- Martha Stewart and her infamous one pan pasta took the internet by storm. So taking a break from my recipes, i wanted to do another test the chef video. So i figured OK, this one pan pasta has done the rounds, it's garnered millions of views, but does it actually work? Ir is it complete garbage. well, there's only one way to find out...and that's make the dish!
The Ingredients for Martha Stewart's one-pan pasta are as follows:
Serves about 4 people so she says
►12oz of linguine (340g)
►12oz of grape or cherry tomatoes (340g)
►1 onion thinly sliced
►4 garlic cloves thinly sliced
►1/2 tsp of chilli flakes
►2 sprigs of basil plus extra for garnish
►2 tbsp of extra virgin olive oil (no idea where this is used in the recipe except for garnish!)
►Coarse sea salt and freshly ground black pepper
►4+1/2 cups of water (1065ml)
►Freshly grated parmesan cheese

I’ve made this loads of times. Never had a problem. My wife and I love it.
Same here. A regular go-to, delicious.
We make the water with chicken broth and somewhat less water. Have also added some pre cooked chicken for protein, works out great.
I made this but only put enough water to cover the ingredients which avoids the overcooking of pasta . I personally LOVED it - super creamy . I added oregano 🌿 in addition to basil for more flavor. Took only 11 min total which includes the 2 min boil . Stir every 3 min and squish the tomatoes with tongs . I highly recommend.
I knew that was way too much water I used three cups of water and it worked out great. I also lightly sauteed onion and garlic because I like the taste of both. Thanks for the review though.

I’ve made it loads of time, and it’s fine. Of course, I followed her recipe and have sharp knives, so sliced the onions really finely. Yours weren’t chopped finely, and I can see your knife isn’t sharp by the way you were hacking through those tomatoes: you used the wrong pasta (as you know); your stove is weak (as you know), which essentially boiled the pasta for too long (as you know). So all said, you were at a disadvantage. I really enjoyed the video, though - I like your humour :)
Maybe I need to revisit it when I dont have a bs stove 😂
I just made it, it worked for me. Wished I had more fresh basil from my mom's garden tho. Nice vid 👍
Just a suggestion, a world tour series would be nice, doing certain dishes from different countries, doing say 2 weeks of that country then move on. However loving this series, and look forward to seeing what's next, keep up the great work 👍

yeah that's too much water.i have a recipe like that.saute the vegetables first,add fresh and canned tomatoes and then the raw pasta with as much water they need .it turn's out lovely
I think I'm going to play around with her recipe and improve it. My cooks intuition thought there was too much water. Thanks for the tips my friend
The linguine is so much thinner so probably cooks much faster, also I really appreciate you doing this and your honest opinion 💯

Never met one pan pasta dish that worked. One pan rice dishes though, loads of them 😋

Yes, rice plays nice compared to pasta.
Using the linguine noodles would have helped absorbing the liquid. The spaghetti pasta would cook sooner. Therefore making it overcooked.

If only it was tasty and not overcooked. I may adapt this to make it better.
Sometimes you have to adapt recipes to get them at their very best. I admit, I think I’d rather roast the tomatoes and onions, infuse olive oil with garlic and make it that way, but then you lose the advantage of very few dishes. It’s all a matter of personal taste and preference. Still, its a good idea for people who don’t like cooking but like fresh food. xxx

I love Chef Jean Pierre His recipes are fabulous but are quite expensive to make Perhaps you could do something similar and less expensive but still delicious

About the sliced onion, (when you said that Stewart seemed to use more than you did): from what I've read in various places, American onions are about the size of soccer balls! 😂
Also, maybe that extra ½ cup of water might just have tipped the pasta over the edge to the "gluggy" stage...? 🤔

Hmm, I don’t hate it. But I want to do this recipe with chickpea protein pasta and even less water. Not sure if I get why there’s onions in the sauce
Wait, wait, wait. This should be cooked like an arroz con pollo. Cook the onions and tomatoes first, dump in raw dry pasta to toast and then add wine and broth. What the heck, Martha.

