Hey maybe this is a dumb question, but how do you manage food safety with such a huge piece of beef? So that it doesn't get to too warm of a temperature and then the multiple cut surfaces pick up (or allow the growth of) bacteria that then get ground into the ground beef or are latent on the steak cuts? Do you have any recommendations on time that it should take to cut before you get concerned about warming?
I just hit 13 months carnivore and it has changed my life! i started at north of 715lbs i was stuck in the house for over 2 years and i was on home oxygen 24/7. i had congestive heart failure, reactive airway disease, depression, anxiety, lymphedema, and many other issues. ive lost 262lbs so far, i have my mobility back, im off oxygen, and off all meds, my depression and anxiety is completely gone. everything has healed and is either 95% to 100% healed! A literal answer to prayer ! i love hearing people changing their lives with carnivore too. Keep up the great work!
I went predominantly carnivore about 4 years ago. After son was diagnosed with Crohn’s and had four doctors, tell me not to worry about his diet. I was told to just let him eat whatever he wants so he could gain some weight. Went to a functional doctor and he introduced us to diet ideas consisting mainly of fatty meats, and some vegetables, soups made with bone broth. After doing some of my own research and fine, tuning his diet and watching him get off from nine medication’s, I was eating this way as well. I laugh when I sit down to a big ole ribeye, or a juicy chuck roast, or simply, crab legs with a side of shrimp scampi.😋🤤😋! No complaints here. I often laugh at what I’m able to eat at 60 and have the body I had it 30! I did this with a very minimal exercise. But now I have more energy and I am much more active with working out. Chuck roll is on my next Costco list!
@@paulseverson2307 I'm not sure where you can find grass fed but I don't think it really matters. Ken Berry says the grass fed is maybe 1 to 3% better...that definitely isnt a deal breaker. Buy the chuck roll and enjoy! :)
im a meat cutter at costco yeah knock on the window and ask us for any uncut meat and we can hand it to you in a cryovac package! its a good for our sales and saves us time cause we don't have to cut it up so dont be shy... just keeep in mind sometimes when we hand you the cryovac meat you're gunna see some brown parts on the slab of meat where it looks slightly cooked, its cause it is lol before they vacuum seal the package they lighlty torch the outside of the meat to get rid of any bacteria/germs
We eat mostly wild venison (not near farm's). Cold water fish, grouse and wild rabbits. Pick wild mushrooms and berries. I'm 62, don't take any meds. I fish, hunt and go in the hard woods and cut firewood. What a great life!!

I'm a carnivore too, started around 275 (that's insane for a short, old grandma,) but I'm under 200 now, hitting 180s-190s most days. No real encouragement except on RUclips and at tai chi class.

Just bought a 26lb chuck roll at Costco in California, 139 bucks. Also got the meat grinder, vac sealer and some new knives, that was pricey. Only lost a lb of trimmings. Freezer got stuffed with steaks and ground beef tonight. Great video thanks

Start ASAP... the no carb life channel has tons of interviews with regular folks sharing their experience if you need more inspiration. I would offer good luck, but you won't need it since it's so natural once you get fat adapted. Autoimmune conditions are a result of gut health, which improves rapidly when you eliminate fiber in your diet.

My daughter’s painful skin disease (HS, an autoimmune) that “had no cure,” made her gain over a hundred lbs without eating (high cortisol levels from her pain). She started Keto (some good results), then carnivore and got her life back. She looks stunning and was gladly able to rip up her handicap pass.
I buy the whole chuck roll at my local Sam's Club. Note: I never throw away any of the so-called inedible parts! Instead, I fry it up then boil it a few hours (no added seasoning) to get 2 products...1. Rich beef broth and 2. Tasty bits to add to my dog's food (he loves these added treats). I add the broth to soup, stew, and gravy. Win win for extra (free) flavor for me, and chewy treats (free again) for my dog since I'm not just tossing those "inedible" parts in the trash!
Just for an idea (not holding you to prices,) but can you give me an idea of how much these prices are? Price of the whole shoulder and weight? And how much do you think it saved you over all?
After cooking my meat, I pour in some broth and let it come to a simmer. Then drop in a few eggs and salt. Egg soup - yummy! I take the small bits you mentioned and add them to scrambled eggs. It’s all so good!!
Thank you for this sir. I tried the carnivore diet to help with my autoimmune condition out of desperation, despite my doctors telling me I was stupid... Absolute game changer! Been in remission for eight months, only thing that's worked. Fired my Doctor, he was an A-Hole anyways. Been loving it, I've never felt this good in my life. If you're having a good steak or a good roast, don't you just crave some potatoes to go with it? Like a baked russet potato for a steak or throw some gold potatoes in the pot with the roast (and some carrots and celery)?
I was raw vegan for many years and did feel good for a long time and then started to really suffer from psoriasis and irregular heart beats. I thine went on more of a healthy standard diet and was often sick. Since trying carnivor (1.5 years now) I have not been sick once and my psoriasis is all but cleared up, heart beats like an atomic clock and feeling great! Lost a bunch of weight too.
@@milanvujcichcholesterol is not the bad guy we’ve been led to believe. You want your cholesterol higher than the doctors recommend. It’s your triglycerides you need to make sure they are low.

