    Here is the full recipe for Steamed Spareribs with Black Beans (Cantonese Dim Sum Style):
    Ingredients:
    1 lb pork spareribs, cleaned and chopped into 2-inch pieces
    1 tsp baking soda
    1 tsp salt
    1 tsp white pepper
    2-3 tsp sugar
    2 tbsp oyster sauce
    2 tbsp soy sauce
    1 tsp sesame oil
    2 tbsp Chinese rice wine or sherry
    1 tbsp olive oil
    1 tbsp crushed garlic
    1/4 cup dried black beans
    1-2 tsp cornstarch
    2 green onions, sliced (for garnish)
    Chili sauce or chili oil (optional)
    Instructions:
    1. Clean the pork spareribs and chop them into desired-sized pieces for steaming. Place in a bowl and mix with 1 tsp baking soda. Let marinate for 30 minutes, then rinse 2-3 times to remove baking soda residue. Drain well.
    2. In the same bowl, add the salt, white pepper, 2-3 tsp sugar, oyster sauce, soy sauce, sesame oil, rice wine, olive oil, and 1 tbsp crushed garlic to the spareribs.
    3. Pour the dried black beans into a separate bowl and rinse with water to plump them up. Drain and add the plumped black beans to the spareribs mixture.
    4. Sprinkle in 1-2 tsp cornstarch and mix everything together until the spareribs are evenly coated. Transfer to a plate or shallow dish suitable for steaming. Allow to marinate for at least 1 hour.
    5. After 1 hour, if you want a kick of heat, drizzle the marinated spare ribs with chili sauce or chili oil to taste.
    6. Set up a steamer with boiling water. Place the plate of marinated spareribs into the steamer basket. Steam for 15 minutes.
    7. Remove from heat and transfer steamed spareribs to a serving plate. Garnish with sliced green onions.

    I think I'm making this on Sunday. Ribs with black bean & garlic sauce is my favorite, other than salt & pepper spicy squid. I can almost taste this now!

    Looks great but steaming for 15 minutes seems like a very short time. Rib meat may still be tough ???

      Yea if the ribs was very thick, the ones I made was not thick. If you steam too long the meat will taste soggy
