I love chicken pot pie! I use the exact recipe except mushrooms. I make my pies in ramekins instead of one large pot and freeze half of them wrapped in I use cellophane and aluminum foil. I use rotisserie chicken for extra flavor and convenience since I don’t have to cook it. So yummy! 😁😋

Ordinarily pot pie would follow a roast chicken... but if a whole chicken, uncooked, simmer with herbs, onion, celery, etc. to flavor the meat and the broth to begin with. Peas, carrots, herbs... I live in France, and cognac is always a good idea, usually flamed. Pâte feuilletée is indeed a lighter choice and easier to buy than to make (layers of butter)... Bon appétit !
Cannot hack Yukon gold - I find them mushy compared to beautiful Manitoba Red's. Big difference in taste. I also make the stock with onion, celery, carrot, salt, peppercorns and a tomato scored on top will clear the broth. Skimming it as it comes to a boil also helps and simmer it a little longer. Then I have few meals of chicken soup before making the pie. And I add celery to the pot pie. So very similar. Someday maybe will try the cognac. But your pastry looks wonderfully delicious. Yum!

Maybe use sage as your herb. Could exchange sweet potato for the white potato and even cube butternut squash in place of the carrots. And just ignore any rude comments. Some folks are so unhappy, they have to try and make others unhappy, as well. 🙂
OMG !!! Those are absolutely delicious ! Full of good yummy chunks, with that beautiful crust and with the least amount of salt, unlike the junk in the supermarkets . I can't think of anything else I'd need to go with them. Have them just as they are, no sides needed ! BTW the mushrooms add a real bonus .

We love this with a bit more veggies: added celery, and possibly more types of mushrooms maybe even a few squares of bell peppers :) Never tried cognac, just white wine, which is kind of great… but who knows, maybe other types of booze can add to the joyful taste also 😜😉!
Last minute all I could find was puff pastry shells..any suggestions on what I should do? I'm either going to make the shells solo then plop one on top or bottom..but..oh gosh idk ..I have yet to open the shells box to see what they look like. I don't know if I can roll them out perhaps and use them as a topper? Eeek

That is the ultimate winter comfort food.
I use a pie crust to line our cast iron then pre-bake it for about 5 min. Add the filling and put a puff pastry on top. 🥧😌

Canned chicken will also work in a pinch if you don’t want to cook a whole chicken or debone a rotisserie chicken- its just as delicious