Been on Carnivore now for 3 months. Meat, Eggs, Butter, Bacon and Bone Broth. That's it. It's virtually cured my Eczema which has hounded me on/off now for 57 years. Skin is actually elastic and clear now which I never thought even remotely possible.

We know it's bones baked in an Oven where all the soft tissue congeals and is collected and when set, results in a thich, viscous paste where you use a Tablespoon and hot water to make a Soup. So yes, the product resulting from this process has been called "Bone Broth". Move along.
I bought a chuck roll today from Costco for $4.69 a pound. I told the butcher behind the glass that I wanted a primal chuck roll and he kept pointing to the chuck roast. Then he came out and physically showed me the ‘roasts’. After I said I’m looking for the 27 pound primal cut beef chuck roll. He went back in talk with another guy and a couple mins late- tada!!! 26 pounds @ $4.69 per pound. Sharpening my knives up tonight!
Did the carnivore diet for january for my first time. Lost 15lbs and skin was looking great. Today is feb 2nd and i ate NOT CARNIVORE DIET for only 2 days and my face alreeady got puffy and red. I now know carnivore is for me for sure

I wonder how much of it is the regular plants themselves and how much of it is GMO crops and pesticide being sprayed all over our plants? I sort of wonder if that's what the spike in gluten allergies is peoples bodies telling them "don't eat this it contains poison" and the body coming to associate grain with poison/pesticide.

Do you follow Dr. Anthony Chaffee on yt? He talks about how most of the pesticides in plants were made by the plant. They are masters of chemical warfare since they can't run away from a predator. Then there's the antinutrients that bind minerals so they are largely not able to be absorbed. The amino acid peptides in plants are called Prolamines and research shows the prolamine peptides are more difficult to digest than animal-based peptides so the bioavailability is quite a bit lower when eating plant based. One other thing I';; mention is that plants have their own versions of chole-sterol but they're plant sterols. The human body inappropriately tries to incorporate those plant sterols to build tissue as if they are cholesterol.
I'm a hunter, farm raised animal grower, and 100% carnivore. I just wanted to say thank you so much for these videos. It has made my homestead life just that much easier.

I purchased a full brisket which is less than ground beef $389 per pound. I found a bake in the oven recipe it came out delicious I only use salt and butter to season.
Funny video with some good tips. Chuck pot roasts have more fat, and therefore more flavor, than those from the round. Beef round roasts suitable for pot roasting are round tip, round rump, bottom round and eye round roasts. Most beef round and chuck pot roasts can be used interchangeably, with only slight adjustments in cooking time. Also, the nice cuts should turn into steaks and kabobs. Lets' get cooking. Chef
You should reach to the many carnivore “leaders” to advertise your channel. Saving money by buying larger cuts of meat is great, but being taught how to cut it correctly is another. You rock!
62 just started and lost 15 pounds in 18 days. Lots of water too. Feel pretty good. Should have done this in my 20's when I was working out 6 days a week. Lol.
I just bought one. $160 for 29 lbs so about $5.49? Great for western WA. Now, wish me luck dissecting it. Also fitting it in my traditional fridge freezer, no air vacuum, no grinder, no giant cutting board, no spacious kitchen 🥲 just the will to survive, eat carnivore, get healthy
My family doesn't like organ meat, so I hide it in the ground beef. I use 1/3 organ meat (liver, heart, kidney) to 2/3 beef. I grind the partially frozen organ meat......less mess when partially frozen. Then I grind the beef and measure the 2 meats in a bowl and mix before freezer packaging. I use this mix for meat loaf, casseroles and patties. No one complains.
i HATE liver and kidney. Never tried heart. My dogs won’t eat chicken hearts or raw liver (they’re on raw diet). I’ve had - and enjoyed- fried bull testicles 😂 so maybe i’d like deep fried chicken liver??
I picked up a chuck roll from Costco but I had to ask the butcher for it. It wasn't in the meat display. He had to weigh and label it so I asked him just to leave it out with the other meats and I would pick it up on the way to check-out. He said he couldn't do that and he needed to hand it to me personally. It was like he was selling chuck roll under-the-table. And yes, I'm a carnivore. Edited to answer all the questions: It weighed 18 pounds and was $5.49/pound in February 2024
Carnivore since October 2023. I've gone from 257lbs to 203lbs in just over 3 months! It's not a diet, it's a way of life. I feel 15 years younger, have zero depression, and need a whole new wardrobe. I recommend it to everyone! Thanks for the video.
Wow, this is 2.04 kilos per week or 8.166 kilos a month. Very Impressive, although you are a male. Female here finishing week 4 and promising myself to weigh only once a moth. I have a long way to go and just want something to work for me and feel like a normal person without all this fat hanging around me. But loosing a massive kilos like you did in search small period of time would fire up my soul so bad and declare once and for all freedom from meds, lying doctors and nutritionists. Congratulations again for your great achievement.
@@shayannesmith3953 I have tried multiple diets over the last 20 years. They always fail or I fail at them. They all had complicated recipes, made me count calories, left me hungry, or gave me headaches and no energy. With carnivore, I only eat once a day. Dinner with my family. I'll eat until I'm completely full. I'm simply not hungry the next day until dinner. If, on occasion, I do get hungry, I just grab some meat, eggs, or a little cheese and that holds me over just fine. On a side note, my wife hasn't been able to eat eggs for about 5 years. She stopped eating vegetables and was doing mostly a carnivore diet and now her stomach is healed enough to eat eggs again. Good luck and stick to the lifestyle and I'm sure you will see great results!

