- For years, I struggled to make good Mexican Rice. It was dry or mushy, and always inconsistent...until I learned HOW TO MAKE PERFECT RICE EVERY TIME. In this video, I share my easy recipe, as well as some tips for cooking delicious Mexican Rice. Some of you may call it Spanish Rice. What's funny is, when I was growing up, we just called this, "rice." At any rate, read on for the recipe.
Mexican Rice
1 cup long grain rice
2 cups hot water
2 tsp. chicken bouillon
1/4 of an onion, chopped small
1/2 an 8oz. can of tomato sauce
1 tsp. cumin
salt to taste
*You can also add peas, carrots, and corn to Mexican rice, if you choose.
Place skillet on stove over medium high heat and coat the bottom of the pan with oil. Add in rice and brown, stirring continuously to ensure it doesn't burn. As rice begins to turn a light golden color, add in chopped onion and continue stirring until onion is soft and rice is golden. Next, add in the tomato sauce, the salt, the cumin, the hot water, and the chicken bouillon and mix well. (This is the last time you will stir.) When it comes to a boil, reduce the heat to low, cover pan with lid, and let cook untouched for 15 minutes. (Do not remove the lid during this time.) After 15 minutes, remove from stove, but leave lid on, and let sit for 5 to 10 minutes. Then remove lid and fluff rice with a fork. It should be cooked to perfection.

I never liked Spanish rice until my mother-in-law made it. She added a green bell pepper with the onion and I was hooked. She's been gone quite a few years but every time I make my rice I think of her.
Awe. I love that you'll always be reminded of her when you cook rice. That's so sweet.
That's sweet and sad at the same time.I also think of my mother when I make certain dishes that she used to make, and of my grandmothers when I make things they made. Its a beautiful thing the way families pass down recipes❤
Sounds so good!
Your voice sounds like a news reporter's. Except you are telling the truth and not lying to us. 💕
I was thinkig the same thing while listening. I swear I've heard her somewhere else.
Amen
😅😅
Haha, now that you mention it she does sound like news lady!
When I was a teenager, I lived in San Marcos Texas I got a job working at a daycare center that was primarily Hispanic. The ladies there taught me how to make Mexican rice and this is exactly how they did it. It was wonderful and I've made it this way all of my adult years. I'm 55 now and it has never turned out wrong.
I've been trying to find an simple easy recipe for Mexican Rice yours is the one I will be using. I'm and older single man and I cook for myself. There are plenty of videos on RUclips and so far your video is a one pan deal. No roasting peppers and tomatoes then blending. Just one pan.
Happy to hear that. Hope you find success with this recipe.
❤
Many techniques of cooking 😮❤
I brown 1 cup long grain white rice in corn oil in a Dutch oven. Add 2 cups of fluid that consists of 1 cup red enchilada sauce and 1 cup water. Bring to rolling boil, put lid on, reduce to low for 20-22 minutes. Fluff when done and add some chopped green onion.
I am so proud of myself! This is how I do, except for the bouillion. If my husband sees me cooking rice, he doesn't want to see the tomato sauce. I use it, then hide can. And also the cumin. He swears he hates both, however when I make it, he tells me, "See this is better without the tomato or cumin. He justs wants salt and pepper. I say this today and I am going now to look up some more recipes. I hope they are Mexican.
That is hilarious! I could picture you just smiling and not saying a word.
Men can be so funny! 😂
Lol i do the same thing with my man. They think they don't like things but we know better 😂
Try the knorr caldo de tomatoe and totally cut out your tomatoe sauce & salt...
So so true about Husbands! Thanks for posting. We all got a good laugh!😁
Almost exactly how Mi Ama use to make our arroz. The only difference is Ama would wet the rice and drain it prior to browning to release the starch for a much fluffier rice in the end....
I've never added cumin or chicken bouillon but I have added minced garlic, cilantro, green onions and I use El Pato tomato sauce for a little kick 🌶️
Your rice sounds delicious. I always love hearing how other people make things because then I can give it a try next time. I have used El Pato tomato sauce, too, and I do like it.
Or a dab or Rotel., for a kick depending if children are around or not. Some lil kids eat hot Chile..( I don't)
Cumin is not very commonly used when making rice in Mexico…
My mom used to wash it first and I noticed it's easier to brown it without the starch. I also use real chicken broth if I have it. I love it with small cubes of corn, or peas and carrots. And yes. 15 min is important.
Do you use frozen veggies? At what point do you add them in (whether fresh or frozen)? I've rinsed rice for some recipes but rarely. Do you find it makes the rice less mushy?
