Like many families in America, one of our favorite indulgent treats was that special time of year when the Girl Scouts came around selling Girl Scout Cookies and there was one cookie in particular that we just had to have: Thin Mints. There was something about Thin Mints that once you opened the box and started eating them you just had to continue until the box was gone. But alas Thin Mints are loaded with junk ingredients so I have conjured up this decadent rendition of Thin Mint flavor in a heavenly plant based cake! This cake is vegan, refined sugar & oil free, and gluten-free and made in three layers so it is like eating three Thin Mint cookies all at once.

Just wanted to drop by and say I’ve made this cake twice, both times it turned out great. One was over Christmas, everybody enjoyed it. And one was just yesterday because I was craving it for lunch lol! Thank You!!!🤗

My daughter came over and helped me bake this. The only thing we couldnt do was make 3 layers we made 2 but it was good, I think I should have used more vanilla and more peppermint though. We couldnt taste the peppermint with just one tsp. but overall this was good. Thanks.

I made this cake for Christmas Eve. It was a huge hit! No one could believe it was WFPB. My Mom requested it for her birthday!
This was a hit! Replaced half the cashews with tofu in the frosting because that is what I use to make my tofu chocolate mousse. Everything else was the same. Delivered on the rich chocolate and mint flavor, great texture in the cake, and just the right amount of sweetness. Made into 12 servings to make it a little more doable on the daily ;) Thank you for this, Jill!

Eek! This looks so yummy! I just started eating a whole food plant based diet one week ago for health reasons and I can already tell a difference in how I feel. May be psychological but I'll take it! I can't to make this to try to convince my hubby that WFPB can taste good. 😂

Since I am an Iowan, I am always craving grandma's rhubarb crisp and rhubarb pie. Maybe some day you might do a rhubarb dessert since your roots are from the Midwest.

Yum! I made the Oreo cake and it was yummy. I’m a huge mint fan, so I’ll definitely make this one too! I have silicone cake pans too, I am always so nervous won’t them bending so I sent them on a flat baking sheet and just carry the baking sheet

Peppermint is a great idea to add to my baking skills. Thanks for the ideas. I don't have it here in South Korea, but I will order it online and try. Probably I will just try it in some brownies first before going for a full cake.

Really love this. Was looking to make cake with oats instead of flour and boom my sis sent this to me not knowing that. Looks really delicious and love that it is vegan. I had to laugh when he took the spatula. That was really funny. 😅

When I mix the dry ingredients I use a slotted spoon. It seems to mix it faster and slightly sift it

Wonderful recipe as usual! Looks yummy. Happy birthdays! I wish you would let us know of replacements we could use in case of nut allergies. You could try rice flour but I’m not 100% sure that it will work the same.

Yes, although I haven't done it so I'm not sure on the time. Maybe 5 minutes less. Temp would stay the same.

About 5 times 👍sometimes more when something really stumps me and I just can’t place my finger on why it is just blah. BUT sometimes I get it on the first try like this one. We had it three times just to make sure though😉. Oh the sacrifices we make 😂😂

Jill, I very much enjoy your tutorials. I have recently discovered a rare sugar, allulose, which does not affect blood sugar. Dates really raise my blood sugar. Allulose is not as sweet as cane sugar. If I use allulose instead of dates, I wonder how much allulose to use instead of dates. If you used cane sugar, for example, how much would you use for this cake? It would give me an idea of how much allulose to use instead of dates. I am not a fan of too much sugar, less is more for me. Thanks for all your wonderful cooking, you really rock!!

Happy Birthday to both of you! And a question....do you use regular deglet noor pitted dates in your recipes? I noticed with one recipe (can't remember which one), you said medjool dates. These two varieties are so different in moisture and sweetness. Thanks!
In this recipe I used deglet. They are also way cheaper than medjools 👍

This cake tasted really good, but was very heavy. You can only have a very thin slice as to it's heaviness.
doesnt the peppermint flavoring/extract have sunflower oil and peppermint oil? How would I substitute those for completely oil free dish? thanks as always

Hmmm, not 100% sure this recipe would work without the nuts. The cake might be a bit dry and bland but here is my suggestion to try. For the cake you could try using all oat flour and for the frosting, you can replace the cashews with regular tofu.
Shoot..... I still cant trust myself with a cake. Oh well maybe next month lol It looks great.....DAMM
I think I have an unbirthday coming up that I need to make this for... LOL. BTW this is a pretty long video, it might be helpful to put in some chapters to make it easy to get to different points. 😊