I see you using all the "scraps" for grinding. Try using them for the airfryer. Season with salt, arifry 6 min toss them 3 more min. Coat with butter and enjoy. Been mostly carnivore for 6 months now and SO enjoy those "scraps" in the airfryer.
The carnivore diet is magical. I admit I’m not 100% carnivore, but rather ketovore, which is a carnivore who has a little bit of plant foods here and there. One thing I love about it is how much easier it is to cook. I used to make these huge salads and elaborate plates of sautéed veggies and chopping up all those veggies and rushing to use them all up before they went bad was so much work for something that your body doesn’t even need anyways.
I recognized that slab of meat immediately. We LOVE the chuck roll and buy it whole regularly. The looks I used to get from the butchers was hilarious. I’m 5’ and petite, so I hope it gives them a chuckle. They know me now. I slice the whole thing up into steaks and cook them rare. Seriously so good and affordable!
I just discovered this channel. Love it. On the inedible trimming, I throw it in a pan, cook it up and give it to the dogs. I told them it was inedible but they didn't complain...

Good video! Thank you! I'm all about the chuck roll! I'm a strict carnivore and I just wanted to share with you that once you go about 2 weeks or more, you'll actually crave meat, especially beef! Your cravings for carbs and sugar will disappear! The first 2 weeks is the hardest, but after that it's smooth sailing, at least it was for me! I've lost 77 pounds since August 7th, 2023, and all my health issues disappeared! Seriously! I'm only 3 pounds away from my goal weight! I did a combination of the carnivore diet and OMDA, one meal a day.
Went full carnie after the calendar flipped to 2024 and i feel like im 53 going on 23. It's like a miracle. When Dr. Chaffe was shown that piece of bacon and declared it to be healthier than any plant you can eat - I was sold.

@ird7976 Most cattle is ranched. There are vast swaths of grasslands in North America that aren't very suitable to farming. Something those ecokids don't understand/refuse to care about. It's far more economical to let the cows roam around and graze then to have them in a feed lot eating corn or something unhealthy for them. Are they eating grass? Not in my area they're eating whatever desert plants they find but they do fine and yes deserts can have grassland we in fact have lots of good grazing land in New Meheeeco.
I've recently been diagnosed with an auto immune disorder. Along with a whole pile of other issues. I am starting this diet immediately as i have heard only great things. I am also into the break down of animals into their specific steaks, roasts etc. So this is right up my alley.
Greetings Sir Butcher, My husband is visiting with the carnivore diet, and while watchin some videos, this one of yours came up. I have revisited the video a few times. We are pretty cheap, so this was a good deal. Our favorite cuts of meat are chuck roast & chuck eye steak. (Some times I even make Yorkshire Pudding with the roast. A family favorite.) We were at Costco and I asked a meat dude IF they had Chuck Rolls, and how much. He comes back a few minutes later with a big hunk of beef on his shoulder. So we brought it home. We got lost cutting meat, and were watching your video, eventually we cut it up. Ended up with 5 roasts, 19 steaks, & some spare meat which I will cut into stew meat. I sure was tired. My husband learned how to remove silver skin. The problem we had was our chuck roast didn't exactly look like yours, or even close. We just got lost on the "Chuck Road Map." Is there maybe a way you could diagram a roast, or make a multi colored piece with clay or something (similar to what doctors use to show you why your knee hurts.}. I had my laptop right above where we were cutting, and we still couldn't tell where we were at on the hunk of roast. I could use colored toothpicks to keep track of the different sections of roll. As another 75 yo I have been on a semi keto-carnovoris diet fo 1.5 years. I was given up to die after 14 years of poisonous meds that cause many side effects. I through out the meds and changed my diet. My health improved greatly. I eat greens, eggs, meat and cheese and fermented dairy products. I have few fruits and veggies low in carbs. With coffee, tea and cocoa I use heavy whipping cream, coconut milk and almond milk mix. I lost 50 lbs after 6 months. All blood work went to normal.

