Gordon Ramsay Cooks Up a Simple and Easy Pasta Dish in Just 10 Minutes!

    INGREDIENTS
    Kosher salt
    1 pound dried spaghetti
    4 ounces pancetta, cut into lardons
    1 tablespoon grapeseed oil
    Freshly ground black pepper
    2 large cloves garlic, sliced
    1 fresno chili, sliced
    4 tablespoons unsalted butter, divided
    ½ cup frozen peas
    1 bunch chives, roughly chopped
    1 bunch parsley, roughly chopped
    1 bunch basil, roughly chopped
    ¼ cup vegetable stock
    1 head green leaf lettuce, roughly chopped
    1 lemon, zest and juice
    Chili flakes, for finishing
    Grated pecorino, for garnishing
    PROCEDURE
    1. Place a large pot of water over medium high heat and bring to a boil. Once boiling, salt the water generously and add in the pasta. Stir the pasta to make sure it does not stick together and continue boiling until al dente, about 8-9 minutes.
    2. In a large skillet over medium heat, add the pancetta and grapeseed oil and cook until the lardons begin to caramelize, about 3 minutes. Season the pancetta lightly with salt and freshly ground black pepper.
    3. Add the garlic and fresno and continue cooking until fragrant, about 2 minutes. Add 2 tablespoons of butter and continue cooking until the butter has melted completely.
    4. Add in the frozen peas and continue cooking until they begin to soften, then add the chives, parsley, basil and vegetable stock. Season the sauce lightly with more salt, and add another 2 tablespoons of butter. Continue cooking until the butter has melted completely.
    5. Add ¼ cup of the pasta cooking water, lemon zest and lemon juice to the pan and stir to combine.
    6. Gradually add in the cooked pasta, tossing between additions to coat the pasta with the sauce completely.
    7. Serve the pasta with a sprinkle of chili flakes and freshly grated pecorino.

    Literally what I love about this is at the start he literally says it's "1/3 bacon, 1/3 peas and 1/3 chili/garlic" then literally by the end it's literally 95% butter

      Was thinking the same when I watched the video. So much good healthy green stuff in it, but then also 300g of butter. Heart Attack Pasta.

      LOL So I'm not the only one thinking that... He already got the render fat from the pancetta + the fat from the olive oil (used to "speed up the process")...
      Why butter?
      And why so much?
      Today I made an easy pasta (tortiglioni) risottata with mortadella... I only used mortadella + pasta + water + parmigiano... the pasta got creamy even before the parmigiano was added.
      I love butter too, but damn too much is too much.

      I kept hearing the line from "Julie and Julia" where Julia Child says "...and so much butter it'll stop your heart". I love butter but even I got to a point where I said "Okay, calm down, Gordon!", haha.

    This dish is f***ing delicious. I cook this about once a week and I can't get enough of it. Of course I use less butter and I finish it with some fresh grinded smoked black pepper to level up the bacon taste. The freshness of the lemon is gorgeous. Texture, taste, f***ing awsome! Best 10mins I spent on a dish.

      Iadd tomatoes to mine I also left the lettuce out made salad instead. Was still fucking wonderful. I will be making again , I also left out all that butter but added lil cream.

      I mean, why wouldn't this dish Gordon made taste good...he basically put (like you said) 2 kgs of butter in it...geez! The dish would be delicious with only 1/3 or 1/4 of the butter he put in there. To me, that is just cheating when you overuse fatty flavorings in recipes. Yes, OF COURSE something's going to taste good when you use 2 kgs of butter or 2 kgs of bacon! The real magic of being a chef is to make dishes that won't clog arteries but taste good. I would make this dish but only use like 1/4 butter Gordon used & I probably wouldn't put in the pancetta (Italian bacon, basically), either.

      I literally made it today and it is literally really good. I literally couldn’t find the cheese, and the store was literally out of fresh herbs and fresh chilli so I literally swapped them out for Parmesan and dried chilli/herbs and it was literally still literally really good. I would literally recommend you literally make it yourself.

