      I sauted the onions and diced tomatoes because I dislike crunchy raw undercooked onions and it helps with the acidity of the tomatoes .... still only used the 'one pot'

    I make a delicious one pot pasta dish, really good. I sauté 2-3 cloves minced garlic in some olive oil. When that is softened, add about 2 cups of broccoli florets, cut into small pieces. Add 12 ounces of spaghetti, broken in half and enough water or (better) chicken broth to cover everything by 2 inches or so. Increase the heat to a soft boil, stir everything every couple of minutes until the pasta is cooked. You can add more liquid as necessary. Toss some toasted ( or even untoasted ) pine nuts, red pepper flakes and grated Parmesan cheese with the cooked pasta dish,
    Yummy and easy!

      Yum! That sounds good too! I like the idea of getting broccoli in there for your idea or for the Martha dish. Getting kale or chard involved could add great nutrients too.

    Just made this. It actually came out much better than I expected it to. A few tips: You might have to drain it a little when 11 minutes has passed. Season as you cook as well. Season after, salt and pepper. Ensure you add both the olive oil and cheese after. Great, simple dish.

    Adjustments I made:
    Start by sauteeing the garlic, onions, and tomatoes in olive oil until they start getting some color. Take off heat. Add pasta. Add in chicken stock, not water. Generously salt and pepper, not too much salt though because parm is salty. Add more red pepper flakes and some Italian seasoning. Once the pasta is done, add the Parmesan to the pan and stir around so it becomes homogenous. Add in a pat of butter and mix that up as well. Serve

    • @holden6104
      @holden6104 4 года назад +3

      Yes agreed. Timings are the key in this dish. If you cook the pasta too early, you won't get the evaporation needed to intensify the flavor of the dish before the pasta becomes overcooked. Cooking down the vegetables first is a good idea to get the water out of them.

    • @ElizaDolittle
      @ElizaDolittle 4 года назад +2

    LOVED this! Couple of minor changes: used 8 ounces of pasta instead of 12 (for just 2 ppl), sautéed the onions first (vidala-nice and sweet), used 2tsp minced garlic instead of raw cloves, and used 1/2 low sodium chicken broth 1/2 cold water. Delicious! Cooks the way she shows, no extra time or cooking needed. Use thick dry pasta like buccatini or fettuccine, so it won’t cook too quickly. Martha Stewart deserves her #humblebrag on this, it‘s a winner.

    This is a lovely and very quick and easy dish! I tweaked, using an organic veggie broth cube in the water to add some taste, and baby spinach instead of basil, as I didn't have fresh basil. Left out the chili flakes and the cheese. And used less water. In 11 mins, as she saids, the pasta was al dente, the broth gave a lovely salty taste and the water had just about evaporated without dry cooking it. I did not stir it all the way through, just put it on and came back to it after 9 mins of cooking it. Absolutely lovely, fully picky eater child-proof and I will be making this a lot!

    Fantastic dish Martha! An Italian person would had first poured olive oil in the pan, next the garlic , onion and crushed red pepper, and would had sautéed them in the oil and crushed red pepper, then added the tomatoes, but would had roasted them a bit in the oven to double their taste, then add the water, basil and pasta.. These steps will double the taste ... promise.

    I am Italian and there is nothing wrong with the basic idea of this way of cooking pasta. I heard the same concept the first time from a famous Neapolitan comedy actor. The seasoning is also pretty good, not too much and simple basic ingredients. The one thing I would not have done is to put both onions and garlic. Normally you put one or the other...In this case I would have opted for garlic only, but that is subjective

    At the risk of being booed from this site I want to say that I like this recipe. It’s kind of like risotto for pasta. I do a couple things differently though. As the pasta cooks I keep adding freshly grated parm cheese, just hold the grater over the pot and keep adding and stirring. It comes out super creamy and delicious. At the end I remove it from the heat and add in about a pound of raw peeled and deveined gulf shrimp. They cook perfectly in the hot pasta in a few minutes.

    I cooked some Italian Sausage, removed the sausage from the pan, then proceeded to cook this dish with fettuccine in the same pan. I also added small pieces of red and yellow peppers and used less salt. I only used only one cup of water, because I was watching as I made this and didn't hear correctly. This cooked very well and tasted great, so I know I will be making this dish again. I needed another meal that is fairly simple and made use of the sausage I buy when I make homemade pizza. Because this dish was so simple, I had time to get my pizza dough for tomorrow already made. I'll make this dish again and again, especially during the summer when I have a lot of ripe tomatoes fresh from the garden.