Got my 500 watt Meat Your Maker grinder for Christmas. Getting ready to grind a complete brisket that I scored for $2.99 lb! That $2.00 a lb. Cheaper than the mystery meat in the store now. I'm a personal chef and what I will usually do when I need a massive hunk of meat or a couple of pounds bones for glacé is I go to the biggest supermarket near me and I ask the manager if they could order it for me, hardly ever get a no and they almost always get it cheaper for me :)

Carnivore since 11/23. My knees were so stiff and painful, I could barely walk. Today, they are much, MUCH better! I still take Ibuprofen twice a day, but that’s just 4 pills, opposed to 16! Also, I took one week off carnivore from Christmas Eve through New Years….needless to say, my knees quickly deteriorated! It’s from the inflammation caused by the standard American diet. My skin is much smoother, head to toe. And my hair is healthier looking.
Please say you keep all that you trim off to add to a soup bone to make broth. I think hard core carnivores call it beef tea. I just call it delicious. And it is so good for arthritis and joint pain.
Strict carnivore day 490 and will never look back. Chuck is so delicious, especially the eye section. Meat NEVER gets boring. It's my dream lifestyle. Fruit and veg are life killers and I'm super healthy eating just meat.
Day 108 of my new eating lifestyle, down 26lbs. more importantly of 3 of 4 prescriptions for high bp. Been eating lamb, venison, saw your pork loin video so I'm on my second one of those. @@mmanda515 convenient, as usually it’s much harder to actually eat above caloric maintenance without costly carbohydrates like sodas, breads, and the like. If they tracked both diets they’d probably find their non carnivore had hundreds of calories over maintenance while their carnivore didnt.
We eat that sinew and connective tissue. It's straight collagen and makes excellent broth. Great vehicle for the extra salt needed on a mostly meat diet.
I'm on strict carnivore diet. I've lost 30 lb (15% of my previous body weight) I feel amazing! I get a boneless chuck and a few ribeye to last me all week. Along with seafood, tuna and salmon.
Carnivore and meat dry ager here. I will definitely be picking up a couple of these chick rolls from my local Sam’s. Thank you for the excellent and informative video. On the subject of vacuum sealers, I have an Avid Armor ES41 chamber sealer. One of the best investments I’ve ever made. Already has saved me many thousands of dollars in the prevention of food spoilage. I use it about 4-5 times a day, everyday.
First off love the video, but as a proud Texan who has had many a Mexican grill day, it hurt my heart when you said you would use that cut with the horizontal grain behind the Denver steaks as grind. That is a perfect substitute for skirt steak (which has gotten ridiculous in price now) for fajitas. cut it into 1/2-3/4" slabs. pound it flat, marinade/season, and grill. Will hardly be able to tell the difference between that cut and skirt steak. Second, if you're in Houston and don't have a membership to Costco, I can't say enough good things about the B&W meat company on North Shepherd Dr. I don't know why but I get nervous about asking butchers for different cuts but I swear they make it easy as possible there. If you're looking for a whole primal cut like this I'd definitely try that place out.
love this! My husband was a pro chef YEARS ago before kids...we always bought CHEAP skirt steak to make Carne Asada & NO ONE had heard of it... NOW it's like a delicacy!!
100% the truth. It's the same with brisket, oxtails, chicken thighs, avocados, among many other things. They used to be extremely cheap until these cooking channels shined a light on them and it caused demand, along with prices to go through the roof. Im commenting as an executive chef and a former butcher. A. I'm currently the Meat Manager at Restaurant Depot. There are 155 locations, mostly in NY and Ca. But there are some locations throughout the Midwest. B. Ive been doing exactly this with the Chuckroll. C. Id like to suggest to the novice that just as with grinding, keeping the chuckroll itself AS COLD AS POSSIBLE will make the breakdown much easier. (Less flopping around, and more decisive cuts)
We've been carnivore for over a year = healed so many issues! Your breaking knife arrived last summer, and we love it Thank you for your money-saving videos! We broke down rib-eyes and brisket we had purchased on sale Labor Day weekend. I make chuck roast in the iinstant pot four times a week, eat hamburgers one meal daily, with lots of eggs from our chickens. Never bored eating delicious beef!
2 cups water or broth, put salted chuck roast on a rack, high pressure cook 24 min. per pound of meat. (That is about one hour for the chuck roasts from Aldi) Sometimes I set it up, and set it on a two hour delay so the salt flavor can penetrate and tenderize the meat. I let it vent naturally and serve. I pour the broth into a hot mason jar, adjust the two-way cap and let it cool and seal. Then I refrigerate the broth. Enjoy!@@tirellwhitlow9652
I’m not fully carnivore, more on the Keto side, but since changing my lifestyle July of last year I’ve lost all of pain I’ve had in my hands from being inflamed. You will definitely get there. Consistency is key.
We actually find we save money on carnivore. You find yourself only eating once or twice a day cause you just don’t feel hungry or snacky anymore. It is true freedom to not want to eat bread, cereal, or crackers every half hour of the day! Don’t have to worry about vegetables going bad and ending up in the garbage cause you didn’t eat them all quick enough. So in a way carnivore is a time saver as well; no spending hours preparing and preserving vegetables.
Yes! I love the prep time. I’ve been on many diets over the years, and the worst were the ones requiring lots and lots of vegetables. I’m glad I’m not doing that anymore!
Very well done ! I usta buy a case of Chuck rolls, there's only 2 to a case. Cut good big roasts 5 lb, and steaks. I had a large family so it was super economical to feed them. Cheaper than store bought hamburger