Maybe use larger type of pasta where it takes more time to cook and can absorb more liquid. She used linguine and you used spaghetti big difference in thickness.
How did I miss this one? RUclips hiding videos again? Anyway, the pasta looked pretty good. I might try it and see how it goes. I have a decent Brie pasta one pot meal, if you’re interested I could send it to you. I’m going to have to think about a cheffy recipe challenge 🤔

I found the recipe to be perfect, except for the chili flakes. I like the chili flakes, but they seem to make my face sweat. Lol
You used spaghetti not linguine, which is much thinner. I used other pasta and didn't have enough water. It is very good. Try making it again with other pasta.
I have a one pan pasta dish I make which turned out very well. It is called Skillet Lasagna (Crouton Crackerjacks on utube). It uses oven ready lasagna noodles which cook faster. I have tweaked the recipe a bit but it is a winner in my view. I also have a few other one pan pasta recipes that I like.

Adam you are right as the BTU's of the stove top does matter and the choice of pasta too. Reducing the liquid would have been the thing to do when you alter a recipe as pasta absorbs liquid till it gets 'fat" and you had your doubts too.. I'm a big fan of one pot dinners and makes feeding this lot here so easy and been doing them for years as I'm a lazy cook and there is less washing up for them to moan about.
Exactly Brenda. I find far too often that these celebrity chef recipes are made using top end equipment, and doesn't help the average home cook. And it has shown in this recipe
Adam Garratt absolutely correct my dream stove would be a commercial six burner gas top stove and a twin electric convection oven some where in my dream kitchen and a walk in pantry for my pots, pans, canning supplies and baking items. I just bought I saucier pan and honestly it’s the best pan for reducing liquids because I put together home made baked beans in sauce and it reduced beautifully.
This recipe could definitely be improved by starting the onions, tomatoes and garlic in the pan with seasonings and olive oil first. then when the onions have softened & tomatoes have blistered you could add the water, pasta and basil and boil until water is gone & pasta just cooked through. Still a one-pot recipe that way
I made this years ago and it turned out fine (the pasta was cooked correctly) albeit a bit under-seasoned (but I guess that's on me).
Lot of Martha's savoury recipes, I find fit under that title ' Not gonna win any awards' .. some are on the bland side ..
Especially salad and youtube pasta recipes..just saying.

You did not do the parm correctly, as the recipe directs. Ours was fantastic, still is, every time.
Yeah, a reduction in the water, quicker to evaporate= less cooking time for the pasta and more concentration of the flavours.🤷🏼♂️
My fave tv chef/cook is Nigel slater..he seems to be more relaxed and his recipes seem less ‘dressy’ ...maybe you could try one of his “one pot” recipes. 10 out of 10 for effort for this one mate. Pity about the result.😉🤷🏼♂️

Great trial however I prefer my pasta boiled separately. Martha's method creates a way overcooked pasta with a lot of starch in the sauce just by watching this crap method. No matter how much energy your stove top is infusing into the pan. But I might be wrong. I prefer my pasta the 'old school' way which is providing me with a lot of options to adjust the pasta sauce. And boiled basil is an absolute 'no no' for me. Keep up your excellent work mate.

Could you use less water
Maybe that would fix the overcooked pasta. But the flavour is still quite bland. I think that is down to omitting any form of frying.
It's a shame she doesn't have you sauté the onions (and maybe the tomatoes??) before adding the other ingredients, it'd still be a one pan dish, but maybe a bit less 'meh'. I'm all in favour of one pan dishes (due to disability, it's incredibly helpful to have options that minimise the number of steps and amount of washing up) but only if they're, you know. Good?

One pot pasta don't work the starch from the pasta comes out in the water and makes the dish stodgy. The only way you can pull this off is to use precooked pasta. I have used precooked lasagna pasta noodles, they taste like s%$&t. Mogges is getting good at photo clowning you. Cheers mate

I would never make pasta this way. It's easy enough anyhow.
One pot to boil the pasta al dente and then pour in a strainer, and a
second for the sauce. Or put Gorgonzola and cream on it - not from fridge!
same. I think the onions, garlic and tomatoes would benefit from being sauteed in a little olive oil, then add the cooked pasta in.

Love that idea! I did a live stream a while ago where viewers picked ingredients from the shop. And I made a video cooking up those ingredients into a meal. Was a lot of fun

Not really surprised at how this one turned out. I assume after a thousand years of cooking pasta we know how it works best and to decide to ignore that experience by chucking everything into a single pan I would be very skeptical of the results. Unfortunately, it looks like Martha's recipe is too good to be true.

when i converted the measurements 4+1/2 cups of water is 1065ml of water. Maybe it's different depending on the country you live. Maybe America needs to go metric already! haha
