Ingredients:
1 lb pork trotters, washed and chopped
1 tbsp Chinese rice wine
1 tsp salt
2 tbsp olive oil
3 cloves garlic, crushed
1-inch ginger, crushed
1 onion, chopped
2 tomatoes, chopped
1 slab Chinese brown sugar
1/2 bowl soy sauce
2 tbsp dark soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
2 tbsp Chinese rice wine
2 tbsp white vinegar
2 cubes of fermented red bean curd
2 tbsp red bean curd sauce
2 tsp hoisin sauce
Instructions:
1. Bring a pot of water to a boil. Add Chinese rice wine and 1 tsp salt. Add the washed and chopped pork trotters and let them boil until impurities foam up. Drain and rinse the pork trotters with clean water.
2. Preheat a wok and add olive oil. Add crushed ginger and garlic, and stir-fry for a minute.
3. Add chopped onions and stir-fry for 2-3 minutes until fragrant.
4. Add the blanched pork trotters and stir-fry for a couple of minutes.
5. Add chopped tomatoes and a Chinese brown sugar slab. Stir-fry for 2-3 minutes.
6. Add soy sauce, dark soy sauce, oyster sauce, sesame oil, Chinese rice wine, white vinegar, fermented red bean curd, red bean curd sauce, and hoisin sauce. Stir-fry for 2-3 minutes until all ingredients are well combined.
7. Transfer the mixture to a pressure cooker and cook using the "meat" function for the recommended time based on your pressure cooker's instructions.
8. Once done, carefully release the pressure and serve the Pork Trotters Stew hot with steamed rice.

Can you do a video on the best way to chop the trotters, my butcher won't do it even though I buy the whole trotters from him!
I also buy them chopped already, I see they use a electric cutter to chop them off at the butcher
