In the U.S. there is a brand of vegan parmesan called Parma. It comes in different flavors. Its ingredients include nutritional yeast, seeds, walnuts, spices. It does include some salt, so it's not SOS free.

I just sorta blend whatever nuts are closest with some nooch and other random spices. Maybe I'll make a proper recipe and write it down!

Your videos just get even better. I love that your children are really thinking about flavours and textures and how they would adjust recipes to their taste; that is a life long gift that you have given them 😊 I love their reviews, they are so honest.
I have always had to adjust recipes to fit our budget and our dietary needs (I am coeliac).
When vegan/wfpb recipe books were more of a rarity and too expensive for us to buy ( been wfpb for over 16 years) I used normal cookbooks from charity shops and adjusted the ingredients accordingly.
We have rescue animals and a large portion of our income goes on looking after them and investing in a cookbook is a well researched decision: your videos are a great insight into the quality of the recipes and the likelyhood of being able to find the ingredients plus I don't get time to spend making long and difficult recipes, so I am really grateful for your insight. I am going to put a few of them on my Christmas list this year 🤞

@pbwithjeremy atm we have 4 horses, 2 ponies, 15 dogs, 12 chickens, 2 rabbits and 4 guinea pigs.
I want to expand one day and take in pigs, goats, sheep, turkeys, ducks and geese 🤞
That sounds amazing!!!! One day we'll move full time to our farm and I want to rescue some animals too - especially a big fat pig :)

There is a pesto no oil recipe in How Not To Die Cookbook. Maybe that would help in substituting the oil out.

Next recommendation: vegan yack attack! Their On The Go cookbook has my favorite pesto recipe (you'd again have to sub out the oil). Then I like their Seitan recipe in their Vegan Bowl Attack cookbook though the on the go cookbook also has a seitan recipe!

You are so welcome! Just think about the purpose of the ingredient - so oil is fat - so for me I replace that with tofu - which is a multi purpose food, but also contains fat - and when silken is smooth.
I’m in the Ottawa valley and I can not find silken tofu anywhere! So frustrated
Bought the book, tried a couple recipes, they had good taste, but was a little disappointed that so many recipes started with tomato and or pasta, always looking for more variety in a cook book. You grab a good selection. Thank you.
feel free to swap out the pasta with other things like potatoes or rice noodles or rice or quinoa, etc... and you can always take the idea of the recipe and remove the tomatoes, use another sauce, etc..... hope that helps. Sorry you were disappointed!

Cooking with Plants (RUclips) has been making melted vegan “butter” with aqua faba and white vinegar. I haven’t tried it yet, but I wonder if that would work in pesto for the oil? 🧐
Huh. I don't love the white vinegar idea - it's a super processed "food".... but that's fascinating... no source of fat, huh?
@@pbwithjeremy Nope, no source of fat. She said SHE prefers white vinegar, but we could use any vinegar. (I only use distilled white vinegar for cleaning, myself.) Prob a lighter colored and flavored vinegar would be a better choice. ACV might work. Super interesting. I would like to try this soon. What do you think about white wine vinegar, champagne vinegar, or rice vinegar (as far as being processed)? Thanks!
@@pbwithjeremy On a related note, do you remember that “salad oil” recipe from Dr. MacDougall? Broth or water cooked with cornstarch or arrowroot? It makes a viscous liquid that can stands in for oil, but it doesn’t give a fatty mouthfeel. Have you tried that? 🧐 I need to start experimenting again…!

I put it on my list of cookbooks I want. The other day I bought the new Forks Over Knives holiday recipes cookbook magazine and I've only gotten up to appetizers, but I've already picked out several recipes I want to try. I know you've done videos cooking from some previous issues of the magazine and I'd love to see you cook from this one

Your cookbook reviews and what you feed your family for a week videos are my favorite, especially seeing Annie’s reactions. Even though my kids are older (21 and 20), my daughter is a picky eater and Annie reminds me of her, although in my house, it’s not “I want French fries”, it’s “ I want pasta”.😌

Vegan parm- sesame seeds & nooch in equal amounts plus pinch Himalayan salt, and a bit of garlic powder, whized in my seed grinder.
Recently, I found some teff tortillas at my Natural Grocers. I make quesadillas with homemade cheeze spread. Love them! Thanks for the reviews that help me get ideas. I rarely buy a cookbook because I find we only like or use a few recipes out of all so it seems like a waste of money. Like you, the library is the cookbook source.

I see why Annie likes this Brussel Sprouts with saucy tofu. I made this and totally omitted the maple syrup (her amount was way too high anyway); instead of garlic powder I used a small clove of crushed garlic, and used a full Tbsp of sesame oil. Nice. 😄

We found vegan Parmesan at Wegmans here in the states. So Yummy
The recipe you have to make Parmesan you can swap out the nuts for the same amount of almond flour and shake it in the jar and it's done! Pretty close to the cashew parmesan

Great video. I would have to add more veggies in some of the dishes, example, not just Brussel sprouts and in the last dish I think it would have been better with some greens. Of course adding extra veggies could add to the time unless adding frozen.
Also for gluten free wraps not sure if you’ve tried making them using soaked and ground lentils.

We can get GF wraps in the supermarket here (New Jersey). Also, I’ve seen people make wraps like you would pancakes on a non stick pan. Easy to flip and much faster than baking.
Ohhhhh - what's the brand?
“Mission” is the brand. Comes in regular GF and spinach GF wraps. Both delicious! There’s also “Sieta” gf wraps made with almond flour. I like the Mission ones better.
Got the book. Made a few of the recipes you demo'd. I like the book. I read it cover to cover first. She says in the front, gathering all the ingredients isn't part of the 15 minutes. Nor the time it takes to open, rinse and drain chickpeas or any time to open a can. So, glad I saw that part, or I'd be disappointed if the recipe took me 1/2 hour (LOL). Lots of yummy "comfort food" type recipes. Glad I got it. Thanks again for the review.

You have Austin Kleon's books! Me too (sorry, couldn't help but notice it on the table.) I think those people who put times on their recipes tend to have everything mis en place before they actually begin. But I'm sure with you, I'm skeptical about those claims. Oh and I totally get your son's comment on that last dish. Hey Jeremy I buy angel hair that is gluten free all the time. It's made with rice. All Asian markets have it and lots of other stores tend to carry it as well. I hope that helps.

Loved this video! I do have a question though… how did you cook your brown rice in 15 minutes? Do you use your pressure cooker or do you use frozen rice? I use my rice cooker and brown rice takes almost 45 minutes.

Thanks for this inspirations! I think I would like all the dishes, they looked delicious. And Annie asked for another Pesto recipe, maybe next time you want to dump this in your food- processor: precooked beetroot, extra firm tofu, cloves of garlic, lemon juice, cumin, salt&pepper to taste, a bit of the pasta cooking water. Colourful and tasty!

How much silken tofu did you add? I may do it your way because that sounds good. Also, do you put your cubed tofu into the air fryer plain? And at what temp? I am guessing 400 degrees? Love your family so much!

In regards to the quesadilla recipe, obviously you don't use processed foods on the regular but, if your hand is forced, what faux cheese brand do you choose and, more specifically, what did you use for this dish?
The Daiya brand has some a LONG way recently, IMO, but I generally avoid the store bought