It would be a nice addition to weigh your chuck roll first then weigh the grind, steak and roasts separate at the end, when people apply their local area prices per pound to this it can really give them an idea of what they will save. (and also give folks an idea of how much tendon and silver-skin got cut out)
So far I've successfully processed a primal rib eye and primal NY strip. As soon as I get a grinder I'm gonna try this cut as well. Thank you for this content.
Great video! I’ve been cutting my own steaks for years, not knowing what I’m doing but still getting great results and saving a lot of money. I’ve done shell steak and pork lion. My vacuum sealer is great for packing up individual steaks and also individual servings of pot roast, brisket and such. I didn’t know how to get a whole chuck until now because I’ve never seen them displayed. I think I may invest in a better grinder since my Kitchen Aid attachment is so slow. It’s OK for the scraps off shell steak or Brisket but would take me a week to grind all that meat on the chuck, let alone running it through 3 times. All those tendons and unusable fat goes in a tray under low heat in the oven. The rendering goes in my deep fryer since I don’t use vegetable oil and the chunks get a little salt. the dog loves them. No waste at all and the fries are great.
I subscribed. Between this channel and meat dad I can see saving a ton of money. I am just starting a carnivore lifestyle. The hardest part of it is the pushback from people in my life. I am already seeing positive results.

As another 75 yo I have been on a semi keto-carnovoris diet fo 1.5 years. I was given up to die after 14 years of poisonous meds that cause many side effects. I through out the meds and changed my diet. My health improved greatly. I eat greens, eggs, meat and cheese and fermented dairy products. I have few fruits and veggies low in carbs. With coffee, tea and cocoa I use heavy whipping cream, coconut milk and almond milk mix. I lost 50 lbs after 6 months. All blood work went to normal.
Try eating nothing but beef,water and salt for 30 days. You might find that you will feel even better without all the toxins in that stuff like tea,greens and cocoa.I don't bother getting any blood work or seeing any doctors for 15 years. Do they even know what the figures should be for a person on the PHD. What the doctors think is High Cholesterol is actually what we all should have. Try telling the pill pusher that statistics show that a high LDL is associated with a lower death rate for all age groups and causs and he will still push the statins. Their income depends on us being sick.

Hey maybe this is a dumb question, but how do you manage food safety with such a huge piece of beef? So that it doesn't get to too warm of a temperature and then the multiple cut surfaces pick up (or allow the growth of) bacteria that then get ground into the ground beef or are latent on the steak cuts? Do you have any recommendations on time that it should take to cut before you get concerned about warming?

I went predominantly carnivore about 4 years ago. After son was diagnosed with Crohn’s and had four doctors, tell me not to worry about his diet. I was told to just let him eat whatever he wants so he could gain some weight. Went to a functional doctor and he introduced us to diet ideas consisting mainly of fatty meats, and some vegetables, soups made with bone broth. After doing some of my own research and fine, tuning his diet and watching him get off from nine medication’s, I was eating this way as well. I laugh when I sit down to a big ole ribeye, or a juicy chuck roast, or simply, crab legs with a side of shrimp scampi.😋🤤😋! No complaints here. I often laugh at what I’m able to eat at 60 and have the body I had it 30! I did this with a very minimal exercise. But now I have more energy and I am much more active with working out. Chuck roll is on my next Costco list!

@@paulseverson2307 I'm not sure where you can find grass fed but I don't think it really matters. Ken Berry says the grass fed is maybe 1 to 3% better...that definitely isnt a deal breaker. Buy the chuck roll and enjoy! :)
im a meat cutter at costco yeah knock on the window and ask us for any uncut meat and we can hand it to you in a cryovac package! its a good for our sales and saves us time cause we don't have to cut it up so dont be shy... just keeep in mind sometimes when we hand you the cryovac meat you're gunna see some brown parts on the slab of meat where it looks slightly cooked, its cause it is lol before they vacuum seal the package they lighlty torch the outside of the meat to get rid of any bacteria/germs

We eat mostly wild venison (not near farm's). Cold water fish, grouse and wild rabbits. Pick wild mushrooms and berries. I'm 62, don't take any meds. I fish, hunt and go in the hard woods and cut firewood. What a great life!!

Just bought a 26lb chuck roll at Costco in California, 139 bucks. Also got the meat grinder, vac sealer and some new knives, that was pricey. Only lost a lb of trimmings. Freezer got stuffed with steaks and ground beef tonight. Great video thanks

I would offer good luck, but you won't need it since it's so natural once you get fat adapted. Autoimmune conditions are a result of gut health, which improves rapidly when you eliminate fiber in your diet.

