I want to say only one thing. I'm italian and this way of cooking pasta is absolutely normal in every situation where water is scarce (camping, sailing for example). It's called "pasta risottata" because you cook it like a risotto. It's nothing weird or obscene and it's quite handy when you're on a tight schedule or you don't want to do a lot of clen-up. Obviously not every pasta will be ready in 10 minutes and you'll taste the starch more than the traditional pasta but it can be really yummy. It depends on how good the cook is :-)
i agree with you. I can say that he cooked the pasta risottata in a very good way... usually when you can't Cook very well it becames a pot full of poop and nothing more...but this guy really can Cook...i would just like to say that i prefer normal pasta that has a richer taste...and also to the people who say that italians are too much possessive when it's about their food...well,then come to eat here and then try again fast foods ; trust me, when it's about food italians do it better :)(better doesn't means that other countries don't have nice plates) sorry for the grammar😊

Questo è un modo alternativo usato in alcune situazioni specifiche. Fai una bella ricerca su google e cerca pasta risottata così capirai di cosa stiamo parlando. Tra l'altro noi sappiamo cucinare la pasta ma siamo bravissimi anche a fare il risotto (che non a caso mantiene un nome italiano anche nelle altre lingue) quind fai 1+1: pasta risottata significa pasta cotta come un risotto. Se tu cuoci il riso da una parte e poi all'ultimo aggiungi il condimento hai fatto una bestialità, non un risotto. Quindi ovvio che in una cottura come il risotto gli ingredienti si cuociono insieme.

Ok I'm Italian. After watching the video and reading a good number of hateful comments from Italians (some absolutely hilarious, to be honest) I can say the idea behind this is NOT BAD AT ALL. It's kind of the same principle of cooking risotto. In fact I'd call it a "pasta risottata" (risotto style pasta). The starches come out and form the creamy texture. BUT. For whoever is going to try this at home you may want to follow this advice, as it will make it MUCH BETTER TASTING (believe me. I'm Italian.) Make it REALLY risotto-style by sautéeing the chopped onion OR garlic (please, do not use both at the same time) in the extra virgin olive oil first, on a low heat, until golden. Then add the cherry tomatoes and stir for a while, until they soften and let out some of their juice. Mash them up a little bit with the wooden spoon too. NOW you can add the pasta, sautee it for a minute until it gets lightly toasted and well coated in the sauce, then add BOILING WATER (which you will have previously heated!!! Please do not add COLD WATER) + the rest of the ingredients, salt, pepper and what not, and wait for it to cook and absorb the water like in the video. Take care not to add too much water, or you'll have to wait too long until it evaporates when the pasta could be already cooked, and as a result overcook the pasta, which sucks. Pour in just enough water to cover the pasta, then add more LITTLE BY LITTLE while it gets absorbed. This is the risotto technique. Enjoy!!
superaletta what u say is what common sense(s) should dictate, whereas this recipe sacrifices a lot of flavour for the sake of convenience. I was appaled by this way of cooking, although the result is certainly edible. You can still do much better with just one pan, though

I get Italians having problems, at least to an extent, when people say they're creating an Italian classic meal and they don't actually make the meal using the authentic ingredients. However when it simply comes to people making a meal with pasta as an ingredient and don't at all claim it's Italian dish. But it's simply a recipe they've come up with that may use some Italian ingredients, I don't quite get the issue. People use different types of bread in all sorts of different ways in many different recipes, why is pasta different? And I'm someone who wants to make and try the true Italian recipes for Italian classic foods as they are authentically made. The way you shoukd make pasta is: -boil the water with salt in it (only salt) -then put the pasta and let it cook for 10 minutes (it depends on the type of pasta you use but it is always around 10 minutes) then throw away water -then you put the sauce you made elsewhere in your pasta and eat it The fact that pasta is put with cold water really ruins it
I made this twice about 11 years ago, but added chicken breast the second time. I've had such a hard time finding the recipe so I could make it again. Here in the US it is so hot in the summer, and this is such a light meal and takes no time slaving over a hot stove. I subscribed just so I wouldn't lose it again.

I made this dish and it is my absolute favorite. I did add mushrooms, Italian sausage and a large can of Rotel. Then once the noodles absorbed the water I added butter and olive oil.

i make a similar dish but i cook the veggies in tons of oil for a long time first and then add pasta and very little water (enough to soften the pasta), cover and cook...comes out rich, creamy, flavorful and al dente every time

This is a brilliant recipe! Very Italian! I made it today too, however I added a real cappuccino and Sicilian cannoli to it. So there was already coffee and dessert! So yummy-yum.
How about cooking the pasta first and then cooking the vegis in the pan with a bit olive oil, after a while adding the pasta again to simmer in the flavored oil?

Stop! 🛑 until you try this recipe! He based it on Martha Stewart’s recipe with a few tiny changes. I’m a very good cook and instantly saw that the methods were not what I’ve ever used. But, nothing ventured nothing gained. It was delicious! I did not add the spinach until adding the Parmesan. It does have a light creamy sauce and is not gummy at all. Any recipe that only requires 10 minutes to cook is a instant winner!

-boil the water with salt in it (only salt)
-then put the pasta and let it cook for 10 minutes (it depends on the type of pasta you use but it is always around 10 minutes) then throw away water
-then you put the sauce you made elsewhere in your pasta and eat it

I made this twice about 11 years ago, but added chicken breast the second time. I've had such a hard time finding the recipe so I could make it again. i make a similar dish but i cook the veggies in tons of oil for a long time first and then add pasta and very little water (enough to soften the pasta), cover and cook...comes out rich, creamy, flavorful and al dente every time
this guy gets how to simply improve this recipe to remain one pot but also have flavor

This is a brilliant recipe! Very Italian! I made it today too, however I added a real cappuccino and Sicilian cannoli to it. So there was already coffee and dessert! So yummy-yum.

How about cooking the pasta first and then cooking the vegis in the pan with a bit olive oil, after a while adding the pasta again to simmer in the flavored oil?
That would make too much sense for this boy
Also adding a bit of the pasta water, so the starches emulsify with the oil, making it come together nicely.

Stop! 🛑 until you try this recipe! He based it on Martha Stewart’s recipe with a few tiny changes. I’m a very good cook and instantly saw that the methods were not what I’ve ever used. But, nothing ventured nothing gained. It was delicious! I did not add the spinach until adding the Parmesan. It does have a light creamy sauce and is not gummy at all. Any recipe that only requires 10 minutes to cook is a instant winner!