This is another recipe that’s been requested. The question is…what do you call it? Spanish Rice or Mexican Rice? When I was growing up, we just called it “rice!” 😂
I just made this for Super Bowl !! Used onion powder instead of fresh onion (husband doesn’t like). Going to serve this with home made pinto beans, fresh tortillas, salsa and avocado! Marcy you are the best ! Thank you for teaching me how to make this!
This recipe is a keeper! I love rice and prefer it to potatoes. I will often add jalapeños to mine because i like spicy. Subscribed.
I love Mexican rice so much I think I could eat it every day! 😄 A long time ago a friend taught me how to make it two ways, one being very similar to yours. The other she called her cheat way, using a box of chicken flavored Rice-A-Roni, a can of Rotel tomatoes, a little cumin and 1 1/2 cups water. It's delicious!
I love a good “cheat” version of any recipe, especially when in a pinch for time.
Oh that sounds yummy!
Don't forget the refried beans..
I’m all about the Rice A Roni “cheat” ! I use it for chicken and rice over using saffron rice.
The Rotel canned tomatoes are good, have used them, El Pato tomato sauce adds a tasty zip to the arroz.👍
I did everything exactly as you said, except I added 1 tsp garlic powder and it was excellent. I've been looking for the perfect Mexican rice recipe. Thank you for sharing this.
Thank you so much.,Born in California eating in multiple languages no one has shown me how to make Mexican rice! Now I know-thank you again!!
I was so nervous making this rice, and it came out so good! My son loved it!❤️
Thanks Marcy! I don’t make this because it never comes out right. Now I think it’s time to give it a try again, thanks for your inspiration 😊
I kid you not, I was the exact same way! For years. But once you get it, you realize there's nothing to it.
Same for me.
Thanks my dear for this quick n ez recipe for rice. I'm writing it down for future reference.
The secret for no sticky rice is to let the tomato be absorbed into the rice allowing it to almost dry out before adding the water or chicken stock. The rice that tis most common in Mexico has green peas and small cubed carrots in it. And definitely no cumin. This is more of the way people cook it that have Mexican ancestry but have lived in the US for generations. Other than that, the instructions are right on.
March I made Spanish rice to like you make it my family loved it you were right I use to make but your way was better thankyou God bless you and your husband❤😊
Thank you! I’ve tried to recall my grandmother’s method - she used chicken stock she made from her chickens. But I always ended up with “mushy”. Now I know why! I needed the HOT water, and NO FLUFFING!
GRATITUDE!!!💐
And I love the scriptures that change (I watched the refried also 😏
Blessings 🙏🏼📖🕊💐
I love to add chopped green bell peppers, perfect!
My mom called it Spanish rice and she made it perfect every time
Yes, called it Spanish rice
I love this... Just like restaurant rice! Thank you Marcy!
I love your recipe because it is so simple - you use tomato sauce. A lot of recipes add chopped onion, bell pepper and tomato to a blender and add it to the rice. I'm sure its delicious but more time-consuming for me.
Just Perfect, Sopt on. Because of my high blood pressure I try and watch my Salt. 🎶🎶🎶🤗
Awesome, simple, clean and tasty. Perfect side dish. Add the refried beans, the entrée... enchiladas, shaved lettuce.....boom! Jesus may seem to even appear for a split second to give a thumbs up. God Bless you. Thanks Marcy!
That would be the endorsement of all endorsements! Thanks for the comment!
Honestly, this worked so well. I have tried my own version and it is always wet and gross. This worked so well and was amazing, it was restaurant quality.
I'm happy you found success with this recipe. Thanks for watching and for coming back to tell me.
Thank you for showing me how to make it from scratch. I was buying Spanish rice in the packet that you microwave.....well I've mastered chili rellenos and now it'll be the rice. Please excuse the misspelling 😊 I will visit Albuquerque in Sept and I can't wait to eat the real thing 😂
I always chopped up colorful bell peppers and instead of tomato sauce I used diced tomatos and a teaspoon of chile powder...but we called Spanish rice..but the steps in the preparation was the same, great as left overs also...nice recipe always made that with having Mexican night...at least twice or three times a month....the kids loved it...
Mexican rice really good with fresh tomatoes also, either blended or chopped. By the way, some people call it Spanish rice but it's very different from actual Spanish rice.
Your recipe is spot on in my opinion. Basic and then we can add from there. One thing I do sometimes is add a can of Ro-Tel. It's good.
Thanks so much! That's a great tip about the Ro-Tel.
The only Mexican rice recipe I use… Thank you!!!!!
I add bell pepper, onion, and diced tomatoes
I'm making this today with your Picadillo recipe! Thanks for having this channel...it makes it more bearable to live in North Carolina where it's hard to find this kind of Mexican food
That's nice of you to say. I feel for you about the Mexican food, but I also know the food in North Carolina is fantastic. I love southern cooking!