Roughly $4.49 per pound!!
I buy the whole chuck roll at my local Sam's Club. Note: I never throw away any of the so-called inedible parts! Instead, I fry it up then boil it a few hours (no added seasoning) to get 2 products...1. Rich beef broth and 2. Tasty bits to add to my dog's food (he loves these added treats).
I add the broth to soup, stew, and gravy. Win win for extra (free) flavor for me, and chewy treats (free again) for my dog since I'm not just tossing those "inedible" parts in the trash!
Just for an idea (not holding you to prices,) but can you give me an idea of how much these prices are? Price of the whole shoulder and weight? And how much do you think it saved you over all?

After cooking my meat, I pour in some broth and let it come to a simmer. Then drop in a few eggs and salt. Egg soup - yummy!

I was raw vegan for many years and did feel good for a long time and then started to really suffer from psoriasis and irregular heart beats. I thine went on more of a healthy standard diet and was often sick. Since trying carnivor (1.5 years now) I have not been sick once and my psoriasis is all but cleared up, heart beats like an atomic clock and feeling great! Lost a bunch of weight too.

Do you follow Dr. Anthony Chaffee on yt? He talks about how most of the pesticides in plants were made by the plant. They are masters of chemical warfare since they can't run away from a predator. Then there's the antinutrients that bind minerals so they are largely not able to be absorbed. The amino acid peptides in plants are called Prolamines and research shows the prolamine peptides are more difficult to digest than animal-based peptides so the bioavailability is quite a bit lower when eating plant based. One other thing I';; mention is that plants have their own versions of chole-sterol but they're plant sterols. The human body inappropriately tries to incorporate those plant sterols to build tissue as if they are cholesterol.
I'm a hunter, farm raised animal grower, and 100% carnivore. I just wanted to say thank you so much for these videos. It has made my homestead life just that much easier.

Funny video with some good tips. Chuck pot roasts have more fat, and therefore more flavor, than those from the round. Beef round roasts suitable for pot roasting are round tip, round rump, bottom round and eye round roasts. Most beef round and chuck pot roasts can be used interchangeably, with only slight adjustments in cooking time. Also, the nice cuts should turn into steaks and kabobs. Lets' get cooking. Chef

My family doesn't like organ meat, so I hide it in the ground beef. I use 1/3 organ meat (liver, heart, kidney) to 2/3 beef. I grind the partially frozen organ meat......less mess when partially frozen. Then I grind the beef and measure the 2 meats in a bowl and mix before freezer packaging. I use this mix for meat loaf, casseroles and patties. No one complains.
i HATE liver and kidney. Never tried heart. My dogs won’t eat chicken hearts or raw liver (they’re on raw diet). I’ve had - and enjoyed- fried bull testicles 😂 so maybe i’d like deep fried chicken liver??

I picked up a chuck roll from Costco but I had to ask the butcher for it. It wasn't in the meat display. He had to weigh and label it so I asked him just to leave it out with the other meats and I would pick it up on the way to check-out. He said he couldn't do that and he needed to hand it to me personally. It was like he was selling chuck roll under-the-table. And yes, I'm a carnivore.

I have a long way to go and just want something to work for me and feel like a normal person without all this fat hanging around me. But loosing a massive kilos like you did in search small period of time would fire up my soul so bad and declare once and for all freedom from meds, lying doctors and nutritionists. @@shayannesmith3953 I have tried multiple diets over the last 20 years. They always fail or I fail at them. They all had complicated recipes, made me count calories, left me hungry, or gave me headaches and no energy. With carnivore, I only eat once a day. Dinner with my family. I'll eat until I'm completely full. I'm simply not hungry the next day until dinner. If, on occasion, I do get hungry, I just grab some meat, eggs, or a little cheese and that holds me over just fine. On a side note, my wife hasn't been able to eat eggs for about 5 years. She stopped eating vegetables and was doing mostly a carnivore diet and now her stomach is healed enough to eat eggs again. Good luck and stick to the lifestyle and I'm sure you will see great results!

I see you using all the "scraps" for grinding. Try using them for the airfryer. Season with salt, arifry 6 min toss them 3 more min. Coat with butter and enjoy. Been mostly carnivore for 6 months now and SO enjoy those "scraps" in the airfryer.

The carnivore diet is magical. I admit I’m not 100% carnivore, but rather ketovore, which is a carnivore who has a little bit of plant foods here and there. One thing I love about it is how much easier it is to cook. I used to make these huge salads and elaborate plates of sautéed veggies and chopping up all those veggies and rushing to use them all up before they went bad was so much work for something that your body doesn’t even need anyways.
How did you eat for ketovoire? I’m thinking that’s what I’d like to do and my grandson that’s 8 too

Good video! Thank you! I'm all about the chuck roll! I'm a strict carnivore and I just wanted to share with you that once you go about 2 weeks or more, you'll actually crave meat, especially beef! Your cravings for carbs and sugar will disappear! The first 2 weeks is the hardest, but after that it's smooth sailing, at least it was for me! I've lost 77 pounds since August 7th, 2023, and all my health issues disappeared! Seriously! I'm only 3 pounds away from my goal weight! I did a combination of the carnivore diet and OMDA, one meal a day.

