Mami used to heat some Crisco and add Red Chili powder, always Gebhardts brand, and lightly cook it to get rid of the raw taste and then dredge the tortillas Before filling them. So good. Try it with a sprinkle of cayenne powder in the dredging grease. For you vegans Try cheese and onions enchiladas with this sauce. They would be just as yummy as her beef enchiladas.