    Everyone saying he messed up on the peccorino, consider this: he says peccorino incorrectly and looks at it, then at the end he correctly says parmesan. He probably asked for peccorino and whoever shopped for the video messed up and he realized in the middle of filming but had to keep going.

      Its parmigiano reggiano btw. Its the same cheese but different in a way that parmesan is parmigiano reggiano that was made outside Italy.

    Made this for lunch today. Added a few extras that were hanging out in the fridge. Used a couple of Chinese cabbage leaves instead of lettuce added a little miso paste and it was delicious. Thanks for the inspiration. Oh. Only a couple of knobs of butter.

      Stop it. You really think butter is bad for you. Please do some research. it is absolutely good for you and will not harm you. oilve oil, grapeseed and any other seed oils clog your arteries. Need some references or research on it? RUclips low carb down under seed oils. Vs animal fats. Get rid of the dam oils. eat only fat. you will do better in life. I bet you are on a statin and BP med.       @@tititichirca8250 It means that they are frozen almost immediatly after harvesting. So the vitamins and the structure did not break down. It's also the reason why frozen broccoli is healthier than "fresh" store bought broccoli.

      The freezing process also helps with their sweetness. Peas are one of the few foods that work better frozen

      I was once absolutely taken away when I got introduced to smoked salmon spaghetti, something I would have never even thought to exist. I suppose I could give Asparagus a try, it wouldn't hurt to experiment.

    This was absolutely inspiring...I just made a version of it right now for dinner. Except I used what I had on hand...bacon, peas, mushrooms, roasted red peppers, fresh parsley & garlic. And of course butter. And broth & pasta water and a bit of tomato sauce. Angel hair extravaganza. Delicious. Family loved it. I should have grilled some chicken breasts to serve with it, but who can think of everything? Thanks for this tasty inspiration, Gordan Ramsey!

      If you have a sunny window, grow your own herbs! Seeds are cheap at the dollar store as well has the pots. I ordered some seeds because by the time I found out about them selling gardening stuff it was too late lol. I now have basil, thyme, oregano, cilantro, a tiny Tim tomato plant and Thai chili peppers 😂😂 I live in NYC so I know this is doable for just about anyone. Look up Kratky for the cheapest way to grow. No soil needed just a jar and a window ❤

      You probably don’t cook often if you don’t have grapeseed oil.
      Sub pecorino with Parmesan , and Fresno chilis with whatever chilies you have. Pretty standard ingredients.

    Gordon you're my best Teacher, I'm cooking last 16 years and I use only your Recipes, but my wife, she hate me, couse the kitchen after all procedures look like a Hell, I've also learned how to litter the kitchen beyond recognition, as You!     To all the commenters here complaining about the amount of butter being unhealthy;
    Real butter is good for you. It is healthier than margarine or seed oils (canola, safflower, corn, etc). It doesn't cause heart problems despite what youve been told all your life. Butter makes you feel full faster so you eat less. Check out Carnivore diets, Keto diets or the video "Butter Makes Your Pants Fall Off" here on YT. I have no connection to any of these.

      frozen peas are fresher as they get frozen within 12 hours of picking. i use loads of frozen veg in steamer and its tastes so much better.

    I'm curious to know where this house is located if these are "household ingredients" because something like grapeseed oil, I've never even heard of, same with fresno chili, never seen it or heard of it.

    I've cooked this using both spinach and lettuce before and I have to say using lettuce is such a good idea. It really gives the dish a crunch and adds a really lovely extra layer of texture.
    Personally, I'd reduce the amount of butter, oil, stock and seasoning (as the lardons give a lot of salt naturally) but I'd actually increase the amount of lemon juice as I think that really gives it a nice kick and an extra layer of freshness, which I think this dish is all about. The fresh chillis and peas are a nice touch too.
    Thank you Gordon for such an incredible recipe and for really inspiring me to get into cooking!