    Yo, I REMEMBERED this video after making the TikTok pasta for dinner tonight. This IS the TikTok pasta but BEFORE the TikTok pasta. The major difference is the Feta and the use of onions, as well as the no pre-boil pasta aspect, of course. The original trending variant of the TikTok pasta doesn’t call for onion, but some of the other variations she made have onion. And she ends with a sort of cheese and olive oil, haha.
    I still haven’t made this pasta recipe, and I need to try it!

    Wow. After ready some of the comments, people are reacting to this as if she clubbed a baby seal. It is not authentic Italian. Nowhere and nobody is saying that you have to cook pasta like this. It was just a suggestion. And as far as crazy food goes, this is mild. It's not like she is saying to mix crab meat and strawberries and serve with peanut sauce. Seriously.

    I love the discussions in the comments between italians and everyone else. I think there is no problem with people eating and preparing this pasta, by all means do it, the only thing I contest are the constant efforts at trying to needlessly cut corners in cooking... It seems that the main reason to prepare this dish is the ease of just putting everything in one single pot and cooking in only 11 minutes. Italian cooking is famous for its flavours and simplicity and if you were to make an Italian-style pasta dish with the same ingredients as the video it would take around the same time (2 minutes for the pasta water to boil, +7/8 minutes for the pasta to reach a good 'al dente' texture, if you like it that way). The only difference would be that while the pasta is cooking you would use another pan to cook the sauce, and that would be cooking at the same time of the pasta mind you... So all in all Martha Stewart is suggesting that this whole recipe has been created because you don't want to clean an extra pan... Is it worth it/is this recipe really needed? Of course I won't take into account the fact relating to the completely different flavours that result in boiling everything in water together versus cooking the garlic in some oil, adding the tomatoes, the basil at the end and then adding the pasta that cooked in its own pot to the mix. Degustibus.

    • @flowersafeheart
      @flowersafeheart 9 месяцев назад

      I hear you. And another difference I imagine is that cooking it all together in one pot gives the flavors a chance to meld with the pasta flavor which sounds nice. That's kinda like the concept of a soup.
      Plus in the one-pot version, the pasta is I think boiled in less water than usual which I imagine means less of the pasta's flavor and nutrients are lost.
      Maybe best of both worlds would be start to sautee the garlic and onion together first alone (careful not to burn the garlic), then add the rest into the same pot including the pasta.
      I imagine that would add more flavor as could first roasting the tomatoes. Or maybe first roast tomatoes, onions, and garlic (and anything else desired such as maybe mushrooms, carrots, broccoli...)?
      At that point in my ideas it's like I'm inching closer to the idea of first making a sauce and cooking the pasta in the sauce with water (or maybe better yet broth or stock) if that would work well.

    I flavor my pasta with extra virgin olive oil, a little tomato, sometimes a tiny slice of grass fed cow butter and PECORINO ROMANO LOCATELLI cheese after it’s cooked. Then I add sauce on top with a sprinkle of cheese above with more fresh basil.
    Sauce is just a matter of heating the San marzanos to bubble after the garlic become golden brown in the evil.
    This is fast and delicious.

    This is her own version of one pot pasta you Creepy Critical Hags!! And I've tried it and ever since I found out about it I recommended it to everybody it's flavorful because the starch in the pasta thickens the garlic the onion ,the tomato, the basil and the salt together into a nice light sauce 😋. And ive done variations of my own where i sauté sausages before hand or whatever protein i felt like.

    Ok so it's not true traditional Italian pasta dish. What it is is simply what the title suggests. Every time pasta hits water, one doesn't have to invite Italy into their homes. Let's calm down here.

    I came up with a similar dish on my own, but I saute the tomatoes ,onions garlic and basil in olive oil in a separate pan and add it to the pasta cooking in the skillet and add the veggies when the water is about 3/4 evaporated. the starch in the pasta water incorporates into a yummy sauce with veggies.

    Thank you Martha, brilliant idea, and I will definitely prepare my next pasta like this. Now everybody is a chef. Recipes are not doctors prescriptions, you are free to modify it to your liking. I'd saute the onion and garlic first, and add the seasoning I like, then add the rest of ingredients .Martha showed us how to prepare it in one pot and in a short time, and that's the whole idea of the video. some people like food to be boiled without sauteed or seasoning. Lots of Asian cuisines boil the ingredients.

      You need more tomatoes and basil. They’ll really add flavour. Less water (about 3 cups instead of 4) also keeps more flavour in the dish. Plus I personally enjoy it topped with fresh, thin sliced mozzarella. The dish becomes gooey and cheesy that way 😊