Went full carnie after the calendar flipped to 2024 and i feel like im 53 going on 23. It's like a miracle. When Dr. Chaffe was shown that piece of bacon and declared it to be healthier than any plant you can eat - I was sold.
Same been carnie since 2024 😊 it’s been a challenge with oxalate dumping but I feel mentally amazing my adhd symptoms are almost gone still waiting for the 3 to 6 months for my thyroid to get fixed 😊

@ird7976 Most cattle is ranched. There are vast swaths of grasslands in North America that aren't very suitable to farming. Something those ecokids don't understand/refuse to care about. It's far more economical to let the cows roam around and graze then to have them in a feed lot eating corn or something unhealthy for them. Are they eating grass? Not in my area they're eating whatever desert plants they find but they do fine and yes deserts can have grassland we in fact have lots of good grazing land in New Meheeeco.
I've recently been diagnosed with an auto immune disorder. Along with a whole pile of other issues. I am starting this diet immediately as i have heard only great things. I am also into the break down of animals into their specific steaks, roasts etc. So this is right up my alley.

My husband is visiting with the carnivore diet, and while watchin some videos, this one of yours came up. I have revisited the video a few times. We are pretty cheap, so this was a good deal. Our favorite cuts of meat are chuck roast & chuck eye steak. (Some times I even make Yorkshire Pudding with the roast. A family favorite.)
We were at Costco and I asked a meat dude IF they had Chuck Rolls, and how much. He comes back a few minutes later with a big hunk of beef on his shoulder. So we brought it home.
We got lost cutting meat, and were watching your video, eventually we cut it up. Ended up with 5 roasts, 19 steaks, & some spare meat which I will cut into stew meat. I sure was tired. My husband learned how to remove silver skin.
The problem we had was our chuck roast didn't exactly look like yours, or even close. We just got lost on the "Chuck Road Map." Is there maybe a way you could diagram a roast, or make a multi colored piece with clay or something (similar to what doctors use to show you why your knee hurts.}. I had my laptop right above where we were cutting, and we still couldn't tell where we were at on the hunk of roast. I could use colored toothpicks to keep track of the different sections of roll.

As another 75 yo I have been on a semi keto-carnovoris diet fo 1.5 years.
I was given up to die after 14 years of poisonous meds that cause many side effects. I through out the meds and changed my diet. My health improved greatly. I eat greens, eggs, meat and cheese and fermented dairy products. I have few fruits and veggies low in carbs. With coffee, tea and cocoa I use heavy whipping cream, coconut milk and almond milk mix. I lost 50 lbs after 6 months. All blood work went to normal.

I'm a personal chef and what I will usually do when I need a massive hunk of meat or a couple of pounds bones for glacé is I go to the biggest supermarket near me and I ask the manager if they could order it for me, hardly ever get a no and they almost always get it cheaper for me :)

Carnivore since 11/23. My knees were so stiff and painful, I could barely walk. Today, they are much, MUCH better! I still take Ibuprofen twice a day, but that’s just 4 pills, opposed to 16!
Also, I took one week off carnivore from Christmas Eve through New Years….needless to say, my knees quickly deteriorated! It’s from the inflammation caused by the standard American diet.
My skin is much smoother, head to toe. And my hair is healthier looking.
If you still take ibuprofen, try 2 boron instead. It is a trace mineral and does wonders for aches in joints.
I make chuck roast a ton, and I add Asian fish sauce into the mix to add flavor and salt. It works great and the chuck tastes so much better
Please say you keep all that you trim off to add to a soup bone to make broth. I think hard core carnivores call it beef tea. I just call it delicious. And it is so good for arthritis and joint pain.
Bone broth will save you on collagen supplements too
Strict carnivore day 490 and will never look back. Chuck is so delicious, especially the eye section. Meat NEVER gets boring. It's my dream lifestyle. Fruit and veg are life killers and I'm super healthy eating just meat.

How many calories a day on both

@@mmanda515 convenient, as usually it’s much harder to actually eat above caloric maintenance without costly carbohydrates like sodas, breads, and the like. If they tracked both diets they’d probably find their non carnivore had hundreds of calories over maintenance while their carnivore didnt.

Himalayan is the posh word for Pakistani. People wouldn't eat Pakistani salt.
We eat that sinew and connective tissue. It's straight collagen and makes excellent broth. Great vehicle for the extra salt needed on a mostly meat diet.

Slow roast has been the key to me sticking to carnivore. So easy done as a pot roast.

I feel amazing! I get a boneless chuck and a few ribeye to last me all week. Along with seafood, tuna and salmon.
Beef and seafood, great combination.
Be certain that you are not buying/eating farm raised salmon. Only wild caught. All salmon is not equally created.