I’ve heard that about NC which breaks my heart because my husband and I are looking to move there next year, it was almost a deal breaker for me because Mexican is my absolute favorite food! I’m with you, Marcy has made it possible to continue with plans on moving.
I've tried them all! This one comes out the best.!! Thank you ❤
Love this recipe.. Thank you.
This is the gold standard Mexican rice recipe! I’m just blown away that I was able to make this and it came out just delicious! Thank you Marcy!
I couldn't remember this recipe, thank you. My mom made this when I was a kid. She would add bell pepper, corn, chopped tomato, and get this she added hot dogs. One pot meal. Mom was a great cook. And so are you, again thank you.
I think RUclips is telling me to subscribe to you 😆Este arroz es bien. This is the second time I've looked up rice recipes and you're the very first channel I clicked on both times. Thank you for sharing :)
Well that's good to know that my videos are popping up. I think it is a sign! Lol
I’ve been trying to figure out how to make “Mexican” rice for ages. I’ve tried a number of different recipes but didn’t get what I wanted. This looks like just what I’ve been looking for. Can’t wait to try it! Thanks.
Thank you, I love Mexican rice, refried beans with my enchiladas! My grandmother taught me to make enchiladas when I was a little girl but not the rice and beans !
Thanks so much for this easy side dish 😊
You made a believer out of me! In the past Mexican rice for me "Consistently" turned out Wrong! Streamed white rice prepared basic in a sauce pan "perfect" I have the nack here, although it too being a learning curve. You cracked the Code here for me! This has been on "my bucket list" for years and thanks to you, I can do this! ❤ the "beagle" I have one he's more black with extra Ticking. 8 yrs. now and still energetic!
I really enjoy Mexican rice with beef or chicken tacos for a weeknight dinner. Thanks Marcy! 🌮
Thank YOU for watching! 😊
This is my favorite Mexican rice recipe to date that I have tried. Thank you for sharing!!
Thank you for measurements, I've always eye balled myself and everyone has asked me for the recipe. Well shoot I dont measure anything. So this helps thank you!!!
Ha! I can totally relate. Ever since I started sharing my recipes on this channel, I've had to start measuring. Thanks for watching and commenting.
This is fantastic I just made it last night. My brother's are very picky eaters and whenever I try something new they complain but they loved it.❤ this recipe is definite going into rotation
Your recipe is so simple and we are able to make it fast. My family loves it. Our rice is very similar, however we add ground beef and diced red/green bell peppers, which takes a little longer.
Sounds like a whole different dish.
Marcy, just subscribed to your channel. You cook like my mama use to cook! I’ve cooked a couple of your recipes and I love the way they came out, so delicious! Thanks for sharing. And yes! I’ve turned into my mama as well. But that’s a good thing! 🥰
Thank you so much for subscribing. Any time my cooking is compared to someone's mother, I consider it a compliment, because a mamas cook with love and it's always the best.
This is my new favorite Mexican rice recipe thank you.
I tried your recipe and my husband and I absolutely loved it!!
Thank you!
Thank you for the recipe. I too fall victim to sticky Mexican Rice. Will try your technique this evening.
I tried this tonight, did add some mixed veggies though. Absolutely a winner! So very good. Thank you for a simple dish. 🙂
Hi Marci. Next time, try subbing a 7 oz. can of Salsa Casera for the tomato sauce. I think you'll like it.
I make it like this too. I started using caldo de tomate instead of the tomato sauce because it works too and I don't have to store half a can of sauce. I spent years trying to imitate a local restaurant I frequent a lot. I think I'm there now (and I keep my eyes open), but I have to say that the ambiance of my restaurant brings a lot to the party.
Thanks so much for sharing your recipe.. I’ve never been able to make good flavored or authentic in my mind, rice. You made this so simple. Appreciate this so much!
I like the way you explain, thank you
Thank you for the Mexican rice recipe. I have now the confidence to make it. Your rice came out beautifully fluffy.
Happy to hear this recipe gave you the confidence to make it. That's all cooking is. Confidence. Thanks for watching!
I really appreciate the vids you make. Most of my family has passed on. You're recipes taste just like what I grew up eating. It's a good way to reconnect with those memories and feel closer to my loved ones. Thank you so much.
What a nice comment! You're so welcome. I'm happy my recipes can bring back sweet memories.
Love to see a new Bible verse on the board in every video. Great program.💫
Yummy , Looks delish !! & fairly simple , Thank You , i cooked some Enchiladas today , told the wife to bring home a can of Mexican Rice , didnt have any , wish i'd seen this earlier today, I will be trying this soon .
Next time will be that much better! Thanks for the nice comment.
Hello Marcy,
One simple question for you, when doubling this recipe, do you double your liquid ingredients to four cups water and one entire 14.5 oz can of tomato sauce?
