

    You made a believer out of me! In the past Mexican rice for me "Consistently" turned out Wrong! Streamed white rice prepared basic in a sauce pan "perfect" I have the nack here, although it too being a learning curve. You cracked the Code here for me!     Hello Marcy,
    One simple question for you, when doubling this recipe, do you double your liquid ingredients to four cups water and one entire 14.5 oz can of tomato sauce?
    Or do you use the ratio that most rice recipes will require, using only a 50% increase of liquids for double the amount of rice.
    eg...most every long grain rice package has the instructions that state...one cup rice requires two cups water, two cups rice requires three cups water.
    Just wanted to find out what has worked best for you.

    This is the most common asked dish people ask me how to make, I'm always surprised because to me it seems so simple. Everybody has their variation on it, but in the end it's the greatest side dish of New Mexican food! Thanks for making this this should clear up the air on how to make it for a lot of people.     The hack I found that has works the best for me is to use your favorite jarred salsa and puree the salsa with some water, sazon seasoning and some cilantro measured the amount of liquid you need. This means one, it is already seasoned and something you like, two you dont have have to cut anything and 3 it is SIMPLE. When I make large batches of rice at work for 50+ I use this method.

    Looks so good and such an easy recipe. Can't wait to make this tomorrow for ta o night. Do you have a video on making homemade tortillas? I used to make them when my husband was in the military 30 years ago from a cookbook I checked out from the post library. Would love to make them and street tacos again. I love food from all over and your real Mexican dishes are so great and refreshing. I love making everything homemade . Thanks for the video and simple instructions.

    Hello there Marcy. So I've been looking for the perfect rice to make even though I used to make it everyday for years. I lost my touch because I didn't have a big family to cook for anymore. So I just did yours and let me tell you I was not disappointed. It is super delicious 🤤.y grandma and mom mad it different because they are tejanos. But your is awesome.     I have been watching my carb intake lately and like to bring the taste of mexican rice to califlower rice, I think i can mix the cumin with tomato sauce and onion, This recipe looks delish!

    I'm wishing you a blessed day. 🙏We also just called it rice because my mom never made any other kind.As a kid I use to mix it with my beans on my plate.😋 Which my family thought was weird.I don't do that anymore though.😄

    You recipe looks great thanks for sharing it with us! One quick question though, what is the size of the can of tomato sauce do you use? Another quick question if you want to make two cups of rice do you add 4 cups of water or one and a half cups of water? Thanks!

      Thanks for the kind words. Yes, you absolutely can freeze any leftovers. Rice should keep up to 3 months.