Carnivore and meat dry ager here. I will definitely be picking up a couple of these chick rolls from my local Sam’s. Thank you for the excellent and informative video. On the subject of vacuum sealers, I have an Avid Armor ES41 chamber sealer. One of the best investments I’ve ever made. Already has saved me many thousands of dollars in the prevention of food spoilage. I use it about 4-5 times a day, everyday.

First off love the video, but as a proud Texan who has had many a Mexican grill day, it hurt my heart when you said you would use that cut with the horizontal grain behind the Denver steaks as grind. That is a perfect substitute for skirt steak (which has gotten ridiculous in price now) for fajitas. cut it into 1/2-3/4" slabs. pound it flat, marinade/season, and grill. Will hardly be able to tell the difference between that cut and skirt steak.
Second, if you're in Houston and don't have a membership to Costco, I can't say enough good things about the B&W meat company on North Shepherd Dr. I don't know why but I get nervous about asking butchers for different cuts but I swear they make it easy as possible there. If you're looking for a whole primal cut like this I'd definitely try that place out.

100% the truth. It's the same with brisket, oxtails, chicken thighs, avocados, among many other things. They used to be extremely cheap until these cooking channels shined a light on them and it caused demand, along with prices to go through the roof. What was the first few weeks like?
Im commenting as an executive chef and a former butcher.
A. I'm currently the Meat Manager at Restaurant Depot. There are 155 locations, mostly in NY and Ca. But there are some locations throughout the Midwest.
B. Ive been doing exactly this with the Chuckroll.
C. Id like to suggest to the novice that just as with grinding, keeping the chuckroll itself AS COLD AS POSSIBLE will make the breakdown much easier. (Less flopping around, and more decisive cuts)

We've been carnivore for over a year = healed so many issues! Your breaking knife arrived last summer, and we love it Thank you for your money-saving videos! We broke down rib-eyes and brisket we had purchased on sale Labor Day weekend. I make chuck roast in the iinstant pot four times a week, eat hamburgers one meal daily, with lots of eggs from our chickens. Never bored eating delicious beef!
Just curious, how do you cook your chuck in instant pot? Time? And seasonings?
2 cups water or broth, put salted chuck roast on a rack, high pressure cook 24 min. per pound of meat. (That is about one hour for the chuck roasts from Aldi) Sometimes I set it up, and set it on a two hour delay so the salt flavor can penetrate and tenderize the meat. I let it vent naturally and serve. I pour the broth into a hot mason jar, adjust the two-way cap and let it cool and seal. Then I refrigerate the broth. Enjoy!@@tirellwhitlow9652

We actually find we save money on carnivore. You find yourself only eating once or twice a day cause you just don’t feel hungry or snacky anymore. It is true freedom to not want to eat bread, cereal, or crackers every half hour of the day! Don’t have to worry about vegetables going bad and ending up in the garbage cause you didn’t eat them all quick enough. So in a way carnivore is a time saver as well; no spending hours preparing and preserving vegetables.

Yes! I love the prep time. I’ve been on many diets over the years, and the worst were the ones requiring lots and lots of vegetables. I’m glad I’m not doing that anymore!

Very well done ! I usta buy a case of Chuck rolls, there's only 2 to a case. Cut good big roasts 5 lb, and steaks. I had a large family so it was super economical to feed them. Cheaper than store bought hamburger

It would be a nice addition to weigh your chuck roll first then weigh the grind, steak and roasts separate at the end, when people apply their local area prices per pound to this it can really give them an idea of what they will save. (and also give folks an idea of how much tendon and silver-skin got cut out)
So far I've successfully processed a primal rib eye and primal NY strip. As soon as I get a grinder I'm gonna try this cut as well. Thank you for this content.
Great video! I’ve been cutting my own steaks for years, not knowing what I’m doing but still getting great results and saving a lot of money. I’ve done shell steak and pork lion. My vacuum sealer is great for packing up individual steaks and also individual servings of pot roast, brisket and such. I didn’t know how to get a whole chuck until now because I’ve never seen them displayed. I think I may invest in a better grinder since my Kitchen Aid attachment is so slow. It’s OK for the scraps off shell steak or Brisket but would take me a week to grind all that meat on the chuck, let alone running it through 3 times. All those tendons and unusable fat goes in a tray under low heat in the oven. The rendering goes in my deep fryer since I don’t use vegetable oil and the chunks get a little salt. the dog loves them. No waste at all and the fries are great.
In Honolulu, Higa Meats on Nimitz Hwy sells chuck roll. They also will cut for free with 24 hour notice.

Try eating nothing but beef,water and salt for 30 days. You might find that you will feel even better without all the toxins in that stuff like tea,greens and cocoa.I don't bother getting any blood work or seeing any doctors for 15 years. Do they even know what the figures should be for a person on the PHD. What the doctors think is High Cholesterol is actually what we all should have. Try telling the pill pusher that statistics show that a high LDL is associated with a lower death rate for all age groups and causs and he will still push the statins. Their income depends on us being sick.
