A good grind of sea salt, a grind of black pepper, heat some light olive oil in a good cast iron grill pan and sear each side for one minute, repeat, turn the hob down and for a 16oz steak cook for about 5 minutes each side until a crust has formed, remove from the heat, place on a warmed plate cover with foil (shiny side down), rest for 10 minutes, slice and eat. There, fixed it for you.

Cook to medium well on the grill, with a no lighter fluid fire. Plate & top with butter. Rest 15min. My wife (also from London) has cooked it your way, and it's still, damn nice. No 5-star steakhouse would ever boil a steak. Any reputable chef would kick out whoever was at the meat station who did this as boiling meat removes a lot of its flavour. You pan sear it to seal in the flavour and then finish it in the oven or you cook it over a grill to develop a nice crust.

Dude stop commenting this. You SEAR the beef in the pot and then after deglazing and putting the ingredients in THEN you return the meat to a boil. A beef stew is not made this way. It's disgusting and clearly way overcooked and extremely tough you can see that in the video clearly.

The high temperature of the water also sterilises all the toxins and impurities in the blood effective killing the bacteria. Like you'd sterilise a cup by filling it with boiling water. So it's the safest / healthiest way to eat steak. Good luck in educating Americans though who worship their "rare" steak. Getting to the moon is easier than that.