Or do you use the ratio that most rice recipes will require, using only a 50% increase of liquids for double the amount of rice.
eg...most every long grain rice package has the instructions that state...one cup rice requires two cups water, two cups rice requires three cups water.
Just wanted to find out what has worked best for you.
Thank you so much for making these videos Marcy, it truly is a blessing that because of you're trial and error in the kitchen, we are able to get it right the first time, as long as we follow your instructions.🤗
I made this and it turned out perfectly!!! Thank you so much for showing us how to do it ❤️
We call it Spanish rice. I never add peas or carrots, but here in San Antonio some restaurants add them. Maybe it’s a Texas thang 😊 I make mine just like you, and I love lots of comino in mine!!
I start mine in the pan
Finish in the rice cooker 🎉
I'm following your recipe tonight Marcy!
I have been wanting for a long time to make "el arroz rojo". I made it tonight and OMG, it was a dream come true. (No cumin though).
Delicious❤❤❤ Thank you.
Thank you for making and posting this video. I made this your recipe and it was very good. My mom even liked it. Thank you very much. God[Bible] Bless you.
Thank you so much for your fast and easy recipe it was so easy and fast my 13 year old daughter loved cooking together and truly enjoyed the rice ..
This is the most common asked dish people ask me how to make, I'm always surprised because to me it seems so simple. Everybody has their variation on it, but in the end it's the greatest side dish of New Mexican food! Thanks for making this this should clear up the air on how to make it for a lot of people. BTW like your dish towel hanging on the oven!
Thanks! As easy as it is for me now, it's one I used to lack confidence in. So, hoping this does help others.
Those camera angles are awesome haha. Looks like stabilize and orbitong around the food. Thanks this is easy and simple recipe!
Thanks for watching!
Hi Marcy! Happy New Year to you! I love your recipes! This one is definitely a keeper. My hubby is Hispanic and has to have his rice and beans with any Mexican dish I make. We just call it rice at home as well, whether it’s Japanese or Mexican.
Thank you for sharing this delicious recipe. ❤
Thank you! 😊Happy New Year to you, too. I think rice and beans are like peanut butter and jelly. They're just meant for each other.
@@marcyinspired1442 ……100%! 🥰

Hello there Marcy. So I've been looking for the perfect rice to make even though I used to make it everyday for years. I lost my touch because I didn't have a big family to cook for anymore. So I just did yours and let me tell you I was not disappointed. It is super delicious 🤤.y grandma and mom mad it different because they are tejanos. But your is awesome. Thank you for the delicious video. I look forward to making more of your food. Thanks again.❤
Thank you for such a nice comment. I'm sure you haven't lost your touch. You're just having to adjust to cooking less food. I'm kind of in the same boat now that my husband and I are empty nesters.
Hello Marcy👋 today is Sunday and
I'm wishing you a blessed day. 🙏We also just called it rice because my mom never made any other kind.As a kid I use to mix it with my beans on my plate.😋 Which my family thought was weird.I don't do that anymore though.😄
Awe. That is such a cute story. Mixing rice with beans makes sense to me! Hope you have a blessed day, too.
Thank you.
God bless you.
Thank you so much! May God bless you, too. ❤
Mmmmm i love rice
So do I.
Mmmm, I love Mexican/Spanish/rice ! Looks soo good ! 😋
Love your nail polish ! 💅
Looks real tasty , but I have to have diced bell peppers in mine and it has to have some heat.
Thanks for the pro tip on not stirring the rice. I always do, and usually does come out mushy.
1/2 can of tomato sauce? Very good. What size 8 oz, 15 oz, 28 oz?
Looks like an 8 oz. And yes in the description/transcript she listed it was an 8 oz can.

One of my favorites
Thanks! It's definitely a staple in Mexican food.
I LOVE YOUR RECIPES. So excited to try this !
Thank you! I appreciate the nice comment.
Thank you for your great cooking tips! I have just discovered your wonderful channel and I joined so that I won’t miss any of your videos.
The hack I found that has works the best for me is to use your favorite jarred salsa and puree the salsa with some water, sazon seasoning and some cilantro measured the amount of liquid you need. This means one, it is already seasoned and something you like, two you dont have have to cut anything and 3 it is SIMPLE. When I make large batches of rice at work for 50+ I use this method.
Just made this rice and it's soo good!😊
Happy this recipe worked for you. Thanks for coming back to tell me.
Wow!!! You made it look simple, I will definitely make my own now, Thank You Marcy ❤
Excellent presentation! Thank you!
I have been watching my carb intake lately and like to bring the taste of mexican rice to califlower rice, I think i can mix the cumin with tomato sauce and onion, This recipe looks delish!
Nice and simple and delicious like i learned from my folks 😊
Legit! Very tasty. Thank you!!!
